OVEN BAKED SPANISH TORTILLA



Oven Baked Spanish Tortilla image

In this recipe the potatoes are cooked on the stove top and then added to the egg mixture which is then baked until set. It should rest 15 minutes after baking before serving. For planning purposes, the recipe should be started about 1 hour and 20 or 30 minutes before serving.

3 tablespoons olive oil
3 medium potatoes, peeled, halved and sliced into thin slices (Yukon Gold is best, they are the least starchy and best suited for this)
1 yellow onion, halved and sliced really thin
3 garlic cloves, crushed
sea salt
fresh coarse ground black pepper
5 large eggs
4 green onions, both green and white parts, thinly sliced
1/2 bell pepper, finely diced
2 tablespoons freshly grated parmesan cheese (or to taste)

Steps:

  • 1. Preheat oven to 375 degrees.
  • 2. Line a 9-inch cake pan with aluminum foil and brush with olive oil on bottom and sides.
  • 3. Toss the potatoes, onion, garlic, green onions, bell pepper, 1/2 tsp of salt, and 1/4 tsp of pepper together with olive oil (just enough to coat them) in a large bowl, until the potatoes are thoroughly coated with oil and the potato slices separate.
  • 4. In a large, DEEP, 10-inch skillet, heat about 2 Tbsp of olive oil over high heat until hot.
  • 5. Reduce heat to medium and add potato mixture to skillet. Set the bowl aside for the moment, but no need to wash, we'll use it again.
  • 6. Cover potato mixture and cook, stirring every few minutes until potatoes are tender. About 25 minutes.
  • 7. While the potatoes are cooking, whisk the eggs and about 1/2 tsp of salt in the reserved bowl.
  • 8. Fold the potato mixture into the egg mixture, scraping the skillet.
  • 9. Mix grated Parmesan cheese into the potato/egg mixture.
  • 10. Pour the potato/egg mixture into the prepared foil-lined pan.
  • 11. Cook, uncovered for about 20-25 minutes or until golden brown and set.
  • 12. Slide onto a plate and allow to cool for about 15 minutes before cutting. Serve warm or at room temperature, sliced into wedges.

One 8- to 10-pound bone-in, smoked, fully-cooked ham, butt or shank portion
1/3 cup light brown sugar
1/4 cup sweet smoked paprika (pimenton)
2 tablespoons garlic powder
2 teaspoons dried oregano
1/2 cup extra-virgin olive oil
2 tablespoons Dijon mustard

Steps:

  • Let the ham sit at room temperature 30 minutes. Preheat the oven to 325 degrees F. Trim off any skin from the ham if needed. Score the ham through the fat in a diagonal crosshatch pattern without cutting into the meat. Place the ham, flat-side down, on a rack in a roasting pan. Pour 1/4 inch of water into the bottom of the pan. Roast ham until it reaches an internal temperature of about 130 degrees F, about 2 1/2 hours or 15 minutes per pound.
  • Meanwhile, combine the sugar, paprika, garlic powder and oregano in a small bowl and stir until well mixed. Whisk in the olive oil until the mixture is a smooth paste.
  • Remove the ham from the oven when it has reached 130 degrees F internally. Increase the oven temperature to 425 degrees F. Spoon or brush the mustard all over the ham. Spread the spice paste with a spoon as evenly as possible all over the ham. Add water as needed to the bottom of the pan. Return the ham to the oven and roast until the paste forms a very light brick red crust, turning once halfway through, about 25 minutes more.

I've learned how to make this simple but yet very tasty recipe from my Spanish Father. It may be eaten at anytime of the day. Note: The smaller the pot the better one can flip over. I've also made a few changes to make it easier and less time consuming for the working parents.

1 lb frozen southern style hash brown potatoes
6 large eggs
1/3 cup milk (I use 2%)
1 large vidalia onion
2 tablespoons unsalted butter
4 ounces ham, cut or shred with fingers into small pieces (Boar's HEAD maple glazed)
cooking spray
cooking oil
salt
1 sprig parsley or 1 sprig cilantro

Steps:

  • Make sure cooking oil is hot enough before you toss the frozen diced hash brown potatoes (Med-High). Remove from pan and set aside on paper towels once they are light brown in color as it needs to drain thoroughly.
  • In the meantime, that the hash brown are cooking begin to cut the onions either in slices or cubed and place them in a microwaveable dish with the butter and cook for 6-7 mins or until the onions are a translucent color. Please add by minute increments if necessary, for the onions.
  • In a nice size bowl, beat the eggs, milk and salt.
  • Spray the pan (I use a 3qt size).
  • Place all the ingredients together plus the ham.
  • Cook on Low-Medium and cover until the egg have thicken and same can be flipped over to a plate and back to the pot for the other side to cook and get a nice golden color.
  • Add a sprig of Parsley or Cilantro for presentation/decoration.

  • Beat together eggs and milk. Heat a lightly oiled skillet (or non-stick pan) over medium high heat and cook egg mixture, stirring occasionally, until firm. When almost done, stir in ham, green onions, salt and pepper.

Unlike traditional tortillas (the Spanish form of frittatta), which rely on copious quantities of olive oil for frying potatoes and other ingredients, this version steams the spuds and lightly sautes the remaining (homegrown) veggies with a tiny bit of chorizo, then combines them with an egg substitute, paprika and goat cheese. Baked in a springform pan, it's a full meal in a slice - no crust required!

1 tablespoon extra virgin olive oil
1 large zucchini, halved lengthwise and sliced
4 shallots, thinly sliced
12 ounces new potatoes, quartered and cooked (I steamed mine)
2 large garlic cloves, minced
1 (500 ml) carton egg beaters southwestern egg substitute (or 8 eggs plus diced red bell pepper)
1/2 teaspoon paprika
kosher salt
freshly cracked black pepper, to taste
2 teaspoons fresh thyme
3 scallions, minced
1 ounce dry spanish chorizo, diced*
3 ounces goat cheese, crumbled

Steps:

  • Preheat the oven to 375 F and grease a 9" springform pan wrapped in foil.
  • Heat oil in a deep saute pan over medium heat and add the zucchini and shallots.
  • Cook until zucchini begins to brown, then add the potatoes and garlic (and peppers if using) and cook 1 minute.
  • In a large bowl, beat the Egg Beaters (or eggs), paprika, salt, pepper, cream, thyme, green onions and cheese until well combined.
  • Add sauteed mixture and stir through gently.
  • Pour into the pan and bake until the eggs set, about 40-45 minutes.
  • Cool at least 5 minutes before running a thin knife around the edge of the pan and unmoulding.
  • This is great warm or cold.
