You will love this easy baked tortellini in rich tomato sauce, it is quick and packed full of flavours. This pasta dish is perfect comfort food for a cold night or any other night you want to indulge in something rich yet delicious.

600 g Tortellini
750 g Passata (you can substitute this with 2 (800g) canned chopped tomatoes.)
2 cups mozzarella cheese (use any other type of melting cheese of choice)
4 cups spinach (You can add another type of vegetables like sautéed bell peppers leeks, mushrooms or zucchini to bulk up the dish.)
1 tbsp olive oil (substitute for any other flavourless cooking oil)
½ tbsp Herb de Provence (substitute with italian seasoning)
½ tbsp onion powder
1 tsp garlic granules
½ tsp Red pepper flakes also known as chilli flakes ( optional)
Salt and freshly ground black pepper to taste

Steps:

  • Preheat the oven @180C/365F
  • Cook the tortellini one minute less than the time specified on the packet. Drain it (drizzle with little oil if using dried pasta) and set aside.
  • Heat up olive oil on medium heat, add passata, herb de Provence, garlic granules, onion powder, salt and black pepper and stir to combine. Reduce the heat and bring to a gentle simmer for 10 minutes. Turn off the heat and stir in the baby spinach, add the tortellini to the sauce and gently stir to combine. Be careful so as to not break the pasta.
  • Transfer the pasta mixture to a baking dish and top with shredded cheese. Cover it with aluminium foil and bake in the oven for 35 minutes. Remove the foil and continue to bake for additional 5 minutes for a crispy top.
  • Take the baked tortellini out of the oven, leave to stand for about 3 to 5 minutes. Serve with more vegetables and garlic bread. Enjoy!

1/4 cup cup light mayonnaise
1/4 cup Parmesan ranch salad dressing
1/2 box (10 ounce size) frozen chopped spinach, thawed and well-drained
1 cup coarsely chopped mushrooms
1 tablespoon diced pimientos
2 tablespoons breadcrumbs
2 tablespoons shredded Parmesan cheese

Steps:

  • Prepare tortellini according to package directions. Drain well. Return to pot. Stir in mayonnaise, Parmesan ranch dressing, spinach, mushrooms and pimientos. Transfer to a lightly greased 2-quart casserole dish. Toss together breadcrumbs and Parmesan cheese. Sprinkle on top of tortellini mixture. Bake at 350 degrees F for 16 to 18 minutes or until golden brown.

  • Preheat oven to 200 C.
  • Grease a large shallow baking dish
  • Melt butter in pan and cook mushrooms till lightly browned.
  • Spread tortellini over base of dish.
  • Top with mushrooms.
  • Cover with pasta sauce.
  • Drizzle cream over sauce.
  • Sprinkle with parmesan.
  • Bake for 15 minutes or till golden brown.
  • Garnish with basil and serve.

1 tablespoon extra-virgin olive oil
2 tablespoons all-purpose flour
2 1/2 cups low-fat milk, heated
1/2 cup grated Fontina cheese, divided
1/2 teaspoon ground nutmeg
salt & freshly ground black pepper, to taste
1 lb cheese tortellini (fresh or frozen, preferably low-fat)
1/4 cup fine dry breadcrumb
2 tablespoons freshly grated parmesan cheese

Steps:

  • Preheat oven to 350°F Coat 6 individual gratin dishes or a 1 1/2-quart shallow baking dish with cooking spray. Put a large pot of water on to boil for cooking pasta.
  • Heat oil in a large saucepan over medium heat.
  • Add flour and cook, whisking constantly, for 1 to 2 minutes. Add hot milk and bring to a simmer, whisking, until smooth and slightly thickened, 3 to 4 minutes. Remove from heat and add 1/4 cup fontina and nutmeg, stirring to melt the cheese. Season with salt and pepper.
  • Meanwhile, cook tortellini until just tender, 6 to 8 minutes or according to package directions. Drain and rinse well.
  • Combine the tortellini with the cheese sauce and toss. Transfer to the prepared dishes or baking dish. Top with the remaining 1/4 cup fontina. Combine breadcrumbs and Parmesan and sprinkle evenly over the tortellini.
  • Bake the tortellini until golden and bubbly, 15 to 25 minutes. Serve immediately.

I needed something for a girl's night. I wanted something that would taste like I slaved over it but in reality was simple and didn't take much time. This recipe went beyond my expectations. I found the recipe on BHG and only had to tweak a couple of things.

18 ounces cheese tortellini (fresh or frozen)
56 ounces chicken broth
20 ounces alfredo sauce
4 cups rotisserie-cooked chicken, shredded
1 cup sun-dried tomato packed in oil, drained
6 cups fresh Baby Spinach, lightly packed
2 ounces parmesan cheese (shaved or shredded)
heavy cream

Steps:

  • In a large stockpot cook the tortellini according to package directions. Drain and set aside.
  • In the same pan combine the broth and Alfredo sauce. You can use store bought broth and Alfredo sauce or homemade. Either way it will turn out great. Stir in the chicken and tomato strips. Heat to boiling and then reduce the heat. Simmer, uncovered, for 5 minutes.
  • Add the cooked tortellini and spinach. Let it simmer for about 5 minutes to heat through and wilt the spinach.Even after making this I felt that it needed just a little more liquid. So as not to lose the creamy texture I added heavy cream until I got the consistency I was looking for. Milk or broth would also work.
  • Sprinkle each serving with Parmesan cheese and serve with warm garlic bread.

1 lb frozen cheese tortellini
1 (18 ounce) package frozen spinach
4 ounces mixed mushrooms, sliced
6 chicken breast tenders, chopped into 1-inch pieces (about two cups raw)
3/4 cup half-and-half
2 cups chicken broth or 2 cups stock
1 cup sliced shallot
8 large garlic cloves, sliced fairly thick
1/4 cup parmesan cheese, shredded
1/2 cup romano cheese, shredded
2 tablespoons butter
black pepper
1 handful fresh parsley, chopped
2 tablespoons flour

Steps:

  • cook tortellini al dente, according to package directions while preparing the rest of ingredients. Do not overcook them!
  • saute shallots and garlic in butter about 5-6 minutes.
  • add chicken pieces and fry for 3-5 minutes, until outside is cooked.
  • pour in 1 cup of chicken broth and add frozen spinach, reduce heat and cook till spinach thaws.
  • add sliced mushrooms, bring to a simmer.
  • add 1/2 & 1/2 with the Parmesan cheese & season with lots of black pepper.
  • let simmer a few minutes.
  • stir flour into remaining chicken broth and add to mixture, stir til thick.
  • stir in Romano and parsley, reduce heat to keep warm.
  • toss with the tortellini.
  • If sauce is too thick, you can add more 1/2 &1/2 or more chicken stock, depending on your taste.
  • Omit the chicken for a vegetarian meal.
