- Preheat oven to 400°. Line a baking sheet with foil; grease foil., In a shallow bowl, mix the first 7 ingredients. Cut chicken into 1-1/2-in. pieces. Dip in melted butter, then in cracker mixture, patting firmly to adhere. Place on prepared pan., Bake 20-25 minutes or until golden brown and chicken is no longer pink. If desired, serve with sauce.

BAKED PARMESAN CHICKEN BITES
Steps:
- Preheat oven to 375°F.
- In a shallow dish, combine breadcrumbs, Parmesan cheese, salt, onion powder, and pepper. Add the olive oil and use a fork to work the olive oil into the breadcrumb mixture until it's completely incorporated.
- Pour flour into a separate shallow dish.
- Place eggs in a third shallow dish.
- Dredge the chicken pieces in flour and turn to coat. Shake off any excess flour. Then dip the chicken in the egg, shaking off any excess egg before finally rolling and coating the chicken bites in the breadcrumb mixture.
- Arrange the breaded chicken bites in a single layer on an ungreased baking sheet.
- Bake until the chicken is crisp and golden brown on the outside, and reaches an internal temperature of 165°F, about 15 minutes.
- Serve chicken bites with warm marinara sauce for dipping.

These irresistible Parmesan Chicken Bites are an amazing way of preparing chicken, without needing to deep fry. Crunchy on the outside while the inside remains tender and soft are simply hard to resist. Serve them with your favorite dipping sauce and you've got a great lunch or dinner dish that all family will love, especially the kids.

Steps:
- Preheat oven to 400F (200C). Line 1 or 2 baking sheets with parchment paper.
- In a large bowl combine panko breadcrumbs with Parmesan cheese, paprika, garlic powder, dried parsley, salt and pepper. Set aside until ready to use.
- Cut chicken breast in about 1 ½ inch (4cm) bite size pieces. Season chicken with salt and pepper.
- Into a large bowl add flour and chicken pieces. Use a spoon to toss the chicken into the flour until all pieces are coated. Transfer the chicken to another clean bowl and discard the excess flour.
- Beat eggs with oil and pour over the chicken and toss to coat.
- Roll each piece of chicken in the panko Parmesan mixture. Transfer the pieces to the prepared pans.
- Bake for about 25 minutes until golden brown.
- Serve with your favorite dipping sauce.

BAKED PARMESAN CHICKEN
This is modified from a recipe on the menus4moms website. It's simple to prepare, and the crunchy topping gives it great texture. I serve it on a bed of spinach fettucini for a pretty presentation. I used bone-in, skin-on thighs, but you could really use whatever pieces you have on hand, or that your family prefers. If using boneless pieces, you will need to cook for less time.

Steps:
- Preheat oven to 350.
- In a small saucepan over medium low heat, melt 2 tablespoons of the butter. Add the garlic, and stir to coat. Continue cooking until garlic is fragrant.
- Add the remaining butter, and leave over the heat until melted.
- In a pie plate or shallow dish, combine crumbs, cheese, oregano, salt and pepper.
- Dip each piece of chicken in the melted butter, coating all sides, then dredge in the crumb mixture. Place in a baking dish.
- Drizzle remaining butter over the chicken pieces.
- Bake uncovered at 350 degrees for 45 minutes or until done.
