7-8 ounces diced mild green chiles (either two 4 ounce cans or one 7 ounce can - depending on what's available in your store; mostly drained if packed in water - see note below)
8 ounces cheddar cheese, shredded and divided
16 ounce container sour cream

Steps:

  • Preheat the oven to 350 degrees F. Grease a 2-quart casserole baking dish (we use cooking spray).
  • Combine all ingredients, except about 1/2 cup of cheese, together in a large bowl. Spread the mixture into prepared dish. Sprinkle remaining cheese on top of mixture. Place in oven and bake for about 35 minutes and the cheese has melted and begun to brown.

  • Put in a casserole dish, sprinkle top with Cheddar cheese, and cook until center is hot.

4 Boneless skinless chicken breasts (trimmed)
2 cups chicken broth
2 cups quick cooking rice
8 oz cream cheese (softened)
8 oz chopped green chilis ((2 cans))
1 cup monterey jack cheese (shredded)
1 tsp garlic powder
1/2 tsp cumin
1/2 tsp salt
1/2 tsp pepper
1/4 cup chopped cilantro

Steps:

  • Preheat the oven to 350˚F.
  • In a large bowl, mix chicken broth, rice, cream cheese, green chiles, garlic powder, cumin, salt and pepper together until combined. Then spread the mixture in a large casserole dish.
  • Lay the chicken breasts evenly spaced on top of the rice mixture and gently press them into the mixture. Cover the top of the casserole with cheese.
  • Bake on the middle rack of the oven for 40-50 minutes or until chicken is cooked through (165˚F internal temperature.)
  • Serve hot, either with full chicken breasts, or shred chicken and mix into rice. Enjoy!

1 (8 ounce) container sour cream
1 (4 ounce) can chopped green chiles, drained

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a medium baking dish.
  • Prepare the instant long grain and wild rice mix according to package directions.

3 1/3 cups chicken stock
1 1/2 cups Green Chile Sauce, recipe follows
3 tablespoons canola oil
1/2 cup small-diced onions
1/2 serrano chile, seeds removed and minced
2 cups Arborio rice, or medium grain rice
1 tablespoon minced garlic
1 teaspoon sea salt
1 teaspoon fresh cracked black pepper
1 to 2 tablespoons fresh squeezed lime juice
1/2 cup chopped fresh cilantro
1/4 cup pepitas, toasted and lightly salted
2 tablespoons canola oil
3/4 cup finely diced Spanish onion
1/2 large jalapeno, seeded and minced
1 clove garlic, chopped
4 tablespoons flour
1 (27-ounce) can roasted green chiles, chopped, juices reserved
1/2 cup white vinegar
2 teaspoons sea salt
1 teaspoon fresh cracked black pepper
2 tablespoons fresh lime juice

Steps:

  • In a small saucepan over medium heat, bring the chicken stock and the Green Chile Sauce to a simmer. Hold warm.
  • In a large, enameled cast-iron Dutch oven over medium-high heat, add the oil. When hot, add the onions and serrano chiles and saute until the onion is just starting to color, 4 to 5 minutes.
  • Add the rice and stir to coat, Cook for 3 to 4 minutes, stirring constantly, to toast the rice a bit. Add the garlic, salt and pepper and stir to combine.
  • Ladle in the chicken stock and green chile mix, about 1 cup at a time, stirring and allowing the rice to absorb the liquid. Do this 3 to 4 times, and then add the rest of the liquid. Stir, cover tightly and cook for 12 to 16 minutes, stirring twice during this time.
  • Add the lime juice and cilantro and stir to combine. Place in serving bowl and garnish with the pepitas.
  • In a small Dutch oven over medium-high heat, add the oil. When hot, add the onions and jalapeno and saute until just starting to caramelize, 4 to 5 minutes. Add the garlic and cook 1 minute more.
  • Reduce the heat to medium, sprinkle the onion mixture with the flour and stir constantly until lightly browned, about 2 minutes. Add the reserved liquid from the chiles, 1 cup water, the vinegar and salt and stir until the liquid is smooth and all the flour is dissolved.
  • Add the chiles and pepper and simmer for 5 to 6 minutes. Puree in a blender, or with a stick blender, and add the lime juice. Adjust to taste for salt and pepper. Refrigerate for up to 1 week. Yield: 4 1/2 cups

2 whole green chiles (roasted or canned), stem and seeds removed and sliced into large strips
3/4 cup green enchilada sauce
1/2 cup shredded cheddar cheese
Chopped cilantro for garnish
2 cups cooked rice
1/4 cup green enchilada sauce
2 tablespoons chopped green chiles
1 tablespoon chopped cilantro
Kosher salt and fresh ground black pepper to taste

Steps:

  • Preheat oven to 375° F. and spray an oven safe baking dish (approximately 11 x 7 inch) with cooking spray. Pour 1/4 cup of enchilada sauce into the bottom of the prepared dish.
  • In a small bowl combine the chili powder, cumin, garlic powder salt and pepper. Coat the chicken breast evenly with the spice mixture and place them in the baking dish. Top the chicken with the strips of green chiles and pour the remaining enchilada sauce on top. Sprinkle on the shredded cheese and cover the baking dish with foil.
  • Bake for 20 minutes then remove the foil and bake another 5-10 minutes or until the chicken is cooked through and the internal temperature is 165°. Garnish with chopped cilantro before serving.
  • While the chicken is baking prepare the rice. In a bowl stir together the cooked rice, enchilada sauce, green chiles, cilantro, salt and pepper. Taste for seasoning and serve with the green chile chicken.

2 tbs olive oil
1 small onion, minced
1 yellow bell pepper chopped
1/2 cup milk
1 egg
1/2 cup sour cream
2 4 oz cans diced green chiles, drained well
10 oz diced, pre-cooked chicken
Pinch cayenne pepper
1 tablespoon cumin
Plenty of salt and pepper
2 cups shredded cheese (I used a combo of white cheddar and pepper jack, but Monterey Jack is really good too.)
4 cups cooked rice

Steps:

  • Preheat oven to 350 degrees F. rub olive oil on the sides and bottom of a large casserole dish.
  • In a large pan over medium-high heat, saute onions and bell peppers with olive oil until they begin to brown. Set aside.
  • Combine the rice, chicken, 1 1/2 cup of the cheese, green chilies, sour cream, cumin, cayenne, salt, pepper and onion mixture to the casserole dish and combine well. (Give the mixture a taste to make sure you have enough salt, pepper and cayenne.)
  • In a separate bowl, whisk together milk and egg. Add milk and egg to the rice mixture
  • Top the casserole with remaining shredded cheese and bake for 30 to 35 minutes.

1 large boneless skinless chicken breast ((or 2 thin cut breasts))
2 cups cooked white rice
1 cup sour cream
5.52 ounces cream of celery soup ((half of a can))
1/3 cup canned mild hatch green chiles (chopped)
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups Colby-jack cheese (shredded)
Salt and pepper (to taste)
Fresh parsley or green onion (chopped, for garnish)

Steps:

  • Preheat your oven to 350 degrees F. Spray a 9-inch x 9-inch baking dish with non-stick cooking spray. Set aside.
  • If using 1 large breast, cut it in half to create two thin chicken breast pieces. Butterfly the chicken and then finish cutting all the way through.
  • Place a large skillet over medium heat. Cook chicken for 3 to 4 minutes per side, until no longer pink and cooked through.
  • Remove the chicken to a cutting board and finely chop or shred the chicken.
