CRISPY PARMESAN BAKED SQUASH



Crispy Parmesan Baked Squash image

Sliced squash topped with seasoned bread crumbs and parmesan cheese. The perfect easy summer side dish for nearly any meal.

2 yellow squash ( , cut into 1/4 inch slices)
1 tablespoon light virgin olive oil
1/3 cup parmesan cheese ( , finely grated )
3 tablespoons bread crumbs
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon fine sea salt
1/4 teaspoon ground black pepper

Steps:

  • Preheat oven to 350°F.
  • Toss the cut squash with the oil in a medium mixing bowl. Take each round out, tapping off excess oil, and place them in a single layer on a large baking sheet being mindful to leave a little space between each.
  • In a small mixing bowl, combine the parmesan cheese, bread crumbs, garlic powder, onion powder, salt and pepper.
  • Spoon bread crumb mixture evenly over each squash round, pressing down lightly on each one.
  • Bake for 15 minutes, or until squash is soft, but not mushy. Remove and serve.

4 cups thinly sliced yellow summer squash (3 medium)
3 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
1/8 teaspoon cayenne pepper
3/4 cup panko bread crumbs
3/4 cup grated Parmesan cheese

Steps:

  • Preheat oven to 450°. Place squash in a large bowl. Add oil and seasonings; toss to coat., In a shallow bowl, mix bread crumbs and cheese. Dip squash in crumb mixture to coat both sides, patting to help coating adhere. Place on parchment-lined baking sheets. Bake 20-25 minutes or until golden brown, rotating pans halfway through baking.

2 lbs summer squash (about 6 small squash)
2 tablespoons olive oil
1/4 cup grated Parmesan cheese
Salt and pepper

Steps:

  • Heat oven to 400 F. Slice squash lengthwise and place on a rimmed baking sheet. Mix olive oil and Parmesan in a small bowl. Using a small spoon spread a dollop of the mixture onto the flat surface of the squash. Roast for 25-30 minutes until cheese is slightly brown.
  • Enjoy hot, cold, or room temperature.

2 medium-sized yellow summer squash
Garlic salt & freshly ground black pepper
1/2 cup freshly grated Parmesan cheese

Steps:

  • Place an oven rack in the center position of the oven. Preheat the oven to 425°F. Line a baking sheet with foil (lightly misted with nonstick cooking spray) OR parchment paper.
  • Wash and dry the squash, and then cut each one into 1/4-inch thick slices. Arrange the squash rounds on the prepared pan, with little to no space between them. Lightly sprinkle the squash with garlic salt and freshly ground black pepper. Use a small spoon to spread a thin layer of Parmesan cheese on each slice of squash.
  • Bake for 15 to 20 minutes, or until the Parmesan melts and turns a light golden brown. (Watch these closely the first time you make them and pull them out of the oven early if the Parmesan is golden before 15 minutes. Alternatively, you may broil them for a minute or two at the end of the cooking time to speed up the browning.) Serve immediately.

salt and pepper (to taste)
1/2 cup parmesan cheese, (shredded)

Steps:

  • Preheat the oven to 400˚F. Line a baking sheet with parchment paper.
  • Place the squash in one layer on the prepared baking sheet. Sprinkle the garlic powder on top. Season with salt and pepper.
  • Using a small spoon, spoon some parmesan on top of each squash.
  • Place in the preheated oven for 20-25 minutes, or until parmesan in golden brown.

This is a delicious recipe to use up your crop of summer squash, even people who hate squash like this recipe! When I made this I added in about 2 teaspoons fresh minced garlic, but that is optional. You can cook the squash hours in advance.

3 lbs yellow squash, peeled
1/4 cup melted butter
1 small onion, finely chopped
2 eggs, lightly beaten
1 tablespoon sugar
3 tablespoons grated parmesan cheese (can use more)
2 teaspoons seasoning salt (or to taste, or use white salt)
black pepper
1 1/2 cups fresh breadcrumbs
2 -3 tablespoons parmesan cheese
1/4 cup melted butter

Steps:

  • Chop the squash into about 1-1/2-inch cubes.
  • Bake, steam or boil until tender; drain the squash very well if boiling then place into a bowl and mash.
  • Set oven to 375 degrees.
  • Butter a 2-quart casserole dish.
  • To the mashed squash add in 1/4 cup melted butter, onions, eggs, sugar, seasoned salt and black pepper to taste; mix to combine.
  • Transfer the mixture to prepared baking dish.
  • In a small bowl mix together the bread crumbs with Parmesan cheese and 1/4 cup melted butter until blended; sprinkle over the squash.
  • Bake for about 45 minutes.
  • Delicious!

2 pounds summer squash and green zucchini
1/4 cup plus 2 tablespoons extra-virgin olive oil
1 tablespoon coarse salt
Freshly ground black pepper
1 1/2 cups finely grated Parmesan cheese
Nonstick cooking spray
Zest of 1 lemon
Maldon sea salt
Crushed red pepper flakes

Steps:

  • Place 1 squash or zucchini on a cutting board. Cut zucchini at a 45-degree angle on the bias, rotate squash a quarter turn toward you so that the cut side faces up. Cut again at a 45-degree angle right through the middle of the face. Rotate the squash a quarter turn again and repeat process. Repeat process until all squash and zucchini are cut.
  • Transfer squash and zucchini to a large bowl. Add 1/4 cup olive oil, salt, and 1 teaspoon black pepper; toss to combine. Add Parmesan and toss until squash and zucchini are well coated.
  • Preheat oven to 425 degrees. Fit a rimmed baking sheet with a rack; spray rack with nonstick cooking spray.
  • Spread squash and zucchini pieces evenly on prepared rack. Transfer to oven and roast until tender and lightly caramelized, about 12 minutes, rotating pan halfway through cooking. Remove from oven and let cool slightly; transfer squash and zucchini to a large platter or 4 individual plates.
  • Drizzle squash with remaining 2 tablespoons olive oil. Zest lemon over squash and cut lemon into wedges; squeeze lemon over squash. Season with Maldon sea salt, red pepper flakes, and black pepper; serve immediately.

2 medium yellow summer squash
1 small onion
1 tablespoon butter
½ tablespoon canola oil
salt and ground black pepper to taste
4 tablespoons shredded Parmesan cheese, divided, or to taste

Steps:

  • Slice squash and onion to 3/16-inch thickness using a mandolin.
  • Melt butter and canola oil over medium heat in a large skillet. Add squash and onion to the hot pan and season with salt and pepper. Saute until vegetables begin to soften, about 10 minutes. Sprinkle with 3 tablespoons Parmesan cheese, reduce heat to low, and continue cooking for 5 minutes.
  • Remove skillet from heat and sprinkle with additional tablespoon Parmesan cheese prior to serving.
