2 pounds Yukon gold potatoes (about 5 cups), diced unpeeled
1/2 cup low-fat buttermilk
1/2 cup skim milk
4 tablespoons grated Parmesan
Salt
1 tablespoon unsalted butter

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil, reduce heat and cook until tender, about 10 minutes.
  • While potatoes are cooking place buttermilk and milk into a small saucepan and cook over a very low heat until just warm. Be careful not to boil or milk will curdle.
  • Drain the potatoes, add the warmed milk and mash together to desired consistency. Stir in cheese and salt. Top with the butter and let it melt.

4 lbs yellow potatoes or russet potatoes, (peeled and cut into 1 1/2-inch pieces)
1/2 cup unsalted butter, (cut into 4 pieces)
2 garlic cloves, (minced (2 tsp))
1 cup whole milk, (then more as desired)
1 cup (2.6 oz) freshly grated parmesan cheese
1 1/2 cups (6 oz) freshly grated mozzarella cheese
Salt
2 1/2 Tbsp chopped fresh parsley ((optional))

Steps:

  • Preheat oven to 400 degrees. Grease a 13 by 9-inch baking dish.
  • Place potatoes in a pot and cover with water until potatoes are covered by an inch or two.
  • Bring potatoes to a boil over medium-high heat, then reduce heat to medium-low and simmer until very tender when pierced with a fork, about 15 - 25 minutes.
  • Meanwhile melt butter over medium heat. Add garlic and saute 30 - 60 seconds to remove harsh bite, set aside.
  • Drain potatoes, return to pot and mash well or pass through a potato ricer or food mill.
  • Add butter mixture to potatoes along with, milk, mozzarella, 3/4 cup parmesan, and 2 Tbsp parsley. Stir and thin with a little more milk if desired and season with salt to taste.
  • Pour mixture into prepared baking dish, spread into an even layer. Sprinkle remaining 1/4 cup parmesan over the top.
  • Bake in preheated oven 20 minutes, for better browning on top move closer to broiler and broil briefly (about 2 - 3 minutes.) during last few minutes of cooking.
  • Garnish with 1/2 Tbsp parsley and serve warm.

Steps:

  • Preheat the oven to 400 degrees F. Coat a 13 by 9 by 2-inch baking dish with 1 tablespoon of butter and set aside.
  • Cook the potatoes in a large pot of boiling salted water until they are very tender, about 15 minutes. Drain; return the potatoes to the same pot and mash well. Mix in the milk and melted butter. 1 cup coarsely chopped onions
1 cup milk
2 tablespoons butter
Freshly ground white pepper to taste
1/8 teaspoon freshly grated nutmeg
2 tablespoons grated Parmesan cheese

Steps:

  • Peel the potatoes and rinse well. Cut the potatoes lengthwise in half. Cut each half into 4 pieces. There should be about 4 cups.
  • Put the potatoes in a saucepan with water to cover. Add salt and the onions and bring to a boil. Simmer 12 to 15 minutes or until the potatoes are tender. Drain. Put the potatoes through a food mill or potato ricer and place in a saucepan.
  • Preheat the broiler.
  • Heat the milk in a saucepan.
  • Add the butter to the potatoes and stir with a wooden spoon until the butter is melted. Add the hot milk gradually, stirring with a wooden spoon. Add salt, pepper and the nutmeg. Blend well.
  • Spoon the potatoes into an oven-proof serving dish (an oval dish measuring 1 1/2 by 6 1/2 by 9 1/2 inches is suitable). Smooth the top of the potatoes with a spatula.
  • Sprinkle with the cheese and place under the broiler until nicely browned.

A food mill or old-fashioned food ricer yields the best texture, but you can also mash the potatoes in any way you are accustomed. I like to use Idaho potatoes because they are less moist than many other types.

4 large Idaho potatoes, about 1 1/2 pounds
4 garlic cloves, peeled
Salt to taste
1 cup milk
2 tablespoons butter
1/2 teaspoon nutmeg, freshly grated
Freshly ground black pepper to taste
3 tablespoons grated Parmesan or other cheese

Steps:

  • Peel potatoes and rinse well.
  • Place potatoes and garlic in a saucepan with water to cover. Add salt and bring to a boil. Simmer 15 to 20 minutes or until potatoes are tender. Drain and mash and place in a saucepan.
  • Preheat broiler.
  • Heat milk in a saucepan.

2 tablespoons (1/4 stick) butter
1 generous teaspoon minced fresh rosemary or 1/2 teaspoon dried
6 tablespoons freshly grated Parmesan cheese

Steps:

  • Preheat oven to 350°F. Place garlic in small ovenproof cup or ramekin. Drizzle 2 tablespoons olive oil over. Bake until garlic is very soft, about 25 minutes. Cool; peel garlic, reserving oil in cup.
  • Brush 8x8x2-inch glass baking dish with 1/2 tablespoon olive oil. Cook all potatoes in large pot of boiling salted water until tender, about 25 minutes. Drain, reserving 1 cup cooking liquid. Return all potatoes to same pot.
  • Add milk, butter, rosemary, roasted garlic and reserved oil to potatoes. Mash until smooth and fluffy, adding enough reserved cooking liquid to thin to desired consistency. Mix in 3 tablespoons cheese. Season with salt and pepper. Spoon potatoes into prepared dish. Sprinkle 3 tablespoons cheese over; drizzle with 1 tablespoon oil. (Can be made 2 hours ahead.
