BAKED POTATOES ON THE GRILL
Turns out the best way to make a baked potato might be to not bake it at all. Grilling it yields the same fluffy interior with the bonus of an underlying hint of smoky flavor. Since the potatoes are cooked over direct heat, it's important to use heavy-duty aluminum foil. (In a pinch, you can use two layers of regular foil.)

- Preheat a grill to medium heat. Use a paring knife to poke each potato 4 to 6 times. Rub the potatoes with the olive oil, then generously season with salt and pepper.
- Wrap each potato in a 12-by-12-inch piece of heavy-duty aluminum foil, then place on the grill. (If using a charcoal grill, place over the area with coals.) Grill with the lid closed until a paring knife slides easily into each potato, 50 to 60 minutes.
- Remove from the grill and let cool for 5 minutes before unwrapping. Serve with butter, sour cream and chives.
GRILLED CHEESY LOADED POTATOES

- Prepare a grill for direct and indirect heat: For gas grills (with 3 or more burners), turn all the burners to medium-high heat; after about 15 minutes, turn off one of the side burners and turn the remaining burners down to medium. For charcoal grills, bank one chimney starter-full of lit and ashed-over charcoal briquettes to one side of the grill. Set up a drip pan on the other side to avoid flare-ups. (Be sure to consult the grill manufacturer's guide for best results.)
- Heat a 10-inch cast-iron skillet on direct heat and add the bacon; cook, stirring often, until crispy, about 5 minutes. Remove the bacon with a slotted spoon to a paper-towel lined plate; set aside.
- Add the potatoes and sprinkle with salt and pepper. Stir to coat with the bacon fat, then move to indirect heat and cover the grill. Cook, uncovering the grill and stirring every 5 minutes, until the potatoes are tender, about 20 minutes.
- Sprinkle with the Cheddar and move back to direct heat. Cook, uncovered, until the potato bottoms are golden and the cheese is melted, about 10 minutes, depending on the heat of your grill. Let cool for 10 minutes, then dot with the sour cream and sprinkle with the scallions and reserved bacon.

- Brush large sheet heavy duty foil with oil (or spray generously with cooking spray).
- Place potatoes and onion in center of foil.

GRILLED "BAKED" POTATOES

Steps:
- Each potato is going to need 2 wraps of foil so if you are grilling 4 potatoes, you will need 8 pieces of foil.
- Scrub potatoes clean and poke holes all around potato. Brush olive oil over the potato. ( I just use my hands).
- Wrap potatoes in foil tightly.
- Place on the grill (if using a gas grill, place on top) 400 degrees. Leave them there for an hour, turing at the 30 minute point.
- Remove from grill and enjoy with whatever toppings you like.
- This is what I do, I put my potatoes in first, then corn (for grilled corn) and then my meat (chicken, steak, whatever you like). It all cooks in the grill and ready at the same time.

BAKED POTATO GRILLED CHEESE RECIPE - (4.6/5)

- To start things off, get a pan on medium heat with enough canola oil to lightly cover the bottom (you could also use olive oil or butter). Cut your potato into even slices, you will need 4-5 slices for the sandwich, then place them in your pan, cooking each side until browned and crispy. While cooking, salt and pepper the potatoes to taste (they don't have to be too salty as the bacon with help with the saltiness as well) and sprinkle a light pinch of garlic powder. In another pan cook your bacon on medium heat to desired tenderness (I liked mine crispy for this sandwich!). While everything is cooking, slice your bread (use some crusty bread like french or sourdough if you have it), and generously butter the outside of each piece. On the inside, put about 1 tablespoon of sour cream on each slice as well as slices of cheddar cheese on each side. Once your potatoes and bacon are finished frying, dab them on paper towel to remove some grease, then fan the potatoes out on your bottom slice of bread, put a little more sour cream on top of the potatoes if you desire (I did to help the bacon and chives stick in the sandwich). Slice up one green onion stalk and spread it on top of the potatoes along with the bacon. Place your other slice of cheese on top of all of this and top with your bread! Now just grill the sandwich in a pan on medium heat until each side becomes golden brown. Once this is done, dig in and ENJOY!
BAKED GRILLED CHEESE
My family loves grilled cheese so when they asked for it I wanted to try something new. This was the best grilled cheese, nice crunchy bread with melted cheese. I had to post this so I wouldn't forget it. Family loved it served with homemade milkshakes and fries. This is a great way to make a bunch at one time and the clean-up was nothing. ;)

- Preheat oven to 450°F.
- Lightly butter one side of each slice of bread.
- Place on a cookie sheet butter side down.
- Place 2 slices cheese on each piece of bread.
- Place other piece of bread on top, lightly butter side up.

- Preheat your oven to 400 degrees. Rinse the potato and then use a sharp knife to slice it into big thin pieces. You want them to be about 1/8 inch thick.
- Drizzle olive oil over a baking sheet to prevent the potatoes from sticking the baking sheet. Then spread the potato slices out on the baking sheet. Melt 1 tablespoon of butter and brush the tops of the potato slices with butter. Dust with salt and pepper. Roast for about 15 minutes, and flip once the bottom has lightly browned. Cook for another 5 minutes or so to brown the second side.
- While the potatoes are roasting, prepare the bacon. Line a pan with aluminum foil. Place the bacon in the pan and bake for 10-12 minutes. Baking bacon is the best way to get it really crisp.
- Once the potatoes and bacon are ready you can assemble your sandwiches. Spread a tablespoon of sour cream on one side of each slice of bread. Then add a little cheese, the potato slices, some more cheese, the bacon, a bit more cheese, and the second slice of bread. Cheese is the glue that holds everything together.
