- Place tilapia in an ungreased 13x9-in. baking dish. In a small bowl, combine the butter, lemon juice, garlic powder and salt; pour over the fillets. Sprinkle with capers, oregano and paprika., Bake, uncovered, at 425° until fish just begins to flake easily with a fork, 10-15 minutes.

- Brush fish with olive oil. Combine all dry spices and blend well. Sprinkle over fish. Place fish on the 4-inch rack and cook on power level high for 3-4 minutes per side. If cooking from frozen, cook on power level high for 5-7 minutes per side. Enjoy!

Steps:
- Coat bottom of a 13x9" baking dish with half of the olive oil.
- Cut mushrooms into halves and place in dish.
- Cut onions into rings and spread them over mushrooms.
- Give the contents of pan a good sprinkle of cajun seasoning.
- Top with the fillets in a single layer (some overlap won't hurt).
- Drizzle them with remaining oil and give the whole thing another shake of cajun spice.
- Bake in 400 degree oven 15-20 minutes or until bubbly.
- I usually use a little more olive oil because the juice is great for dipping.

- Preheat oven to 425 degrees and line a baking sheet with parchment paper. Brush parchment with oil.
- Pat tilapia dry with paper towel to remove any excess moisture.
- Whisk together milk and egg in a wide shallow dish.
- Combine coating in a large glass dish (big enough so that the dish can lay flat): bread crumbs, flour, Parmesan, seasoning salt, Italian seasoning, salt, garlic powder, paprika and pepper.
- Coat tilapia in milk mixture and press firmly into the coating mixture, coating both sides well. Place on the prepared baking sheet and repeat until all are done.
- Spray the top of the fish with spray oil or non-stick spray.
- Bake at 425 degrees F for 10-12 minutes, until the internal temperature is 145 degrees F and the crust is lightly browned and crispy. You can broil for 1-2 minutes to brown the crust further if desired.
- Serve.

- Preheat the oven to 400 degrees F. In a small bowl, mix the butter and tarragon until combined; set aside.
- Lay out 4 large pieces of foil. Layer the vegetables in the center of each piece of foil, starting with the mushrooms, then the celery and scallions. Dot the vegetables with some of the herb butter (use about half) and season each portion with 1/4 teaspoon salt, and pepper to taste. Lay the tilapia fillets over the vegetables; dot with the remaining herb butter. Sprinkle each fillet with 1/4 teaspoon salt, and pepper to taste.
- Bring the foil ends together, fold over and crimp closed on all sides to make sealed packets.
