2 pounds medium red potatoes (about 7), cut into wedges
1/4 cup thinly sliced green onions
6 slices ready-to-serve fully cooked bacon, chopped
3/4 teaspoon salt
1/8 teaspoon pepper
2 tablespoons butter
1 cup shredded cheddar cheese

Steps:

  • In a large bowl, toss potatoes with green onions, bacon, salt and pepper. Place half of the mixture on a greased double thickness of heavy-duty foil (about 18 in. square); dot with 1 tablespoon butter. Fold foil over potato mixture and crimp edges to seal. Repeat to make a second packet., Grill, covered, over medium heat 20-23 minutes on each side or until potatoes are tender. Remove from grill., Open foil carefully to allow steam to escape. Sprinkle potatoes with cheese. Grill opened packets, covered, 3-5 minutes longer or until cheese is melted.

1 clove garlic, chopped
1/2 large potato, diced
1/4 cup green peas
1/4 cup chopped broccoli
1/4 cup chopped carrot
1/4 cup chopped zucchini
1/4 cup chopped green bell pepper
1/4 cup shredded cheddar cheese

Steps:

  • Melt butter over medium heat and saute garlic.
  • Stir in potato, peas, broccoli, carrot, zucchini and bell pepper.
  • Stirring occasionally, cook until potatoes start to brown, about 15 minutes.
  • Serve with shredded cheese.

These are the BEST mashed potatoes EVER! And they are so user-friendly because you can make them the night before. I never take these anywhere without people begging me for the recipe. Once you make these, you will never want to make them any other way. Also great in twice-baked potatoes. And, if you need really easy, buy pre-cooked mashed potatoes, add from these ingredients, stir, and re-heat in microwave. Tastes almost as good as home-made! My favorite way to cook these are in the crockpot! EDIT: Please note that I have always cooked these in the crockpot and have never baked them; I have gotten new feedback that they taste FAR BETTER if cooked in the crockpot, so this is now my only recommendation for cooking source.

8 medium potatoes
1 cup sour cream
8 ounces cream cheese
4 tablespoons butter
1/4 cup chives
1 1/2 teaspoons salt
1/2 teaspoon pepper
2 garlic cloves, minced
1 1/2 teaspoons onion powder
1 pinch marjoram (optional)
1/2-1 cup thinly sliced green onion
bacon bits or 2 slices cooked crumpled bacon
milk
paprika

Steps:

  • Boil potatoes until tender.
  • Beat softened cream cheese and sour cream in mixing bowl.
  • Add hot potatoes and beat until smooth, adding small amounts of milk as needed.
  • Add butter, chives, salt, pepper and onion powder and beat until well-mixed.
  • Add garlic, green onions, and marjoram and beat until well-mixed.
  • Pour into either casserole dish or crockpot.
  • Dot with additional butter and sprinkle with paprika.
  • Bake for 25 minutes in 350°F oven or cook on low in crockpot for 2-3 hours. If cooked in crockpot, add a few additional drops of butter and stir, just before serving.
  • Sprinkle with Bacon Bits or crumpled bacon just before serving.
  • NOTE: Can be refrigerated overnight in either casserole dish or crockpot.

6 large new potatoes, sliced into discs
2 leeks, chopped into 1/4 inch pieces
3 garlic cloves, sliced
10 fresh sage leaves
10 slices pancetta or 10 slices bacon, cooked and roughly chopped
3 ounces gorgonzola
1/2 cup cream
salt and pepper, to taste

Steps:

  • Preheat barbecue to 325F (medium heat).
  • Tear off a large enough piece of foil to make an 8x8" package. Place 1/3 of potato slices on foil and season with salt and pepper.
  • Top with 1/2 the leeks, pancetta, garlic, and sage.
  • Repeat a layer of potatoes, then a layer of the remaining leeks, pancetta, garlic, and sage. Season with pepper and top with the remaining potatoes.
  • Sprinkle the top layer with gorgonzola and drizzle with cream.
  • Seal up the foil package and place on grill. Cook for 30 minutes or until potatoes are tender.

This is a recipe passed down from my Mom. Every time I make it, someone asks for the recipe. One friend says her family fights over it! I hope you enjoy! You can also make a homemade chicken soup with this recipe. Just cut up veggies, shred chicken, and cook in chicken broth.

6 carrots, chopped
6 stalks celery, chopped
1 cup fresh or frozen peas
1 cup fresh or frozen green beans, thawed
1 cup corn kernels
1 yellow onion, diced
1 cup quartered red potatoes
3 cups chicken broth
1 teaspoon thyme
½ teaspoon salt
½ teaspoon ground black pepper
4 (.87 ounce) packages dry chicken gravy mix
4 cups water
1 (15 ounce) package double crust ready-to-use pie crusts (such as Pillsbury®)
1 whole roasted chicken, bones and skin removed, meat shredded
¼ cup butter, cut into pieces
1 egg
¼ cup milk

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Place a baking sheet on the a rack on which you'll bake the pie.
  • Combine the carrots, celery, peas, green beans, corn, onion, red potatoes, and chicken broth in a large pot. Season the vegetable mixture with thyme, salt, and black pepper; bring to a boil. Reduce heat to medium-low, cover, and simmer until the vegetables are tender, about 15 minutes. Drain the vegetables and set aside.
  • Place dry chicken gravy mix into another saucepan and gradually whisk in the water until smooth. Bring the mixture to a boil, reduce heat to medium-low, and simmer until thickened, about 1 minute. Set gravy aside and allow to continue to thicken as it cools.
  • Press one of the pie crusts into the bottom of a 9-inch pie dish. Spoon a layer of gravy (about 1/3 cup) into the crust. Layer the cooked vegetables and shredded chicken into the crust until the filling is level with the top of the pie dish. Pour the rest of the gravy slowly over the filling until gravy is visible at the top. Scatter butter pieces over the filling; top with second crust. Seal the 2 crusts together and crimp with a fork.
  • Whisk the egg and milk together in a bowl, and brush the egg wash over the top crust. Pierce the top crust several times to vent steam.
  • Bake the pot pie in the preheated oven until the filling is bubbling and the crust is golden brown, about 45 minutes to 1 hour. Check periodically to see if the edge of the crust is browning too quickly; if needed, cover the edge with a strip of aluminum foil to prevent over-browning.

  • PREHEAT grill to medium heat.

This is a recipe that I have had for years. I originally got it off of a Lipton Soup Mix box and changed a bit. I like red potatoes the best but any can be used. I also add chopped carrots if I have them on hand. Originally designed for grill, I have cooked them in the oven in packets on a cookie sheet.

4 potatoes
1 (1 ounce) package Lipton Onion Soup Mix
4 tablespoons parmesan cheese, divided
4 tablespoons butter, divided

Steps:

  • Tear off 4 large squares of aluminum foil and spray with Pam.
  • Scrub potatoes.
  • Slice with skins on (like you would to fix fried potatoes).
  • Divide potatoes among foil squares.
  • Shake soup mix package before opening to mix it up well. Divide among 4 foil squares. You may or may not use whole package, depend on personal preference.
  • Sprinkle 1 tablespoon cheese on each square of foil.
  • Put 1 tablespoon of butter on top of each foil square.
  • Fold sides to completely cover potatoes and form a square packet.
  • Put on grill, my DH, puts them on the shelf of our grill and cooks for 45 minutes.

This is a great vegetable combination to accompany your fall and winter meals. It is baked in a foil packet which cuts down on the clean-up.
