24 chicken tenders
2 Tbsp cornstarch
2 Tbsp water
1 cup sugar
1 cup soy sauce
½ cup cider vinegar
3-4 cloves garlic (minced)
½ tsp ground ginger
½ tsp white pepper
brown rice + asparagus (cooked for serving)

Steps:

  • Preheat oven to 425 degrees.
  • Whisk together the cornstarch and cold water; add in the sugar, soy sauce, vinegar, garlic, ginger, and white black pepper. Heat in a small saucepan over low heat. Let simmer; stirring frequently until sauce thickens and comes to a boil.
  • Wash and pat dry chicken pieces. Place on a sprayed baking sheet. Brush the chicken with the sauce and turn the chicken tenders over; brush again.
  • Bake for 30 minutes; turn the pieces over and bake another 10-15 minutes, or until done.
  • Brush the chicken pieces with the sauce every 10 minutes.
  • Serve with rice and a side vegetable(asparagus).

2 teaspoons water
1/4 cup white sugar
1/4 cup brown sugar
1/2 cup low sodium soy sauce
1/4 cup cider vinegar
1/4 cup orange juice or 1/4 cup pineapple juice
1 teaspoon garlic powder
1/2 teaspoon ground ginger
1/4 teaspoon ground black pepper
8 skinless chicken thighs

Steps:

  • Preheat oven to 425 degrees F.
  • Combine the first 10 ingredients in a bowl.
  • Place chicken pieces in a lightly greased 9x13 inch baking dish. Pour sauce over chicken and turn to thoroughly coat.
  • Bake in the preheated oven for 30 minutes. Turn pieces over, and bake for another 10 minutes, until no longer pink and juices run clear.
  • Spoon sauce over chicken and serve.
  • ***If using bone-in chicken breasts, bake at 375 for 35-40 minutes. If using boneless chicken breasts, bake at 375 for 20-25 minutes.
  • ***If you prefer (especially if you are cooking for a shorter amount of time), bring all the ingredients to a boil in a saucepan on the stove and let simmer until thick. Brush the chicken with the resulting glaze.

1 tablespoon cornstarch
1 tablespoon cold water
½ cup white sugar
½ cup soy sauce
¼ cup cider vinegar
1 clove garlic, minced
½ teaspoon ground ginger
¼ teaspoon ground black pepper
12 skinless chicken thighs

Steps:

  • In a small saucepan over low heat, combine the cornstarch, cold water, sugar, soy sauce, vinegar, garlic, ginger and ground black pepper. Let simmer, stirring frequently, until sauce thickens and bubbles.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Place chicken pieces in a lightly greased 9x13 inch baking dish. Brush chicken with the sauce. Turn pieces over, and brush again.

¼ cup rice vinegar
¼ cup water
3 tablespoons soy sauce
2 ½ tablespoons agave nectar
2 teaspoons canola oil
2 teaspoons cornstarch
2 teaspoon minced or grated ginger
3 cloves garlic (minced)
¾ cup whole wheat panko breadcrumbs (regular panko can be substituted)
2 tablespoons minced flat-leaf parsley
½ teaspoons Chinese 5-spice powder
1/8 teaspoons kosher salt
1 pound chicken tenders (trimmed)

Steps:

  • In a small saucepan, whisk together the rice vinegar, water, soy sauce, agave nectar, canola oil, cornstarch, ginger and garlic.
  • Bring to a boil over medium heat. Cook, whisking frequently, until the sauce has thickened, about 4 minutes.
  • Let the sauce cool slightly, then transfer all but ¼ cup of the sauce to a shallow container, such as a glass baking dish. Reserve the ¼ cup sauce to serve with the cooked chicken tenders.
  • Preheat the oven to 450 degrees F. Place a wire rack on a baking sheet lined with foil. Lightly coat with cooking spray.
  • In another shallow container, stir together the panko breadcrumbs, parsley, Chinese 5-spice powder and salt.
  • Working with one chicken tender at a time, dip the chicken in the teriyaki sauce, coating completely. Next, roll the chicken in the breadcrumb mixture, completely coating the outside. Transfer to the prepared baking rack.
  • Repeat with the remaining chicken, sauce and breadcrumb mixture.
  • Baked until the chicken is just cooked through and the breadcrumbs are starting to brown, turning halfway through, 5 to 6 minutes per side (total 10 to 12 minutes).
  • Serve with the reserved teriyaki sauce.

  • Put chicken in a container with lid.

  • Melt butter in a skillet.
  • Place chicken in skillet with all of the marinade.

My aunt shared this basic teriyaki marinade for chicken tenders with me 40 years ago. Her original recipe called for a lot more sugar and soy sauce. I have tweaked it over the years to get the flavor we love.

½ cup soy sauce
⅓ cup water
¼ cup rice wine vinegar
2 tablespoons brown sugar
1 teaspoon ground ginger
1 clove garlic, smashed
1 dash Worcestershire sauce
1 (16 ounce) package boneless, skinless chicken tenders

Steps:

  • Whisk soy sauce, water, vinegar, brown sugar, ginger, garlic, and Worcestershire sauce together in a bowl and pour into a 1-gallon resealable plastic bag. Add chicken tenders, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for at least 1 hour, or up to 4 hours.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Remove chicken from the marinade and shake off excess. Discard the remaining marinade.
  • Place chicken on the grill and cook until no longer pink in the center and the juices run clear, 3 to 4 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
