1 pouch Betty Crocker™ sugar cookie mix
1/2 cup butter, softened
1 egg
1 box (4-serving size) Jell-O™ gelatin strawberry-flavored
1 box (4-serving size) Jell-O™ gelatin berry blue-flavored
1 box (4-serving size) Jell-O™ gelatin lime-flavored
1 box (4-serving size) Jell-O™ gelatin orange-flavored

Steps:

  • Heat oven to 375°F. Line cookie sheet with cooking parchment paper.
  • In large bowl, beat cookie mix, softened butter and egg with spoon or electric mixer on medium speed until well combined. Separate dough into 4 small bowls.
  • Add a half packet of each color gelatin per bowl; knead dough to work color in until well combined. Roll each bowl of dough into 5 small balls of dough each.
  • Pour remaining gelatin onto 4 small plates; roll each ball of dough in its corresponding color. Place on cookie sheet 2 inches apart.
  • Bake about 12 minutes or until lightly golden on edges. Cool completely before serving.

This sugar cookie recipe is easy to make in any color and the simple buttercream frosting can be flavored to match. You can choose if you want regular shaped cookies or if you prefer cut out sugar cookies, you can make those instead.

1 cup butter (softened to room temp)
1 cup sugar
1 pkg Jello* (3 oz. box)
3 eggs
3 cups flour
1 tsp. baking powder
1/2 tsp. salt
1/4 cup butter (softened to room temp)
1 Tbsp sour cream ((or plain yogurt))
2 cups powdered sugar
1 tsp vanilla extract
1-2 Tbsp milk
1 Tbsp Jello powder*

Steps:

  • Cream butter and sugar together for about 2 minutes with an electric mixer.
  • Add Jello and continue to mix for 1-2 minutes.
  • Add eggs and mix well.
  • Mix flour, baking powder and salt together in a separate bowl and then add to the Jello mixture. Mix just until thoroughly combined.
  • If rolling into ball, scoop the dough out by tablespoons and roll into smooth balls. Place on prepared cookie sheet. Spray the bottom of a measuring cup with cooking spray and then press the measuring cup onto a plate with a thin layer of sugar on it. Press each cookie ball with the bottom of the measuring cup, dipping into the sugar in between each cookie.
  • If making cut-out cookies, chill the dough for at least 2 hours. Divide in half and roll out each half to about 1/4" thick. Cut out shapes and place on a prepared cookie sheet.
  • Bake cookies at 375° for 8-9 minutes.
  • Let cool and then add frosting if desired.

1 teaspoon baking powder
1/4 teaspoon salt
2 sticks unsalted butter, at room temperature
3/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 1-pound box confectioners' sugar (about 3 3/4 cups)
2 tablespoons meringue powder
Nonpareils, for decorating (optional)

Steps:

  • Sift the flour, baking powder and salt into a medium bowl.
  • Beat the butter and granulated sugar in a large bowl with a mixer on medium-high speed until light and fluffy, 3 to 5 minutes. Add the egg and vanilla and beat until incorporated. Reduce the mixer speed to low; add the flour mixture in 2 batches and beat until just incorporated. Divide the dough in half, wrap in plastic wrap and refrigerate until firm, at least 1 hour and up to 1 day.
  • Line 2 baking sheets with parchment paper. Working with 1 piece of dough at a time, lightly dust the dough with flour and roll out between 2 pieces of parchment paper until about 1/8 inch thick. Refrigerate until slightly firm, about 15 minutes. Cut out shapes using 2-to-4-inch cookie cutters and transfer to the prepared baking sheets. Gather the scraps and refrigerate until firm; reroll once to cut out more cookies. Refrigerate the cutouts until firm, about 30 minutes.
  • Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Bake the cookies, switching the position of the pans halfway through, until just golden, 13 to 15 minutes. Let cool 5 minutes on the baking sheets, then transfer to racks to cool completely.
  • Meanwhile, make the icing: Sift the confectioners' sugar and meringue powder into a large bowl. Beat in 6 tablespoons water with a mixer on medium speed until soft, glossy peaks form. Spread on the cookies and decorate with nonpareils. Let set, about 1 hour.

Steps:

  • Sift the cake flour, baking powder and salt onto a piece of parchment paper or into a medium bowl; set aside. Beat the butter and sugar in a large bowl with a mixer on medium-high speed until light and fluffy, about 5 minutes. Add the egg and vanilla and beat until incorporated. Reduce the mixer speed to low and beat in the flour mixture in 2 batches until just incorporated. Divide between 2 pieces of plastic wrap; shape into disks. Wrap and refrigerate until firm, at least 1 hour. (The dough can be frozen for up to 1 month; thaw overnight in the refrigerator before rolling.)
  • Line 2 baking sheets with parchment paper. Working with 1 disk at a time, roll out the dough on a floured surface, dusting with flour as needed, until about 1/8 inch thick. Gather the scraps and refrigerate until firm; reroll once to cut out more cookies. Chill the cutouts 30 minutes.

Bake, switching the pans halfway through, until the cookies are slightly puffed and just golden, 13 to 15 minutes. 1 tsp. vanilla
2 lb. powdered sugar
1/2 cup meringue powder
2/3 cup water
1 Tbsp. gel food coloring (assorted colors)
1/4 cup assorted colors of sprinkles

Steps:

  • Heat oven to 350°F.
  • Combine flour and baking soda. Beat butter and granulated sugar in large bowl with mixer until light and fluffy. Blend in dry pudding mix, egg and vanilla. Gradually add flour mixture, mixing well after each addition. Transfer dough to lightly floured surface; mix with your hands until ingredients are well blended and come together to form smooth ball.

Spoon frosting from one bowl into piping bag fitted with small piping tip, such as a number 2, 3, or 4. Repeat with remaining frostings to fill additional piping bags fitted with piping tips.
  • Use piping bags to pipe line of frosting around edge of each cookie, then gently squeeze additional frosting back and forth over top of cookie to cover with frosting. Decorate with sprinkles as desired. Let stand until frosting is firm.
