Sidle up to the table, split open a spud, and fill it with one of our four flavor combinations. Each topping combination is enough for four potatoes. If you've got a crowd to feed, bake more potatoes, and make more than one style of topping.

4 baking potatoes (8 ounces each), scrubbed
1 tablespoon olive oil
Coarse salt and ground pepper
Desired topping (below)
1 cup shredded Monterey Jack cheese
4 ounces cooked ham, diced
1 cup frozen peas, thawed
1 cup reduced-fat sour cream
4 ounces smoked salmon, torn into small pieces
2 to 3 scallions, thinly sliced
1 cup crumbled soft goat cheese (4 ounces)
1 cup canned black beans, rinsed and drained
1/2 cup store-bought salsa
1 cup part-skim ricotta cheese
4 ounces sliced pepperoni (1 cup)
1 package (10 ounces) frozen leaf spinach, thawed, squeezed dry, and roughly chopped

Steps:

  • Preheat oven to 400 degrees. Prick potatoes all over with a fork, and rub them with oil. Place potatoes on a rimmed baking sheet; bake until easily pierced with the tip of a paring knife, 50 to 60 minutes.
  • Cut a deep cross in each potato; push ends together to open. Season with salt and pepper; add desired toppings.

1 teaspoon coarse sea salt
Proteins
Corned beef
Beef brisket
Shredded chicken
Bacon
Cooked and crumbled sausage
Black beans
Shredded Pork Shoulder or Carnitas
Ground beef or turkey
Dairy
Butter
Sour cream or plain Greek yogurt
Shredded cheese - go with classic cheddar or pick a variety of your favorite cheeses for extra flavor!
Veggies
Roasted/steamed vegetables - broccoli is a personal favorite of mine here!
Sauteed greens (spinach, kale, etc.)
Sauerkraut
Sauteed bell peppers
Chives
Green onions
Diced red onion
Pickled red onions
Cilantro
Sliced jalapenos (fresh or pickled)
Chili
Chopped avocado
Salsa

Steps:

  • Preheat the oven to 400 F.
  • Rub the potatoes with olive oil and sprinkle with sea salt, then place on a rimmed baking sheet and bake for 50-60 minutes, until the potatoes are pierced easily with a fork.
  • Cut a slit in the potatoes, lengthwise, then set out alongside the toppings. If you want to keep the potatoes warm, you can place them in a slow cooker on the warm setting. Let everyone serve their own potatoes and enjoy!

1 teaspoon salt
3/4 teaspoon coarse black pepper
chopped green onion
chopped bell pepper
ranch dressing or ranch dip
sour cream
shredded cheese
crumbled blue cheese
crumbled crisp bacon
salsa
diced avocado
diced tomatoes

Steps:

  • Stab potatoes with fork.
  • Coat potatoes with oil.
  • Sprinkle with salt and pepper.
  • Wrap each potato individually in aluminum foil; place in 5 to 6 qt slow cooker.
  • Cover and cook on LOW heat setting 6 to 8 hours or until potatoes are tender.
  • Serve with toppings.
