500g pack lean minced beef
1 tbsp sunflower oil
4 garlic cloves , crushed
1 ½ tbsp dried oregano
2 tsp ground cumin
2 tsp paprika
pinch chilli flakes
24 taco shells

Steps:

  • Heat a large frying pan until very hot, then brown the mince. Remove, then season with salt and pepper. Add the oil to the pan and fry the garlic, oregano and spices for 1 min until fragrant. Return the beef to the pan and toss well, then cook for 2-3 mins until hot through. Warm the taco shells following the pack instructions and serve with the beef.

1 tablespoon canola oil
1 yellow onion, diced
1 teaspoon cayenne
1 teaspoon chile powder
1 teaspoon cumin
1 teaspoon Mexican oregano
2 tablespoons tomato paste
1 pound ground beef
1 cup tomato sauce
2 teaspoons apple cider vinegar
6 to 8 hard-shell tacos
Shredded cheese, for topping
1 tomato, diced
1 avocado, diced
Shredded lettuce, for topping
Sliced pickled jalapenos, for topping
Sour cream, for dipping

Steps:

  • In a large skillet, heat the canola oil over medium-high heat; add the onions and cook until translucent. Add the cayenne, chile powder, cumin and Mexican oregano and cook, stirring, until fragrant, about 1 minute. Add the tomato paste and cook, stirring, for 2 minutes. Add the beef and cook until browned, 8 to 10 minutes. Stir in the tomato sauce and apple cider vinegar and cook until the sauce reduces slightly, 3 to 5 minutes.
  • Build the tacos in this order: cheese on the bottom, followed by the beef, tomatoes, avocados, lettuce and jalapenos. Serve the sour cream on the taco or on the side for dipping.

400g beef mince
1 egg
35g sachet fajita spice mix
4 large tomatoes , roughly chopped
small bunch coriander , roughly chopped
1 garlic clove , crushed
2 limes , 1 juiced, 1 cut into wedges to serve
2 tbsp olive oil
150ml soured cream
75g grated cheddar or mozzarella
1 avocado
8 taco shells

Steps:

  • Mix the mince with the egg, spice mix and some seasoning, then shape into 16 meatballs. Set aside in the fridge to firm up slightly while you make the sides.
  • Mix the tomatoes, coriander, ½ the garlic and ½ the lime juice in a bowl with 1 tbsp oil, season and set aside. Stir the remaining garlic into the soured cream with a handful of the grated cheese and season. Slice the avocado and squeeze over the remaining lime juice. Bring these, the taco shells and lime wedges to the table.
  • Heat the remaining oil in a large frying pan. Fry the meatballs over a medium heat for 8-10 mins until evenly browned and cooked through. Sprinkle over the remaining cheese, put a lid on the pan and cook for 1 min until melted, then let everyone help themselves.

1 cup water
2 cups instant white rice, uncooked

Steps:

  • Brown meat in large skillet.
  • Add chili powder, broth and water; stir. Bring to boil.

Add garlic, spices, and 1/2 teaspoon salt; cook, stirring constantly, until fragrant, about 1 minute. Add ground beef and cook, breaking meat up with wooden spoon and scraping pan bottom to prevent scorching, until beef is no longer pink, about 5 minutes. Add tomato sauce, chicken broth, brown sugar, and vinegar; bring to simmer. Reduce heat to medium-low and simmer, uncovered, stirring frequently and breaking meat up so that no chunks remain, until liquid has reduced and thickened (mixture should not be completely dry), about 10 to 20 minutes. Adjust seasonings with salt and pepper. I added hot sauce to my mixture, but you don’t have to. Make sure you taste it before you serve it up!
  • In a small shallow pan, heat about 1 to 2 inches of canola oil to 350 degrees. Hold one end of each tortilla with tongs, and hold down the other end with a heat-proof spatula in the oil until it sets up, about 10 to 15 seconds. Switch positions and fry the other side until you get a somewhat perfect shell, then repeat on the other side again until it’s evenly crisp. They won’t be 100% perfect, but they’ll be delicious! If you don’t have a thermometer to test the temperature of your oil, just tear off a piece of a tortilla and put it in the hot oil — if it floats after a few seconds (about 5) it’s ready. If it doesn’t float at all, it’s not hot enough — and if it burns immediately, its too hot!
