A great snack for when you want something salty and delicious but don't want the load of calories that normally comes with crispy snacks. Even those not watching thier caloric intake will love these so make a big batch. feel free to experiment with different seasonings. Garlic, cayenne, Italian blends and lemon pepper are some suggestions. ***note*** If you want larger chips use a japanese daikon radish. The taste and texture will be the same.

10 -15 large radishes
nonstick cooking spray
salt, to taste
pepper, to taste

Steps:

  • Preheat oven to 375 degrees.
  • Slice radishes into very thin chips and spread on a cookie sheet that has been sprayed with non-stick cooking spray.
  • Lightly mist radish slices with cooking spray and then sprinkle with salt and pepper. (if using other seasonings, now is the time to add them).
  • Bake for 10 minutes, flip, and bake for another 5-10 minutes or until crisp. Time may vary so watch these after flipping.

1 pound radishes (about 2 bunches)
3 tablespoons olive oil
1 pinch salt and pepper
1 pinch red pepper flakes (optional)

Steps:

  • Prep oven: Preheat oven to 400 degrees F (200 degrees C).
  • Wash and cut radishes: Cut radish bulbs from leaves and wash well to remove excess dirt. Slice the radish bulbs thin, about ¼" (or ½ cm) thick.
  • Prep radishes for roasting: On a medium baking sheet add olive oil and slides radishes and toss to coat radishes completely in oil. Sprinkle with salt, pepper, and red pepper flakes (if using).
  • Bake radish chips: Roast radishes for a total of 20-25 minutes, tossing every 5-10 minutes to brown all sides of radish slices. Remove from oven and serve immediately for best flavor and texture.

I saw a recipe for baked radishes in a magazine long, long ago and the thought so intrigued me I just had to give it a try. This is my personalized version of the original. I often switch out the thyme with either rosemary, basil, or crushed garlic, depending on my mood and what main dish these will be served with.

2 bunches radishes, trimmed
2 tablespoons extra-virgin olive oil
1 teaspoon ground thyme
salt to taste
½ lemon, juiced

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil.
  • Cut radishes into halves; cut any large radishes into quarters. Stir olive oil and thyme together in a bowl and toss radishes in mixture to coat. Spread radishes onto prepared baking sheet; sprinkle with salt.
  • Roast in the preheated oven until tender but firm in the centers, tossing every 5 minutes, 15 to 20 minutes. Drizzle with lemon juice.

These snack chips are so utterly crunchy and satisfying, it's hard to believe they're made from radishes.

Vegetable oil for deep frying
20 medium radishes
1/2 teaspoon coarse (kosher or sea) salt

Steps:

  • In deep fat fryer or heavy saucepan, heat 2 to 3 inches oil to 325°F.
  • Use mandoline slicer or very sharp knife to cut radishes into very thin slices. Place in 2-quart saucepan, and cover with water. Heat to boiling. Boil over high heat 4 to 5 minutes or until radish slices are translucent and skins are a lighter shade of pink. Drain radish slices in colander.
  • Fry radish slices in hot oil in at least 2 batches 8 to 10 minutes or until bubbles have almost completely stopped forming when radish slices are submerged into hot oil. Radish slices will be deep golden brown.
  • Drain on paper towels, and season with salt before serving.

Steps:

  • Preheat oven to 400 degrees. Separate greens from radishes; wash both well. Slice radishes in half; toss with 1 tablespoon each oil and vinegar. Season with salt and pepper. Arrange in a single layer on a rimmed baking sheet, cut-side down. Roast until tender and golden, 25 to 30 minutes.
  • Meanwhile, heat remaining oil and vinegar and the garlic in a medium skillet over mediumhigh heat. Cook radish greens, tossing, just until wilted, about 1 minute. Season with salt and pepper. Serve with radishes.
