Keep this classic recipe for fluffy biscuits: You'll use it over and over.

Number Of Ingredients 7

2 cups all-purpose flour, plus more, for dusting
2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon sugar
1 teaspoon fine salt
7 tablespoons cold unsalted butter, sliced
3/4 cup buttermilk, plus more, for brushing

Steps:

  • Preheat the oven to 450 degrees. Line a baking sheet with parchment.
  • Whisk the flour, baking powder, baking soda, sugar and salt together in a medium bowl. Rub 2 tablespoons of the cold butter into the flour with your fingertips until completely absorbed. Work the remaining 5 tablespoons of cold butter into the flour with your fingertips until pea-sized bits of butter remain. Use a rubber spatula to stir the buttermilk into the flour until the mixture comes together into a shaggy dough.
  • Dust a cutting board or work surface with flour and turn the dough out onto it. Pat the dough into a 1/2-inch thick rectangle. Fold dough in thirds, like a letter, and then pat into a 3/4-inch thick rectangle. Cut biscuits out using a 2 1/2-inch round biscuit cutter and put on the prepared baking sheet. Press together the remaining scraps of dough and cut out more biscuits. Brush the biscuit tops with buttermilk.
  • Bake until the tops are lightly browned, about 15 minutes. Cool on the pan at least 5 minutes. Serve warm or at room temperature.

I grew up eating them often as a kid-almost every day-so now I'm always looking for new ways to incorporate this versatile vegetable into my everyday life. There's just something so special about biscuits loaded with shredded potatoes, cheddar cheese, and chives. I can't put it into words, but I feel like I don't have to because you get it. It's the baked potato you never knew you wanted . . . in biscuit form.

Yield Makes 20 biscuits

Number Of Ingredients 10

1 medium baking potato, rinsed and dried
2 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon coarsely ground black pepper
6 tablespoons very cold unsalted butter, diced, plus 2 tablespoons, melted
1/4 cup shredded white Cheddar cheese
2 tablespoons chopped chives
1 cup buttermilk

Steps:

  • Preheat the oven to 425°F. Line a baking sheet with parchment paper, and set aside.
  • Cook the potato in a microwave, an oven, or in boiling water until almost fork-tender (see Cooks' Note). Let cool completely. Using a paring knife, peel the potato, and then shred with a box grater.
  • In a large mixing bowl, combine the flour, baking powder, baking soda, salt, and pepper. Add the cold butter and cut in using 2 knives, a pastry blender, potato masher, or your hands, until the dough resembles coarse crumbs the size of peas. Fold in the cheese, chives, and shredded potato.
  • Add the buttermilk and stir with a wooden spoon until the dough just comes together. It'll be sticky, but don't panic. Transfer to a well-floured work surface and knead a few times to smooth it out. Fold the dough onto itself about 4 times, turning clockwise after each fold. Pat the dough with your hands until it's about 3/4 inch thick.
  • Use a 2-inch round cookie or biscuit cutter to cut into rounds. Place the biscuits on the prepared baking pan just barely touching each other. Gather scraps and repeat patting and cutting (you should have 20).
  • Brush the biscuits with the melted butter, and bake until golden brown, 18 to 20 minutes. Let cool before serving. Store any leftovers in an airtight container in the refrigerator for up to 4 days.

1 teaspoon salt

¼ cup butter or margarine
1 ½ cups leftover mashed potatoes
1 egg, beaten
⅓ cup cold water
⅓ cup milk
2 tablespoons milk, or as needed

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • In a medium bowl, stir together the flour, baking powder, salt, and sugar. Cut in butter, until pieces of butter are no larger than peas. Use a fork to stir in mashed potatoes, breaking them up into chunks. Make a well in the mixture, and pour in egg, water and milk. Stir into a loose dough using the fork.
  • Turn dough out onto a floured surface, and knead for 6 or 8 times so the dough holds together. Pat the dough out to about 3/4 inch thickness, and cut into circles with a biscuit cutter or drinking glass. Place biscuits onto an ungreased baking sheet. Brush the tops with 2 tablespoons milk.
  • Bake for 15 to 20 minutes in the preheated oven, or until bottoms are golden.

2 sticks salted, cultured butter, chilled and cubed (1 cup)

Steps:

  • Heat oven to 425 degrees. Line a baking sheet with parchment paper.
  • In a large bowl, whisk together flours, baking powder, baking soda, salt and sugar.
  • Using a pastry cutter or fork, quickly cut butter into flour mixture until it forms pea-size crumbs and is uniformly mixed. (For flaky biscuits, you want the butter to remain cold.) Make a well in center of mixture and pour in buttermilk. Stir together until it just forms a moist, slightly tacky dough.

  • Whisk egg and milk together with a fork. Generously brush egg wash on top of each biscuit. Bake until brown, 15 minutes. Serve hot.

2 1/4 cups unbleached self rising flour (White Lily is the best.)
1 cup whole buttermilk
1/4 cup lard (cold)
1 tablespoon sugar
1 teaspoon salt
1/2 teaspoon baking soda

Steps:

  • Put flour, lard, sugar, salt, baking soda in a food processor and mix until it resembles coarse meal (usually, just a few quick pulses with the food processor will do).
  • If you don't have a food processor use a fork and cut lard into ingredients until it's blended thoroughly.
  • Then put flour in a mixing bowl and add buttermilk.
  • Mix just until ingredients are blended.
  • Don't overmix or handle dough very much or your biscuits will be tough.
  • Pour dough on a floured surface and GENTLY pat down until it's about 3/4" thick.
  • You'll have to flour your hands to pat it down so it won't stick to you.
  • Then use a biscuit cutter to cut biscuits out and place in a buttered cast iron skillet or baking pan.
  • Use your index finger to place a slight indention in the center of each biscuit.
  • This prevents the center from rising faster than the edges.
  • Coat tops of biscuits with melted butter or margarine and bake at 425 degrees for approximately 15 minutes or until golden brown.

  • Preheat oven to 450 degrees F.
