Here's what you need: oil, ground beef, kosher salt, black pepper, ground cumin, chili powder, smoked paprika, cayenne, large yellow onion, red bell pepper, garlic, chipotle peppers in adobo sauce, tomato paste, chopped tomato, beef broth, black beans, red kidney bean, french fries, shredded cheddar cheese, sour cream, green onion

3 tablespoons oil
1 lb ground beef
1 tablespoon kosher salt, plus more to taste
1 teaspoon black pepper
1 tablespoon ground cumin
1 tablespoon chili powder
1 tablespoon smoked paprika
1 teaspoon cayenne
1 large yellow onion, chopped
1 red bell pepper, seeded and chopped
6 cloves garlic, minced
2 chipotle peppers in adobo sauce, chopped
12 oz tomato paste
12 oz chopped tomato, 1 can
2 cups beef broth
15 oz black beans, 1 can, drained and rinsed
15 oz red kidney bean, 1 can, drained and rinsed
1 lb french fries, cooked, hot
shredded cheddar cheese, for serving
sour cream, for serving
green onion, sliced, for serving

Steps:

  • Heat the oil in a large pot over medium-high heat. Add the beef and stir to break up. Season with the salt, pepper, cumin, chili powder, paprika, and cayenne. Stir and cook until deep brown in color, 10-15 minutes.
  • Add the onion, bell pepper, garlic, chipotles, and a pinch of salt. Cook until the vegetables are softened, about 10 minutes.
  • Add the tomato paste and cook until it darkens, becomes aromatic, and starts sticking to the bottom of the pan, 10 minutes.
  • Add the chopped tomatoes, beef broth, black beans, and kidney beans. Stir to incorporate, then bring to a boil. Cover, reduce the heat to low, and simmer for at least 30 minutes or up to 2 hours.
  • Ladle the chili over the fries and top with cheddar cheese, sour cream, and green onions.
  • Enjoy!

4 large russet potatoes, peeled and cut into thick wedges
1/2 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 tablespoon chili powder
4 cloves garlic, grated

Steps:

  • Preheat the oven to 450 degrees F.
  • Put the potatoes in a large bowl and pour over the olive oil. Add big pinches of salt and pepper. Add the chili powder and garlic and toss together well.
  • Spread the potatoes in a single layer onto 2 baking sheets. Bake, tossing them halfway through the cooking time, until crispy, about 30 minutes. Remove to a platter, season with additional salt and serve.

1/2 bag (about 16 ounces) french-fried potatoes (recommended: Ore-Ida Golden Crinkles)
1 pound ground beef
1 (12-ounce) bottle chili sauce (recommended: Heinz)
1 packet chili seasoning (recommended: Lawry's)
1/2 cup water
1 teaspoon Worcestershire sauce
1 tablespoon yellow mustard
1/2 teaspoon onion powder
Shredded Cheddar, optional (recommended: Kraft)

Steps:

  • Preheat oven to 450 degrees F.
  • Lay fries in a single layer on a baking sheet. Bake in preheated oven for 20 to 25 minutes, turning halfway through cooking, until crisp and golden.
  • In a large pot over medium heat, break up ground beef and brown, stirring constantly to break up all the clumps to fine ground.
  • Add remaining ingredients through the onion powder. Bring to boil. Lower heat and simmer for 30 minutes. Serve hot fries on a plate smothered with chili and topped with shredded cheese, if using.

2 pounds beef stew meat (cut into 1/2-inch pieces)
3 tablespoons all-purpose flour, divided
2 tablespoons canola oil
1 can (14-1/2 ounces) Mexican diced tomatoes
1 envelope (1.25 ounces) chili seasoning mix
1 can (15 ounces) pinto beans, rinsed and drained
1 medium green pepper, chopped
1 jalapeno pepper, seeded and finely chopped
2 packages (32 ounces each) frozen french-fried potatoes
2 cups shredded sharp cheddar cheese
Optional toppings: Sour cream and sliced jalapeno peppers

Steps:

  • Place onion and carrot in a 5-qt. slow cooker. Toss beef with 2 tablespoons flour. In a Dutch oven, heat oil over medium heat; brown beef in batches. Transfer meat to slow cooker. , Drain tomatoes; reserving liquid. In a small bowl, whisk drained liquid, chili seasoning and remaining flour until blended; pour over beef. Stir in the tomatoes, beans and peppers. Cook, covered, on low until meat is tender, about 6 hours., Prepare fries according to package directions. Serve chili over fries; sprinkle with cheese. 3 large eggs, beaten
1/4 cup milk

1 cup bread crumbs
1/2 cup grated Parmesan or Romano
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Remove the seeds from all of the peppers and cut into 1/2-inch lengthwise strips.
  • Set up a breading station: 1 pan of 1 cup of flour, 1 pan of eggs beaten with milk, 2 tablespoons of flour and mustard, and 1 pan of bread crumbs seasoned with cheese, and salt and pepper, to taste.

  • Set up grill for direct cooking over medium heat. Oil grate when ready to start cooking.
  • On a baking sheet, toss to coat fries, oil and chili seasoning. Place fries on hot, oiled grill and cook 3 to 5 minutes per side. Serve hot with your favorite BBQ sauce for dipping.
  • INDOOR: Preheat broiler. Place FROZEN fries on foil-lined baking sheet. Toss to coat with oil and chili seasoning. Broil fries for 8 to 12 minutes, turning once, or until desired degree of crispness.
