BAKED SHRIMP AND ORZO WITH FETA CHEESE

1 1/2 - 2 pounds large shrimp (31 to 40 per pound, peeled and deveined)
Salt and pepper
1 cup chopped onion (about 1 medium yellow, white or red onion)
1 teaspoon extra virgin olive oil or coconut oil
1 teaspoon dried oregano
1/2 teaspoon salt
6 garlic cloves (finely minced or pressed)
1 pound orzo pasta
4 cups low-sodium chicken broth
1 cup water
1 (28-ounce) can diced tomatoes, drained
1 cup frozen peas
1 cup feta cheese, crumbled
Lemon wedges for serving

Steps:

  • Preheat the oven to 400 degrees F. Pat the shrimp dry with a few paper towels and lightly season with salt and pepper. Set aside while preparing the rest of the ingredients. Lightly grease a 9X13-inch baking pan with cooking spray and also set aside.
  • In a 4- or 5-quart pot, combine the onion, oil, oregano and 1/2 teaspoon salt over medium-low heat. Cover the pot and cook, stirring occasionally, until the onions have started to turn translucent, 7-8 minutes. Check often so the mixture doesn't burn. Stir in the garlic and cook for about 30 seconds.
  • Stir in the orzo, increase the heat to medium, and cook, stirring often, until the orzo is coated with the mixture and is lightly browned, 3-4 minutes.
  • Stir in the broth and water and cook, stirring every once in a while, until the orzo is slightly tender but still has some firmness (it will continue to cook in the oven), about 10-12 minutes. Stir in the tomatoes, peas and shrimp.
  • Pour the mixture into the prepared pan. Sprinkle the feta cheese evenly over the top. Bake the casserole until the shrimp are cooked through and the cheese is lightly browned, 18-20 minutes.
  • Serve with lemon wedges.

The universal appeal of shrimp scampi, frankly, isn't the shrimp but the pan sauce: garlicky butter lightened with white wine and bursts of lemon, parsley and red-pepper flakes. Scampi is often tossed with pasta or served with crusty bread, but this version instead uses quick-cooking orzo. It simmers directly in the pan sauce, imparting a starchy gloss - and soaking up the garlicky scampi flavors. Toss the shrimp with some garlic, lemon zest and red-pepper flakes to marinate while the pasta gets a head start on the stove, then simply toss the shrimp on top of the orzo to steam. It all comes together in a flash, and feels effortless. Pair this dish with Caesar salad, steamed broccoli or arugula, or bask in its simple comfort, straight from a spoon.

3 tablespoons extra-virgin olive oil

1 cup orzo
1/3 cup dry white wine
2 cups boiling water, seafood stock or chicken stock

Steps:

  • In a medium bowl, stir together shrimp, 1 tablespoon olive oil, lemon zest, red-pepper flakes, 1/2 teaspoon salt, 1/4 teaspoon pepper and half the garlic. Set aside to marinate. (This step can be done up to 1 hour in advance.)
  • Add butter, remaining olive oil and remaining garlic to a medium skillet set over medium heat. When the butter starts to bubble, add the orzo and 1/2 teaspoon salt and cook, stirring often, until the orzo is toasted, about 2 minutes, adjusting the heat as necessary to prevent the garlic from burning. Carefully add the wine - it will bubble - and stir until absorbed, about 1 minute. Stir in water, reduce heat to low, cover, and cook until orzo is al dente, about 12 minutes.
  • Add the shrimp in a snug, even layer on top of the orzo, cover, and cook until all the shrimp is pink and cooked through, 2 to 4 minutes. Remove from heat and let sit, covered, 2 minutes.
  • Sprinkle with parsley and lemon juice, season with salt and pepper, and serve immediately.

There are so many shapes of pasta out there. One of my favorites is orzo: rice-shaped pasta. I do not see it used as often as its more popular relatives like spaghetti, penne, linguine et al, which is a shame. I love the fact that orzo can be treated like rice and used to make tomato-based (jollof) or stir-fried dishes. It can be creamy like a risotto or made like rice and served with a stew or sauce. Here I use it to make a cold salad with shrimp and sweet cherry tomatoes. Use a lot of garden-fresh herbs to elevate this salad and feel free to add more vegetables if you want.

12 large shrimp - peeled, deveined, and tails left on
1 tablespoon all-purpose seasoning blend
½ cup uncooked orzo pasta

  • Pour orzo into the seasoned water and bring to a boil. Cook, stirring occasionally until tender yet firm to the bite, about 10 minutes. Drain and add to the bowl with shrimp. Store in the refrigerator to cool.
  • Combine mayonnaise, dill, parsley, basil, mustard, lemon juice, salt, and white pepper together in a bowl. Mix well. Taste and adjust if needed.
  • Remove shrimp and orzo from the refrigerator. Add cherry tomatoes and dressing; stir well. Taste and adjust seasonings if necessary. Refrigerate for at least 2 hours before serving.

All sorts of ingredients- sun-dried tomatoes, olives, peas, or corn -can be added to this baked pasta for extra flavor and color. Serve this side with a seared steak for a Mediterranean version of surf and turf.

5 tablespoons olive oil, more for the dish
1 lb shrimp, peeled and deveined (26 to 30 per lb.)
kosher salt & freshly ground black pepper
1 large garlic clove, minced
5 ounces Baby Spinach
1 lb orzo pasta
6 ounces feta, crumbled (about 1-1/2 cups)
2 teaspoons chopped fresh thyme
1 finely grated lemon, zest of
3/4 cup panko breadcrumbs

Steps:

  • Position a rack in the center of the oven and heat the oven to 425°F. Bring a large pot of well-salted water to a boil. Lightly coat a 2-quart baking dish with oil.
  • Heat 2 Tbs. oil in a 12-inch skillet over medium-high heat until shimmering. Add the shrimp, sprinkle with 1/2 teaspoons each salt and pepper, and cook, stirring, until the shrimp start to lose their raw color (but don't cook through), about 2 minutes. Add the garlic and cook, stirring, for 30 seconds. Stir in the spinach and cook, tossing, until it starts to wilt, about 1 minute. Remove from the heat.
  • Add the pasta to the boiling water and cook according to the package instructions until al dente. Drain well and toss with the shrimp mixture, feta, 2 Tbs. oil, half the thyme, and lemon zest. Transfer to the prepared baking dish. In a small bowl, toss the breadcrumbs with the remaining Tbs. oil, the remaining teaspoons thyme, and 1/4 teaspoons salt. Sprinkle on top of the pasta.
  • Bake the pasta until the breadcrumbs brown and the pasta heats through, about 20 minutes (cover with foil if the top browns too quickly). Let cool for a couple of minutes and then serve. Great with a side salad.

ONE-POT CHERMOULA SHRIMP AND ORZO

Traditionally used to season seafood and vegetables, chermoula is a Moroccan marinade made of herbs and spices like cilantro, parsley, paprika and cumin. In this one-pot recipe, the orzo cooks in a combination of chermoula and stock, so the orzo is seasoned all the way through. In the last few minutes of cooking, just stir the shrimp into the orzo to cook, and you have a quick and easy, yet exciting, dinner. Feel free to use a protein of your choice instead of shrimp, but adjust cook times accordingly. Also, consider making a big batch of chermoula and keep it in the fridge to use as a marinade, a dressing on salads or a condiment for sandwiches.

6 tablespoons olive oil
1 cup crumbled feta cheese

1 large onion, chopped
2 garlic cloves, finely chopped
1 teaspoon salt, divided
1/2 teaspoon pepper, divided
1/2 teaspoon dried oregano leaves
1/4 teaspoon crushed red pepper flakes
1 (28 ounce) can fire roasted diced tomatoes, undrained (preferably Muir Glen or RedStar)
1/2 cup dry white wine
1 1/4 cups uncooked orzo pasta (cooked and drained as directed on package)
1 1/2 lbs uncooked deveined peeled large shrimp, tail shells removed (25-30 count)
2 tablespoons lemon juice
6 ounces feta cheese, crumbled
2 tablespoons flat leaf parsley, finely chopped

Steps:

  • Heat oven to 400°F. Spray 13x9-inch (3-quart) baking dish with vegetable cooking spray.
  • In 12-inch skillet, heat 4 tablespoons of the oil over medium heat. Add onion; cook and stir about 5 minutes or until softened. Add garlic, 1/2 teaspoon of the salt, 1/4 teaspoon of the pepper, the oregano and pepper flakes; cook 2 minutes. Add tomatoes and wine; cook 3 minutes. Remove from heat. Add cooked orzo; stir gently to combine. Pour mixture into prepared baking dish.
  • In medium bowl, mix shrimp and remaining 2 tablespoons oil, the lemon juice, remaining 1/2 teaspoon salt and 1/4 teaspoon pepper. Toss to coat.
  • Place shrimp on top of pasta in baking dish. Scatter feta cheese on top. Bake 25 to 30 minutes or until heated through and shrimp is pink and opaque. Garnish with parsley.

A nice alternative to the traditional risotto, and much easier too! It was so easy to make with any add-in's you have on hand.

1 cup orzo pasta
1 1/4 cups low sodium chicken broth
1 1/4 cups water
1 tablespoon butter
3 garlic cloves, minced (or to your liking)
1 cup frozen chopped spinach, thawed and drained
1 tomatoes, cored and seeded
2 tablespoons fresh basil, chopped
1/2 cup mozzarella cheese, shredded
1 ounce fresh parmesan cheese, grated
12 large shrimp
1/2 tablespoon creole seasoning (optional)
salt and pepper
1 dash red pepper (optional)

Steps:

  • Melt butter in a large skillet.
  • Add garlic and sauté for 2 minutes.
  • Add orzo and sauté for 3 minutes, stirring occasionally.
  • Add chicken broth and water, bring to a boil.
  • Once at a boil reduce heat to a simmer uncovered.
  • Meanwhile core, seed and dice the tomatoes and thaw and strain the spinach.
  • Once the liquid in the orzo begins to absorb (about 5 minutes) add the tomatoes and stir.
  • Let this simmer for another 5 minutes then add the spinach and stir.
  • Cook until the liquid is fully absorbed (about another 15 minutes).
  • In a separate pan sauté the shrimp and sprinkle with creole seasoning (optional, you can use whatever spice you like) until cooked.
  • Add the cheeses and fresh basil, red pepper (optional) to the orzo and stir, then add in the shrimp and serve!
