Do you ever allow yourself to experience the wonderful simplicity of a big ol' pot of beans?

Number Of Ingredients 15

FOR THE BEANS:
4 c. Dry Pinto Beans
4 slices Thick Bacon (can Also Use Salt Pork, Or Ham Hock, Or Diced Ham)
1 tsp. Salt
2 tsp. Ground Black Pepper
FOR THE CORNBREAD:
1/4 c. Plus 2 Tablespoons Shortening
1 c. Yellow Corn Meal
1/2 c. All-purpose Flour
1 tsp. Salt
1 c. Buttermilk
1/2 c. Milk
1 whole Egg
1 tbsp. Baking Powder
1/2 tsp. Baking Soda

Steps:

  • For the beans: Rinse beans in cool water; pour them into a large pot, cover with water by 2 to 3 inches. Slice the bacon into 1-inch thick pieces and throw it into the pot. Bring to a boil, then reduce heat and cover. Simmer for 2 hours, or until beans are tender. Add additional hot water to the pot as needed. Beans should have a thick broth. Toward end of cooking time, add salt and pepper and season to taste. Don't over-salt. For a variety try adding chili powder, garlic or Tabasco. Serve in a bowl with cornbread. Can be served with small bowls of grated cheese, chopped onions, chopped fresh jalapenos, sour cream, and/or cilantro.For the cornbread: Preheat oven to 450 F. Heat shortening over medium heat in an iron skillet (10-12 inch size), muffin pan, or other oven safe pan. Combine cornmeal, flour, and salt in a mixing bowl. In a separate bowl, combine buttermilk, milk, and egg. Mix the wet ingredients into the dry ingredients. Add baking powder and baking soda. Stir to combine. Add ¼ cup of the melted shortening, stirring constantly. Pour the batter into the hot pan, smoothing the surface with a spatula. Bake for 20 to 25 minutes or until golden brown on top.

This is a delicious casserole. I got it from ecookbooks online, the casserole book. I made this last night for supper and my husband and I really enjoyed it. We had the leftovers for lunch today and believe it or not, it was even more delicious! I just have to share the recipe with you!

1 (12 ounce) package all beef wieners
2 (16 ounce) cans baked beans
1/8 cup catsup
1 tablespoon dijon-style mustard
1 tablespoon dark brown sugar
1 tablespoon dark molasses
1 teaspoon hot pepper sauce
1 green onion, including part of the green,chopped
1 tablespoon olive oil
2/3 cup yellow cornmeal
1/3 cup all-purpose flour
1 tablespoon granulated sugar
1 teaspoon baking powder
1/2 teaspoon salt
1 egg
1/2 cup milk

Steps:

  • Preheat oven to 350*F.
  • Brown weiners in a skillet.
  • Cut diagonally into 1 inch pieces.
  • Mix beans, catsup, mustard, sugar, molasses and pepper sauce in a 9 inch square baking dish.
  • Stir in weiners (This much can be fixed ahead and refrigerated if you wish) Saute green onion in oil until soft.
  • Set aside.
  • Whisk together cornmeal, sugar, flour, baking powder and salt in a bowl.
  • Stir in green onion with oil.
  • Mix egg and milk together, then stir into flour mixture until smooth.
  • Spoon over casserole.
  • Bake for 30 minutes or until golden brown.
  • Let cool 15 minutes before serving.

2 tablespoons margarine
1/2 lb smoked sausage (I use a whole lb.)
3/4 cup diced onion
3/4 cup diced green pepper
3 (16 ounce) cans baked beans
1 cup catsup
1/2 cup honey
1 tablespoon Worcestershire sauce
1 (8 1/2 ounce) box corn muffin mix
1/3 cup milk
1 tablespoon margarine, melted
1 egg
1 teaspoon chopped fresh parsley (optional)

Steps:

  • Preheat over to 400.
  • In lg. skillet over medium heat, melt 2 TB marg.
  • Brown sausage lightly and place in bottom of casserole.
  • To drippings in skillet, saute onions& peppers three minute.
  • Add beans, catsup, honey and worcest. sauce, stirring to combine.
  • Bake 10 minutes.
  • Cornbread topping: Combine ingred. and stir til moistened.
  • Spoon over casserole; return to oven and bake 20-25 minutes or until golden brown.

  • Sorry, don't really have pictures of food. If I get a chance, I'll take one this week. The idea of brining beans comes from Cook's Illustrated and is a good one. Put the beans in the water, add the first measure of salt and let sit at least 8 hours and up to 24. Drain them in a colander. The rest of this recipe works best in a cast iron Dutch oven but you can use pretty much anything large enough and it will be fine. You do need a lid for it.
  • Yes, no sugar. Sugar is an abomination in the eyes of the Lord. Corn is plenty sweet, why you want to go add sugar to it? Trust me on this. This is CORN bread people! You don't need sugar. You sure don't need any flour. Then what you'd have is a giant corn flavored biscuit and that's nasty. Yellow corn meal is sweeter and cornier than white, that's why.
