- In a large bowl, mix together the ground beef, egg, bread crumbs, pepper, salt, onion powder, garlic powder, and Worcestershire sauce. Form into 8 balls, and flatten into patties.
- Heat the oil in a large skillet over medium heat. Fry the patties and onion in the oil until patties are nicely browned, about 4 minutes per side. Remove the beef patties to a plate, and keep warm.
- Sprinkle flour over the onions and drippings in the skillet. Stir in flour with a fork, scraping bits of beef off of the bottom as you stir. Gradually mix in the beef broth and sherry. Season with seasoned salt. Simmer and stir over medium-low heat for about 5 minutes, until the gravy thickens. Turn heat to low, return patties to the gravy, cover, and simmer for another 15 minutes.

- Saute half of chopped onion in 1 Tabsp hot oil in medium skillet over medium heat until tender. Add garlic, and saute 30 seconds. Remove from heat and let cool.
- Combine cooked onion mixture, beef, and next 4 ingredients, 1/4 teasp salt, and 1/2 teasp pepper. Shape into 6 patties.
- Cook patties in remaining 2 Tabsp. hot oil over medium-high heat 3 minutes on each side or until browned. (Do not cook until done). Remove patties and set aside.
- Add remaining onion to drippings in skillet, and saute over medium-high heat until tender; add mushrooms and saute 3 minutes. Whisk in flour, and cook, stirring constantly, 1 minute, whisk in wine, broth, and remaining 3/4 teasp salt and 1/2 teasp of pepper. Bring to a boil, reduce heat to low and simmer stirring occasionally, 5 minutes.
- Place patties in lightly greased baking dish, top evenly with gravy.
- Bake, covered, at 350 for 25 minutes or until done.
- In the summer I make this recipe in my electric fry pan.

After looking over all the cube steak recipes this is what I came up with. My family loved these and now they want cube steaks at least once a week!! Fork tender you don't need a knife for these! Mashed potatoes go well with these.

- Brown the cube steaks in 1 tablespoon butter, until browned on both sides.
- Transfer the browned cube steaks to a covered casserole dish.
- Saute the onions and Mushrooms in remaining tablespoon butter until softened about 5-6 minutes.
- Place the mushroom/onion mixture over the browned cube steaks in casserole dish.
- Mix the soups until well combined, add the minced garlic, Worcestershire sauce, kitchen bouquet stirring until well combined.
- Pour mixture over cube steaks and mushroom onion mixture.
- Place in preheated 350°F oven, covered and bake for 2 hours.
BAKED STEAK
A nice change to broiling or grilling, the gravy is delicious. I always serve this with mashed potatoes.

- Preheat oven to 375°F.
- Pound steak to tenderize.
- Dredge both sides in flour, salt and pepper.
- In heavy oven proof skillet heat oil, add steak and brown on both sides, remove add stock, bring to boil, scraping bits off pan.
- Add Worcestershire sauce, more salt and pepper to taste; remove from heat.
- Layer half the onions in pan, add steak, layer rest of onions, broth, spoon some broth on top.
- Bake for 2 hours, covered, basting steak after 1 hour.
- Remove to cutting board and slice.

- Cut all fat and gristle off the meat, and pound each steak out with a meat tenderizer until they are thin but not tearing. In a shallow bowl, combine flour, bay leaf, salt and pepper. Dredge steaks in the flour mixture until evenly coated.

- 1. Preheat oven to 325. Heat up some oil (3-4 turns of the pan, may need more as the steak braises) in a large skillet Take your round steak out and cut into portion sizes. Usually about 5 or 6 pieces.
- 2. Measure flour onto a plate and add onion soup mix with salt and pepper ( I like alot of pepper) mix together...begin dredging the meat in the flour mixture and place in skillet with hot oil ...brown on both sides and place the browned pieces in 9x13 pan.If your skillet gets dry and the flour starts burning add some more oil...you will need it anyway. The dried onions in the soup mix will probably get burnt but the flavor in the gravy is so goood!! Trust me...lol
- 3. When you finish the browning process, you should have alot of brown bits in the bottom of your pan and some remaining oil...I take the flour mixture left from the dredging process and dump it in the skillet and cook the flour for a minute making sure there is no lumps then ad water to thicken until you reach your desired consistency.
- 4. Pour the gravy (you should have about a quart or a little less)over the browned meat. Cover the dish with foil and bake for 2 1/2 to 3 hours ...low and slow...so tender and succulent!! ENJOY!!
MINUTE STEAK WITH GRAVY

- Preheat the oven to 400 degrees F. Combine the garlic salt, salt, pepper, and Old Bay in a small bowl. Mix well then sprinkle the mixture over both sides of the minute steaks. Place the minute steaks in the refrigerator for 20 minutes (or up to 4 hours). Heat a large skillet over medium-high heat. Sprinkle both sides of the steaks with the flour, shaking off any excess. Add the butter to the skillet. When melted, add the minute steaks and cook for 2-3 minutes per side, or until lightly browned. Transfer the steaks to a baking dish. Place the onion slices evenly over the steaks. Add any remaining flour to the butter in the skillet. Cook, stirring constantly, until the flour is incorporated and the mixture is smooth. Reduce the heat to a strong simmer and cook for 1 minute, stirring occasionally, or until the gravy has thickened. Pour the gravy over the minute steaks. Cover the baking dish with foil and place in the oven. Bake at 400 degrees F for 35 minutes or until the beef is very tender. Serve the minute steaks with the gravy.

- Preheat the oven to 325.
- Place a large, ovenproof skillet, preferably cast iron, over medium-high heat.
- Pat the meat dry, and lightly coat it with oil on both sides.
- Place the meat in the hot pan and sear one side, until nicely browned, 2 to 3 minutes.
- Turn, season with salt and pepper, and sear the second side, about 2 minutes.
- Turn again, and season the second side.
- Pour the broth into the pan and bring it to a boil.
- Transfer the pan to the oven and cook, uncovered for 35 to 40 minutes for medium rare or 45 minutes for medium.
- Transfer the meat to a cutting board.
- Pour the broth into a small saucepan, and skim off the fat that rises to the surface.
- Combine the cornstarch and water in a small dish.
- Bring the broth to a boil over medium heat, and stir in the cornstarch mixture.
- Whisk until the broth thickens slightly.
- Taste and season with salt and pepper if needed.
- Keep warm.
- Slice the meat into long strips across the grain, arrange on warm platter, and moisten the meat generously with gravy.

- In a large bowl, mix together the ground beef, saltine crackers and milk. Season with garlic powder, onion powder, salt and pepper, and mix until well blended. Line a 10x15 inch jellyroll pan with waxed paper. Press the beef mixture firmly into the pan. Cover with plastic wrap, and refrigerate 8 to 10 hours, or overnight.
- Preheat the oven to 350 degrees F (175 degrees C). Remove plastic wrap from meat, and rub flour over the top side of the beef. Flip out of the pan onto waxed paper, and rub flour on the other side as well. Cut into pieces (I use a pizza cutter).
- Heat oil in a large heavy skillet over medium-high heat. Fry the meat until browned on each side, turning only once. Remove to a 9x13 inch baking dish. In a medium bowl, mix together the water, condensed soup, and gravy mix. Pour over the meat in the dish. Cover the dish loosely with aluminum foil.
- Bake for 1 hour in the preheated oven. Serve patties and gravy with potatoes, rice, or noodles.

- Pat steaks dry with paper towel. Season with salt and pepper to your taste.
- Heat a lightly oiled skillet or pan (or barbecue) on high heat until just beginning to smoke. Cook steaks for 3 minutes each side or until cooked to your liking. Rest for 5 minutes.
- Heat remaining oil in the skillet. Add onion and cook for 2-3 minutes until onions are translucent, then add the garlic and cook for a further 30 seconds, or until fragrant.
- Add the sliced mushrooms into the skillet and cook for 3 minutes until golden and beginning to soften.
- Reduce heat to medium and melt butter in the skillet. Add flour and cook while stirring for 1 minute, allowing the flour to brown slightly.
- Slowly and gradually add in the beef broth (or stock), while stirring. Allow to simmer for 4-5 minutes, or until thickened. Stir in the Worcestershire sauce and season with salt and pepper to taste.
- Add the steaks back into the gravy in the pan along with the juices on the plate OR serve steaks with the onion mushroom gravy on the side. Garnish with chopped thyme, parsley or rosemary if desired.

- For the hamburger steaks: Whisk together the mustard, smoked paprika, egg, garlic, 1 teaspoon salt and 1/4 teaspoon pepper in a medium mixing bowl. Mix in the ground beef and breadcrumbs by hand, then form into 4 oval patties, about 1/2 inch thick.
- Set a large nonstick pan over medium-high heat and add the oil. Add the patties and brown on both sides, about 3 minutes per side. Transfer the patties to a plate; set aside.
- For the onion and mushroom gravy: Turn the heat down to medium and add the mushrooms and thyme. Cook until the mushrooms release their liquid and are browned, about 8 minutes. (The mushrooms might seem dry at first, but will eventually release liquid and add moisture to the pan.) Transfer the mushrooms to a plate; set aside.
- Melt the butter in the pan, add the onions and garlic and cook until translucent and lightly golden, about 10 minutes. Sprinkle in the flour and cook, stirring, until the butter and liquid are absorbed, about 1 minute. Pour the broth and Worcestershire into the pan and stir until the flour is dissolved.
- Turn the heat to high and bring to a boil. Stir the mushrooms back into the pan and nestle in the beef patties. Cover with a lid and reduce the heat to medium low. Let simmer until the sauce has thickened and a thermometer inserted into the patties registers 165 degrees F, about 10 minutes.
- Turn the patties over a few times to coat in the sauce. Season with salt and pepper and top with the parsley.
SALISBURY STEAK WITH BROWN GRAVY

- Heat 1 tablespoon of the oil in a large skillet over medium-high heat. Add the onion and saute until soft, about 6 minutes. Put 1/2 of the onion in a large bowl and the remainder in another bowl. In the large bowl add the beef, bread crumbs, grill seasoning, Worcestershire sauce and the egg. Mix to combine everything well and form the mixture into 5 oval patties. Heat the remaining tablespoon of oil in the same skillet over medium-high heat. Cook the patties until they are well browned, about 4 to 5 minutes per side. Remove the steaks and pour off all but 2 tablespoons the fat. (The patties will not be cooked through and will finish cooking in the gravy.)
- Put the pan back on the heat, add the mushrooms, and cook for 5 minutes. Add the remaining onions, sprinkle in the flour, and cook for 2 minutes. Add the beef broth and bring it to a boil. Return the patties to the pan, reduce the heat to a simmer and cook until the sauce has thickened and the steaks are cooked through, about 10 minutes. SMOTHERED ROUND STEAK WITH GRAVY
This is one of the first recipes I learned to cook when I was a teenager. Mom taught me to cook over the phone, after I got home from school every day. She was working and I didn't think about it at the time, but later I realized my calls were reassuring to her, since she knew I was safely home. - Sprinkle each side of the round steak pieces with salt and pepper, rubbing seasoning into the meat.
- Combine 1/2 cup flour and garlic powder in a 1-gallon resealable bag. Add steak pieces, seal bag, and shake to evenly coat all the pieces.
- Heat 1/3 cup of oil in a large skillet over medium heat until hot. Add seasoned and floured steak pieces to the skillet in a single layer in batches and cook until browned, 4 to 5 minutes per side. GRANNY'S STEAK AND GRAVY

Steps:
- Sprinkle both sides of the steak with the salt, cayenne, and black pepper. Rub seasoning into meat. In a large skillet, heat oil over high heat until hot. Add steak and cook on high until browned, turning steak every 3 to 4 minutes. (Lower heat if necessary.) The steak should be well browned on both sides. Remove steak and add onions and bell peppers to pan. Cook until wilted. Place steak on top of onions and bell peppers and add 1/4 cup of water. Lower heat to medium, cover and simmer for 1 1/2 hours, turning steak every 20 minutes. (Note: when lifting lid of pot, let the water from the lid drain into the pot.) When steak is tender, remove steak and place on a platter. Mix cornstarch with 1/4 cup of water and add to the pot. Stir to make a gravy. Serve gravy over hot rice with steak.

- Preheat the oven to 400°. In a large skillet, melt 1 tablespoon of the butter in 1 tablespoon of the oil. Add the onion and garlic and season with generous pinches of salt and pepper. Cook over moderate heat, stirring occasionally, until softened, about 5 minutes. Add the mushrooms and thyme and cook, stirring occasionally, until the mushrooms are browned and softened, about 4 minutes. Transfer to a plate. Wipe out the skillet.
- Place the flour in a shallow bowl. Season the steaks generously with salt and pepper. Dredge the steaks in the flour and shake off the excess. Transfer the steaks to a plate.
- In the same skillet, melt 1 tablespoon of the butter in 1 tablespoon of the oil. Add 2 of the steaks and cook over moderate heat, turning once, until browned, about 2 minutes. Transfer the steaks to a 9-by-13-inch baking dish. Wipe out the skillet. Repeat with the remaining steaks, oil and butter.
- Add the broth to the same skillet and bring to a simmer, scraping up the browned bits on the bottom. Cook until the broth reduces by half, about 10 minutes. Whisk in the sour cream and dry mustard. Return the mushrooms to the skillet and cook, stirring, until the mushrooms are coated in the sauce, about 1 minute. Remove the skillet from the heat and season the sauce with salt and pepper. Scrape the mushroom sauce over the steaks.
