Brandy Baked Peaches image

Peaches are cut into halves, topped with a brandy-cinnamon sauce, and baked for 30 minutes. Place peaches on individual serving dishes, top with ice cream, and drizzle with sauce for a light summer dessert.

3 fresh peaches, halved and pitted
¼ cup butter
1 tablespoon sliced almonds
¼ cup honey
¼ cup brown sugar
1 ½ teaspoons ground cinnamon
2 tablespoons brandy
1 pinch salt
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Prepare a baking dish with cooking spray.
  • Arrange peaches cut-side up in the prepared baking dish.
  • Put butter in a saucepan over medium-low heat, add almonds, and heat together until butter melts, about 2 minutes. Stir honey, brown sugar, and cinnamon into the melted butter; bring to a simmer and add brandy and salt. Stir to dissolve the salt, remove saucepan from heat, and add vanilla extract; pour the mixture over the peaches.
  • Bake peaches in preheated oven until the peaches are cooked through, about 30 minutes.

5 to 6 cups frozen sliced peaches, any brand, 1 large sack
1 package complete biscuit mix (recommended: Jiffy brand)
1/2 cup water
1/2 cup granulated sugar, plus 2 tablespoons, divided
2 teaspoons ground cinnamon, divided
1/4 teaspoon ground nutmeg, eyeball it
1/2 teaspoon ground allspice
1/8 teaspoon black pepper, a couple of pinches
Pinch salt
2 (1-ounce) boxes or 1/3 cup golden raisins, a couple of handfuls
1/4 cup, (2-ounce) package, sliced almonds

Steps:

  • Preheat oven to 425 degrees F.
  • Place frozen peaches in an 8 by 8 glass baking dish, defrost in microwave for 3 minutes on high. While the peaches are defrosting, make the cobbler topping. In a bowl, combine the biscuit mix with a 1/2 cup of water, stir until thoroughly combined but do not overwork. In another bowl combine 1/2 cup of the granulated sugar, 1 teaspoon cinnamon, nutmeg, allspice, pepper, a pinch of salt and raisins. Remove peaches from the microwave and combine with the sugar mixture in baking dish. Top the seasoned peaches with biscuit mix, use your fingers to press out until even. Top the biscuit mix with almonds. Mix remaining cinnamon and sugar together and sprinkle over the biscuits. Bake until cobbler top is firm and lightly golden and peaches are bubbly and hot, about 20 to 25 minutes.
  • Serve warm as is or with ice cream and whipped cream if you have some on hand.

1 teaspoon vanilla
1/2 cup honey
1 teaspoon lemon juice, fresh
1/8 teaspoon salt
1 cup golden raisin
6 peaches, fresh, pitted and halved

Steps:

  • Lightly grease a 9-inch baking dish; set aside.
  • Preheat oven to 350 degrees.
  • Measure brown sugar, butter, vanilla, honey, lemon juice and salt into a 1-quart saucepan.
  • Over low heat, stir and heat until sugar is dissolved and mixture is syrupy.
  • Stir in raisins.
  • Keep warm, but do not allow to boil.
  • Arrange peaches, cut side up, in prepared baking dish.
  • Pour syrup over all.
  • Bake, uncovered for 20 minutes, or until peaches are just beginning to caramelize.
  • Serve warm, 2 halves per serving.
  • Top with whipped cream, vanilla ice cream, or frozen yogurt.

Found in the LA Times Food & Drink section. Combines some of my favorite foods & SC peaches are just coming in....Use whole fat buttermilk (a much better product) & heavy cream to lash the individual servings with just before serving. Mmmm... makes summertime worthwhile.

8 cups sourdough bread cubes, stale
2 cups buttermilk
2 cups heavy cream
2 cups milk
1 cup golden raisin
3/4 teaspoon nutmeg, freshly grated
1 1/2 cups granulated sugar, divided
2 tablespoons lemon juice, fresh
1 teaspoon cinnamon, ground
2 1/2 lbs peaches, peeled, pitted and sliced one-eighth-inch thick (about 8)
1 teaspoon butter
6 eggs
1 1/2 teaspoons vanilla extract
1 teaspoon kosher salt
1/4 cup demerara sugar (turbinado ok too)

Steps:

  • Arrange a rack in the middle of the oven and put a large baking sheet on the rack below it, to catch any drips later. Heat the oven to 350 degrees.
  • In a large bowl, toss together the bread, buttermilk, heavy cream, milk, raisins and nutmeg and set aside to soak for 20 minutes.
  • Meanwhile, in a medium bowl, toss together one-fourth cup of the granulated sugar, lemon juice, cinnamon and peaches, to coat; set aside.
  • Grease a 9-by-13-inch casserole dish with butter; set aside.
  • Whisk together the eggs, vanilla, salt and remaining 1 1/4 cups of the granulated sugar in a medium bowl, then add to bowl with the bread mixture. Add the macerated peaches and stir well to combine. Transfer to the prepared dish and spread out evenly.
  • Sprinkle the turbinado sugar over the top and bake until cooked through and deep golden brown, covering with a sheet of foil if parts of the top get too dark, about 1 1/4 hours.
  • Serve warm or at room temperature. Serve with a drizzle of cream, if desired.

1 cup golden raisins
½ cup brown sugar
2 tablespoons all-purpose flour
½ teaspoon ground cinnamon
¼ teaspoon salt
4 cups fresh sliced peaches
1 tablespoon lemon juice
1 (9 inch) unbaked pie dough round

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Combine raisins, brown sugar, flour, cinnamon, and salt in a bowl. Mix in peaches and lemon juice.
  • Place pie dough round on a rimmed baking sheet.
  • Mound fruit mixture in center of dough, leaving a 1 1/2-inch border. Fold edge of dough up around fruit, gently pleating and pressing dough against the fruit.
  • Bake in the preheated oven for 10 minutes.
  • Reduce the oven temperature to 350 degrees F (175 degrees C).
  • Continue baking until crust is golden brown, 20 to 25 minutes. Remove from the oven; let cool on the baking sheet for 10 minutes before using 2 large spatulas to transfer to a plate.
