3 qt vegetable oil, plus 1 tablespoon
1 lb lean ground beef
2 teaspoons salt, divided
2 teaspoons pepper, divided
1 white onion, diced
1 green bell pepper, seeded and diced
1 teaspoon dried oregano
1 tablespoon brown sugar
4 cloves garlic, chopped
2 tablespoons worcestershire sauce
½ cup ketchup
2 cups tomato sauce
20 egg roll wrappers
1 egg, beaten
1 cup cheese dip, for serving

Steps:

  • Heat 3 quarts (2.8 L) of oil in a large pot until it reaches 350°F (180°C). Set a wire rack over a baking sheet.
  • Heat the remaining tablespoon of vegetable oil in a large cast-iron skillet over high heat. Add the ground beef, 1 teaspoon of salt, and 1 teaspoon of pepper, and cook for 10 minutes, or until browned. Remove the beef from the pan, leaving the drippings behind, and set aside.
  • In the same pan, cook the onion for 5 minutes, or until softened.
  • Push the onions to one side of the pan, and add the green pepper to the other side. Cook for 5 minutes, or until softened.
  • Return the ground beef to the pan. Add the remaining teaspoon of salt, remaining teaspoon of pepper, the oregano, brown sugar, garlic, Worcestershire sauce, and ketchup, and stir to combine. Add the tomato sauce and stir well.
  • Lay an egg roll wrapper on a clean surface. Brush a ½ inch (1 cm) border all around with egg wash.
  • Place two tablespoon filling of sloppy joe filling in the center of the egg roll wrapper. Fold one corner of the wrapper over the filling. Fold the sides over the folded corner. Continue rolling to seal the egg roll. Repeat with the rest of the wrappers and filling.
  • Fry the egg rolls, about 2 at a time, for about 2 minutes on each side, until evenly golden brown. Set the fried egg rolls on the wire rack to drain, and let cool for 10 minutes.
  • Serve warm with cheese dip.

1 ½ cups canned sloppy joe sauce
1 cup shredded Cheddar cheese
2 (8 ounce) cans refrigerated reduced-fat crescent rolls

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Cook and stir the ground beef in a skillet over medium heat, breaking it up as it cooks, until the meat is no longer pink, about 10 minutes. Drain off any excess fat, and mix the sloppy joe sauce into the cooked meat.
  • Unroll a can of crescent rolls, and pinch the triangles together to form a single sheet of dough. Lay the dough into the bottom of the prepared baking dish. Spread the meat and sauce mixture in an even layer over the dough, and sprinkle the Cheddar cheese over the meat mixture. Unroll the second can of rolls, pinch the triangles together to make a single sheet of dough as before, and place the dough over the cheese.
  • Bake the casserole in the preheated oven until the top sheet of dough is golden brown, 15 to 20 minutes.

I like this recipe for egg rolls because it's baked. It uses ground pork, but I have substituted ground chicken and turkey successfully. I also have added bean sprouts to the mixture (reducing the amount of meat), stirring them into the cooked mixture with the other vegetables. Base recipe courtesy of Canadian Living magazine.

1 lb ground lean pork (or ground chicken or turkey)
3 green onions, chopped
2 garlic cloves, minced
1 carrot, grated
1/2 cup water chestnut, chopped
2 tablespoons soy sauce
1 tablespoon cornstarch
1 tablespoon water
1 teaspoon sesame oil
1/2 teaspoon pepper
12 egg roll wraps, large size - 5 1/2-inch
1 teaspoon vegetable oil

Steps:

  • Preheat oven to 375*. In a non-stick pan, cook the pork over "medium-high" heat, breaking up with a spoon, until no longer pink. This should take about 5 minutes. Drain off the fat.
  • Add the onions, garlic, carrot and water chestnuts, cooking over "medium" heat until the onions are soft, about 3 minutes.
  • In a small bowl, whisk the soy sauce, cornstarch, water, sesame oil & pepper together. Pour over cooked mixture, stirring to mix. Let cool slightly.
  • Place egg roll wrapper on work surface and brush with water.
  • Spoon a scant 3 tablespoons of filling on bottom third of wrapper - leaving a 1/2" border on the bottom and sides.
  • Pull bottom edge over the filling and roll up, pinching ends to seal.
  • Place seam side down on parchment-lined baking sheet. Brush with oil. Bake @ 375* for 20 minutes, or until golden and crisp. Serve with plum sauce.

1 small onion, diced
1 (15 ounce) can sloppy joe sauce
1 cup shredded Cheddar cheese
14 egg roll wrappers (such as Nasoya®), or as needed
⅓ cup olive oil

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Prepare a baking sheet with cooking spray.
  • Heat a large skillet over medium-high heat. Cook and stir turkey and onion in the hot skillet until turkey is completely browned, 5 to 7 minutes.
  • Stir sloppy joe sauce into the turkey and onion mixture; simmer until slightly thickened, about 5 minutes. Remove skillet from heat and stir Cheddar cheese into the turkey mixture until melted.
  • Lay an egg roll wrapper onto a flat surface. Spoon about 2 tablespoons of the turkey mixture down the center of the wrapper making a line that reaches to within an inch of 2 opposing corners. 1 package (18 ounces) Hawaiian sweet rolls
12 slices cheddar cheese
1-1/2 pounds lean ground beef (90% lean)
1/2 cup chopped onion
1 can (15-1/2 ounces) sloppy joe sauce
1 tablespoon packed brown sugar
1 tablespoon soy sauce
3/4 teaspoon pepper
1/4 cup butter, melted
1 tablespoon packed brown sugar
1 tablespoon Dijon mustard
1 teaspoon soy sauce
1/2 teaspoon garlic powder
1 teaspoon sesame seeds
1 teaspoon black sesame seeds
1 teaspoon dried minced onion
Dill pickle slices, optional

Steps:

  • Preheat oven to 350°. Without separating rolls, cut rolls in half horizontally; arrange bottom halves in a greased 13x9-in. baking pan. Top with half of cheese slices; set aside., In a large skillet, cook beef and onion over medium heat until beef is no longer pink and onion is tender, 6-8 minutes, break up beef into crumbles; drain.
