Easy rice cooker rice doesn't have to be boring! With no additional prep time and just a couple extra ingredients, you can transform your plain white rice into an elegant and fragrant side dish!

Steps:
- Add all ingredients to a 6-cup or larger rice cooker and stir. Hit the cook button and do nothing until it's finished.
- Fluff with a fork and mix to make sure saffron threads are evenly distributed throughout the rice before serving.

RICE COOKER SAFFRON RICE
Steps:
- Gather the ingredients.
- Pour the stock into a medium-size pot over high heat. Bring to a boil and remove from heat.
- Add the saffron threads, turmeric, cumin, garlic, chili, and fish sauce (or salt) to the hot stock. Stir well.
- Pour this mixture into your rice cooker together with the rice. Stir and cover.
- Switch on the cooker. When the rice is done, fluff with a fork or chopsticks. The dried chili may have risen to the top, so just mix it in.
- Serve the rice as an accompaniment to your main dish.

SPICY SHRIMP FRIED RICE WITH BROCCOLI
Spice up this fried rice with shrimp and broccoli by adding ginger, jalapeno and chili oil.

- Heat a large nonstick skillet or wok over high heat and then swirl in 1 tablespoon of the oil. When the oil begins to smoke, add the egg and swirl the skillet to make a flat egg pancake that's only half set, about 10 seconds; scoop onto a plate.
- Add the shrimp to the skillet, season with 1/4 teaspoon salt and stir-fry until just cooked through, about 3 minutes. Transfer to a bowl. Add the remaining 1 tablespoon oil to the skillet, then add the broccoli, garlic, ginger, jalapeno, Shaoxing and 1/4 teaspoon salt and stir-fry until crisp-tender, 2 to 3 minutes.
- Add the rice, stirring to break up any clumps, and spread it out in the skillet. Cook until heated through, about 3 minutes. Return the egg, shrimp and any juices to the skillet and cook, stirring to break up the egg and mix it in thoroughly, about 1 minute. Season with additional salt if needed. Stir in the chili oil and serve.

- In a Dutch oven, heat oil over medium-high heat. Add onion, red pepper and mushrooms; cook and stir 6-8 minutes or until tender. Stir in rice, garlic and seasonings; cook 1-2 minutes longer., Stir in stock; bring to a boil. Reduce heat; simmer, covered, 40-45 minutes or until liquid is absorbed and rice is tender. Add shrimp and broccoli; cook 8-10 minutes longer or until shrimp turn pink. Stir in peas; heat through. Freeze option: Place cooled paella in freezer containers. To use, partially thaw in refrigerator overnight. Microwave, covered, on high in a microwave-safe dish until heated through, stirring gently and adding a little stock or water if necessary.

SAFFRON RICE

- Combine saffron threads and boiling water and allow to 'steep' for at least 5 minutes.
- In a medium pot, combine saffron + boiling water with the basmati rice and all other ingredients.
- Cover and bring to a boil; reduce heat and simmer (covered) for 15 minutes.
- Remove from heat and let sit for another 10 minutes before serving.
- Combine saffron threads and boiling water and allow to 'steep' for at least 5 minutes.
- Combine saffron + boiled water with the basmati rice and all other ingredients.
- Cook using the 'white rice' function (or regular function if there is not a white rice option).
- Once the cook time is up, fluff with a fork and serve.

- Cut the roasted and peeled peppers into 1/2 inch dice and set aside.
- Preheat oven to 325.
- In an ovenproof frying pan or a paella pan about 12 inches in diameter, warm the olive oil over medium heat. Add the onion and garlic and saute, stirring, until soft, about 10 minutes. Add the rice and parsley and cook, stirring, until the rice is evenly coated with oil, about 2 minutes. Add the bell peppers, wine, stock, tomatoes, saffron and water, turmeric, salt and ground pepper. Boil gently, uncovered, for 5 minutes.
- Bury the shrimp and scallops in the rice. Place in the oven and bake, uncovered, for 10 minutes. Cover and continue to bake until the rice is tender and the seafood is cooked, about 10 minutes longer. Remove from the oven and let stand for 10 minutes.
- Garnish with lemon wedges and serve.

- Steep the saffron in 1/2 cup boiling water.
- In a skillet that can be tightly covered, melt the butter over medium-high heat. Stir in the rice and salt. Cook, stirring constantly, until the rice begins to absorb the butter and becomes opaque, but do not brown the rice.
- Quickly pour in the remaining 1 1/2 cups boiling water along with the saffron water. Cover immediately, reduce heat to low, and cook 20 minutes, or until all of the liquid is absorbed. For best results, do not remove the lid while the rice is cooking.

- Shell, devein and refrigerate shrimp.
- Place shrimp shells in a saucepan with the water and boil about 15 minutes. Strain and reserve 3 cups of the water (adjust for serving changes). Discard the shells.
- In a shallow pan, heat the oil over medium heat until fragrant and saute shrimp quickly, just until they turn pink. Refrigerate again.
- In the same oil, saute the onion and bell pepper until onion is translucent, about 3 minutes. Stir in the garlic and cook another 2 minutes. Stir in the tomato sauce, wine, salt, pepper, saffron, cumin, oregano and bay leaf and cook for a few more minutes.
- Add the rice and the reserved shrimp water. Bring just to a boil, reduce heat to low, cover the pan and cook gently for about 30 minutes until the rice is tender and almost dry. Add the shrimp 5 minutes before the rice is done.
