- Brown steaks in drippings.
- Remove from skillet.
- Sauté mushrooms and onion slices until tender.
- Drain steaks, mushrooms and onion slices on paper towels.
- Combine soup, buttermilk, parsley and seasonings, blending till smooth.
- Place alternate layers of potatoes, onion and mushroom slices, steak and sauce in greased 2 1/2-quart casserole.
- Bake uncovered in 350° oven for 1 hour, or till potatoes are tender.

This is a delicious tasting casserole dish, one that I make quite often, I have even replaced the beef with pork, either way it is great meal, I serve it on top of pasta, don't leave out the red wine, it just doesn't have the same taste!

- Set oven to 350 degrees.
- Grease a large casserole dish.
- Cut beef into bite-sized cubes.
- Combine flour, salt, pepper and dry mustard powder.
- Toss beef cubes in the flour mixture to coat.
- Heat oil in a frypan.
- Brown beef cubes on all sides.
- Place browned beef cubes in a casserole dish.
- Add all remaining ingredients.
- Cover, and bake for 1-1/2 hours, or until meat is tender.
- Stir occasionally.
HAMBURGER STEAKS WITH ONION AND MUSHROOM GRAVY

- For the hamburger steaks: Whisk together the mustard, smoked paprika, egg, garlic, 1 teaspoon salt and 1/4 teaspoon pepper in a medium mixing bowl. Mix in the ground beef and breadcrumbs by hand, then form into 4 oval patties, about 1/2 inch thick.
- Set a large nonstick pan over medium-high heat and add the oil. Add the patties and brown on both sides, about 3 minutes per side. Transfer the patties to a plate; set aside.
- For the onion and mushroom gravy: Turn the heat down to medium and add the mushrooms and thyme. Cook until the mushrooms release their liquid and are browned, about 8 minutes. (The mushrooms might seem dry at first, but will eventually release liquid and add moisture to the pan.) Transfer the mushrooms to a plate; set aside.
- Melt the butter in the pan, add the onions and garlic and cook until translucent and lightly golden, about 10 minutes. Sprinkle in the flour and cook, stirring, until the butter and liquid are absorbed, about 1 minute. Pour the broth and Worcestershire into the pan and stir until the flour is dissolved.
- Turn the heat to high and bring to a boil. Stir the mushrooms back into the pan and nestle in the beef patties. Cover with a lid and reduce the heat to medium low. Let simmer until the sauce has thickened and a thermometer inserted into the patties registers 165 degrees F, about 10 minutes.
- Turn the patties over a few times to coat in the sauce. Season with salt and pepper and top with the parsley.

- Preheat an outdoor grill for medium-high heat. Melt butter in a large skillet over medium-high heat. Sautee the shallot until transparent, then add mushrooms, and cook, covered, until darkened, about 5 minutes. Remove mushrooms from pan, and set aside. Deglaze the pan with one can of beef broth, and burgundy wine. Increase heat, and bring to a boil. Allow the mixture to boil until it has reduced by 1/3.
- Grill the sirloin tips to desired doneness. Season with salt and pepper if desired. Remove to a plate, and set aside.
- When the sauce is reduced, stir in the other can of beef broth, and garlic. Return to a boil, and continue to cook for another 5 to 10 minutes. Sauce will be thin like au jus. Whisk in flour, and cook until the sauce is the desired thickness. Taste and adjust seasoning if necessary. Stir in the mushrooms. Serve tips with mushroom sauce spooned over.

- Melt butter in a skillet over medium heat. Add onion and cook until it begins to soften and turn clear, about 4 minutes. Add mushrooms and salt; stir well and cook until mushrooms begin to release their liquid, about 5 minutes. Add garlic and cook until fragrant, about 1 minute.
- Combine beef stock, wine, and Worcestershire sauce in a small measuring cup. Pour into the skillet and stir in thyme sprigs and pepper; bring to a boil.

MINUTE STEAK AND MUSHROOM SAUCE
One of my favorite meals to eat, this is sooo easy and can be done in about 30 minutes. Goes great with mashed potatoes and rolls of some kind are a MUST to sop up the extra mushroom sauce.

- Slice mushrooms (if using fresh) and saute in butter until tender.
- If using a can, drain well.
- Set aside.
- In a large skillet, heat oil.
- Salt minute steaks and dredge in flour.
- Fry until breading is brown.
- **Make sure when frying you leave the meat long enough for the breading to fry until it sets, as it will fall off if not fried long enough.
- This is what makes it GOOOOD!
- When the meat is fried, place on paper towels to drain excess oil.
- Place in a 2 quart casserole dish and keep warm.
- Leave 2 tablespoons of oil in the skillet and remove the rest.
- Add cream of mushroom soup, milk, and mushrooms, stirring constantly.
- Let soup simmer on med-low heat until throughly heated.
- Pour over warm meat and serve.

- Season steak with salt and pepper on both sides.
- Heat a heavy skillet over high heat until a drop of water immediately sizzles and evaporates when flicked onto the skillet's surface. Pour in oil. Add steak and cook until it is beginning to firm and is hot and slightly pink in the center, about 4 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C).

STEAK & MUSHROOM PIE

- Cut steak into 3cm cubes and season. Heat 2tbsp of oil in frying pan and over a high heat fry meat till well browned all over. Do this in 2 batches to avoid 'steaming' meat add extra tbsp of oil if pan is dry. Place beef in casserole dish and toss it in flour.
- Heat oven to Gas 2 150C/130C fan. add 1 tbsp oil to pan and cook the onions and garlic over a medium heat for 5-10 mins until golden and soft then mix with beef in casserole dish. Deglaze pan with red wine (or water) and Worcestershire sauce and bring to boil whilst stirring and lifting any residue from the pan.
- Pour sauce over the beef add stock and bay leaf. Bring to boil on top of stove then cover with lid and cook in oven for 1.5 hours.
- Meanwhile, melt butter in frying pan and cook mushrooms for 5 mins until lightly browned, then add to beef and return casserole for another 30 mins (2-hr total). Remove from oven and cool.
- To make the pastry rub the butter into the flour with a generous pinch of salt and mix with fingertips until mixture resembles fine breadcrumbs. Stir in egg and water mixture, bring together to form a dough and knead very lightly. Divide the dough into 2/3'ds for base and 1/3'ds for the top. Roll into balls, flatten slightly, wrap each ball in cling film and chill for 20 mins. If preparing dish early in day (or day before) you can prepare to this point and store filling and dough in fridge until next day or when ready to assemble. Remember to bring dough to room temperature before rolling.
- Heat oven to gas 6 200C/180C fan. Roll out larger ball of pastry and use to line a greased 23cm (9") pie dish. HANDY TIP!! To avoid a soggy base, sprinkle the pastry base with a spoonful of semolina then spoon in beef, onions and mushrooms using a slotted spoon, adding just enough of the liquid to be "saucy." Save remaining sauce and gently reheat and serve with finished pie. Brush the pastry rim with a little beaten egg. Roll out the smaller ball of dough for the pie top and gently lay it over the filling. Use a sharp knife to trim any overhanging pastry (you can use surplus to decorate top of pie). Crimp edges with fingers or fork, brush with beaten egg to glaze. Bake in oven for 30 mins until pie is golden brown and filling is piping hot. Serve with heated gravy.
STEAK & MUSHROOM PUFF PASTRY PIE
This recipe is made in a casserole dish, but you may make it in a 10-inch *very* deep-dish pie plate, it's made easy using packaged gravy mix, stewing beef may be used in place of the sirloin, throw in some frozen diced peas and carrots and a splash of red wine also if desired --- because of the high soduim content in the gravy mix I suggest not to add in any extra salt.

- Heat oil in a large skillet over medium-high heat.
- Season the steak cubes with black pepper then add to the skillet then cook until browned on the outside; remove to a bowl.
- Add in mushrooms and cook until browned.
- Add in onion and thyme; saute for about 5 minutes (adding in the garlic the last 2 minutes of cooking).
- Return the beef to the skillet.
- Stir in the mushroom gravy, 1 cup water and Worcestershire sauce (start with 2 teaspoons and add in more to taste); bring to a simmer over low heat and cook for 30-35 minutes.
- Season with salt and black pepper to taste.
- Set oven to 400 degrees F.
- Transfer the beef mixture to a greased casserole dish.
- Roll out the puff pastry to cover the top of the dish; press edges onto the rim of the dish to seal.
- In a small cup whisk together 1 tablespoons water with the egg, then brush over the top of the pastry.
- Bake for 20 minutes or until the pastry is fuffed and golden brown.
