BAKED PARMESAN CRUSTED PORK CHOPS
Steps:
- Preheat the oven to 350°F. Liberally spray a rimmed baking sheet fitted with a baking rack with cooking spray. Line the baking sheet with foil, if desired.Set aside.
- In a shallow bowl, beat together the eggs, milk, 1/4 tsp garlic salt and 1/4 tsp black pepper.
- On a plate mix together the breadcrumbs, Parmesan, lemon pepper, 1/2 tsp garlic salt, onion powder and dry Italian seasoning.
- Season each pork chop lightly with garlic salt, eyeball the amount, to your taste. Dip each into the egg wash.
- Dredge chops in seasoned breadcrumbs. Press the breadcrumbs firmly onto each pork chop. Arrange on the baking rack.
- Drizzle each chop with melted butter. May use more butter, if desired or spritz with cooking spray.
- Bake for 30-35 minutes or until fork tender. To brown further, at the end of baking increase the oven temperature to broil.Turn once to brown both sides evenly.
- Rest for 5 minutes then serve.

- Preheat oven to 350 degrees F (175 degrees C). Spray a baking dish with cooking spray.
- Whisk egg in a shallow bowl.

- Whisk the eggs in a pie plate to blend. Place the bread crumbs in another pie plate. Place the cheese in a third pie plate. Sprinkle the pork chops generously with salt and pepper. ROASTED ARTICHOKES WITH PARMESAN BREADCRUMBS
Artichokes were one of those vegetables that really intimidated me. They just seemed so hard to prepare. But, once you get the hang of it, it's really easy. I like to serve mine with a lemon-garlic aioli for dipping.

- For the artichokes: Preheat the oven to 475 degrees F. Cut the lemons in half and squeeze the juice into a bowl. Add water.
- Trim the top 1 inch off the tops of the artichokes. Use kitchen shears to trim the pointy edges off the leaves. Trim the ends of the artichokes. Cut the artichokes in half through the centers. Use a spoon to scoop out the fuzzy chokes and the purple leaves. Place the artichokes in the lemon water as you work to prevent them from browning.
- Shake off the water from the artichokes and place, cut-sides down, in a small baking dish coated with cooking spray. Drizzle with 2 tablespoons olive oil and sprinkle with salt and pepper. Bake until the artichokes are tender, 25 minutes.
- Meanwhile, heat the remaining 2 tablespoons olive oil in a small skillet. Add the panko and cook until toasted, about 2 minutes. Remove to a small bowl and let stand until room temperature, about 10 minutes. Stir in the lemon zest, Parmesan and parsley.
- Make the lemon-garlic aioli: Stir together the mayonnaise, lemon juice and garlic in a small bowl. Season with salt and pepper.
- To serve, turn over the artichokes and sprinkle with the panko mixture, stuffing some between the leaves. Drizzle or dip with the aioli.

- Preheat the oven to 400 degrees F (200 degrees C).
- Pound pork chops with a meat mallet to an even 1/4- to 3/8-inch thickness. Season with salt and pepper on both sides.
- Place flour and eggs into 2 separate shallow dishes. Combine panko bread crumbs, Parmesan cheese, and Italian seasoning in a third dish.
- Dip each pork chop first into flour, shaking off the excess. Next, dip into egg mixture, letting any excess drip off. Coat chops in crumb mixture and set on a plate.
