NEW ENGLAND BAKED HADDOCK WITH RITZ CRACKER & SHRIMP STUFFING
Flaky Baked Haddock with Ritz Cracker & Shrimp Stuffing is the quintessential New England dish. This 30 minute meal is perfect for a delicious weeknight meal!

Steps:
- Preheat oven to 400 Degrees F. Line a large baking sheet with aluminum foil and lightly spray with cooking spray.
- Place haddock on baking sheet skin side down (if it isn't removed)
- Drizzle lemon juice on haddock and season with salt and pepper to taste. Set aside.
- In a medium bowl, crush Ritz crackers to form crumbs.
- Toss crumbs with melted butter.
- Top your haddock evenly with Shrimp pieces then sprinkle with cracker mixture.
- Bake in preheated oven on center rack for 15-20 minutes or until haddock is cooked through and flaky. Crumb topping should be slightly browned.
- Remove from oven and garnish with chopped fresh parsley.

- Preheat oven to 350°. In a skillet, saute onion in butter until tender. Stir in crackers and enough water to hold mixture together. Cut a pocket into side of fillet; stuff with cracker mixture. , Place in a greased baking dish. Combine soup and sour cream; spread over fish. Sprinkle with paprika. Bake, uncovered, 25-30 minutes or until fish flakes easily with a fork.

This year's "centrepiece" dish for our Italian Christmas Eve feast, this is based on my mom's memory of a 5-star meal she had when out in Moncton on business. It's so close you could swear it was catered!

- Preheat the oven to 375F, line a roasting pan with parchment.
- Lay fish fillets in a single layer on the bottom of the dish, then top with scallops and shrimp.
- Pour the white wine and lemon juice overtop of the seafood.
- In a bowl, toss butter, cracker crumbs, garlic powder, black pepper and lemon zest.
- Sprinkle over the seafood.
- Bake 15 minutes, then turn the broiler to HI and broil 2 minutes, until browned.

- Spray bottom of 13x9 pan with pam. Crush ritz crackers and combine with 1/4 cup lemon juice, melted butter,onion, garlic, lobster, crabmeat, scallops. Salt & peppter to taste. If stuffing appears to dry add a small amount of water until desired consistency. Place 1/2 of haddock on one side of pan and 10 frozen shrimp on the other side. Cover with stuffing, top with remaining haddock and shrimp. Mix soup and remaining lemon juice and pour over shrimp and haddock. Bake 30-45 min @ 350 degrees or until fish is cooked. Makes 6 really large servings!

CAPE COD BAKED STUFFED SHRIMP
Growing up in the Boston area, a Saturday night favorite at restaurants was Baked Stuffed Shrimp. This dish is light and delicious and the trick is to bake the shrimp in a glass pie dish, not on a dark cookie sheet -they come out much more juicy. Also, I added a little Marsala for sweetness - but I guess Sherry would do. Be sure to use only Ritz brand crackers and not the low fat variety or the taste will be greatly compromised.

Steps:
- Preheat oven to 375°F.
- In a small skillet, heat 1 tablespoons butter and saute the celery and garlic for 3-4 minutes on low heat. Do not brown.
- Transfer to a small bowl.
- Crush the crackers with your hands in a plastic bag until just coarse and add to the bowl with the celery.
- Stir in the melted butter, lemon juice, parsley, wine or chicken broth and ground pepper.
- The mixture should be barely wet, enough to hold together. But if too wet add more Ritz crackers, or if too dry add a little more broth.
- Cut almost through the center of each shrimp and flatten out cut side up, pointing the tail section up.
- Spray a glass pie dish with butter spray before placing shrimp on it. Then spray each shrimp with butter spray.
- With your hands mound some of the stuffing and place it on each shrimp.
- Sprinkle with just a little bit of paprika, Don't overdo it.
- Bake at 375F for 12 minutes, then place under broiler for 1 minute to brown top lightly.
- Serve with lemon wedges.

NEW ENGLAND BAKED HADDOCK
This is my favorite way to cook haddock. The recipe was originally for baked stuffed shrimp, so you could use it for that also.

Steps:
- Preheat oven to 350°F.
- Rinse fish and then soak in milk (This will take away any "fishiness").
- Melt butter in a small frying pan. Add onion and saute until softened, then add garlic.
- Remove from heat, add sherry, parsley, paprika and salt to taste.
- Mix bread crumbs with crushed cracker crumbs.
- Remove fish from milk, rinse again, then place in a baking dish.
- Pour crumb mixture over fish.
- Then pour butter/sherry mixture over crumbs.
- Bake at 350°F for about 25 minutes. Place under broiler on high until golden brown and slightly crispy. (Watch it closely, this does not take long.).
- Enjoy!

This is a delicious breadcrumb topping for haddock, scallops or cod. I have lightened it up by using light butter. The lemon and white wine provide a great flavor.

- Preheat oven to 425.
- Wash and dry fish fillets, then season with salt.
- Meanwhile, mix breadcrumbs, melted butter, juice of a lemon, salt, pepper, and garlic powder.
- You will need to spray some cooking spray on the breadcrumbs to make sure they are moist enough. The breadcrumbs should be forming into moist crumbs.
- Place fish in shallow baking pan.
- Pour the white wine around the fish, making sure it does not actually cover the fish.
- Place the breadcrumb mixture evenly over the fish.
- Put the fish(for haddock or cod) in the oven for about 10-12 minutes, until almost done.
- You then may want to broil the fish for a minute or two just to crisp up the topping.

- Preheat oven to 350°F. Make Stove Top Stuffing as the box says but instead of adding water use clam juice. When stuffing is done stir in peeled shrimp and scallops. Cover and set aside.
- Beat eggs and roll haddock in egg then bread crumbs. Put half of haddock in 9x13 baking dish covering the bottom. Top with stuffing and cover with provolone cheese. Put remaining haddock on top.
- Bake for 50-60 minutes.

BAKED STUFFED HADDOCK FILETS
I was given this recipe at least 30 years ago and have yet to find anyone that doesn't love it. (Providing they like seafood) I always use haddock as I'm from Maine. Fresh is expensive right now but as far as I'm concerned there's no better tasting white fish. Can use frozen haddock or another white fish . Simple to make but soooo yummy...Don't worry about the mayo..I Promise you will not taste it.

- Rinse and pat dry the filets.
- Lay in single layer in baking dish.
- Spread a thin layer of mayonnaise over fish (I put it on a little thicker. You will not taste it).

LINDA'S BAKED STUFFED SHRIMP
This is one of my FAVORITE dishes. Quick delicious and tasty enough to serve to company anytime! Sometimes I pour extra melted butter with some malt or apple cider vinegar mixed in, over the top of the shrimp before serving. It gives it a very nice flavor!

Steps:
- Place shrimp, tails up, in a glass baking dish, big enough to hold all. I use individual baking dishes, single serving size, and put 4 shrimp in each dish.
- Crush crackers, and put them in a bowl.
- Add the melted margarine to the crackers, and squirt in some lemon. Mix well.
- Add salt and pepper, to taste.
- Put cracker crumbs on top of the shrimp, and squeeze some more lemon over top, depending on how much you like lemon. I love lots, the more the better!
- Bake in a 350 oven, for 30-40 mins., or until cracker crumbs are golden brown.
- Serve with lemon wedges.

- Butterfly the shrimp by cutting along the length on the underside of the body, but don't cut all the way through. Just cut deep enough to fold the shrimp open for stuffing. Remove any veins if necessary.
- Combine the cracker crumbs, butter, clams, parsley, garlic powder, salt and pepper, mixing well. Evenly stuff each of the shrimp with stuffing mixture.
- Arrange the stuffed shrimp in a 13 x 9 x 2-inch baking pan. Pour the sherry into the bottom of the pan.
- Bake at 350°F for about 15-18 minutes, or until the shrimp have JUST turned pink. Transfer shrimp to serving platter, garnish with additional parsley and serve with lemon wedges for accompaniment, if desired.
