- Preheat oven to 425°. Place salmon fillets in a greased 13x9-in. baking dish. In a small bowl, combine brown sugar, syrup, soy sauce, mustard and pepper. - Position rack in upper third of oven; preheat to 425°F. Whisk maple syrup, lime juice, soy sauce, cayenne and garlic powder together in a small bowl.
- Place a large sheet of foil on a large rimmed baking sheet. Place salmon fillets, skin-side down, in the middle of the foil. Pat the salmon dry with paper towels. Brush or spoon half of the maple mixture (about 1/4 cup) evenly over the salmon; set aside the remaining maple mixture. Bring the edges of the foil together over the salmon and crimp tightly to contain the maple mixture in the foil. Bake until the salmon just starts to turn opaque, 12 to 15 minutes. Remove from oven; open the top of the foil to expose the salmon, but keep the foil edges upright to contain the maple mixture. Pour the reserved remaining maple mixture over the salmon. Return the pan to the oven and turn the broiler to high. Broil until the salmon starts to brown in places, about 5 minutes.
- Remove the pan from the oven. Spoon some of the maple mixture in the foil over the salmon. Let rest for 5 minutes (the maple mixture should thicken slightly). Transfer the salmon to 4 plates and spoon or pour the maple mixture over the top. Sprinkle evenly with chives and salt. Serve with lime wedges, if desired.

- Preheat the oven to 425 degrees F. Line a baking sheet with foil. Mix the brown sugar, paprika, garlic powder, cayenne pepper, 1 teaspoon kosher salt and a generous amount of freshly ground black pepper in a small bowl. Mix the panko with the parsley, butter, 1/4 teaspoon kosher salt and a few grinds of black pepper in another small bowl.
- Place the salmon skin-side down on the prepared baking sheet and spread the surface with the Dijon. Press the brown sugar mixture all over the salmon then top with the breadcrumb mixture. Crimp all four sides of the foil to create a border around the salmon, this will help collect the juices so they don't spread and burn. Bake until the breadcrumbs are golden brown, and the salmon is firm and flakes easily when pressed, 15 to 18 minutes. Cut into four equal portions for serving.

Delicious maple-glazed salmon is a little on the sweet side, but not too much. The whole house smells wonderful when this is cooking; it's a great warm winter meal! - Remove salmon from the refrigerator. Heat oven to 325 degrees.
- Bundle the cilantro sprigs by their stems and hold them tightly, then slice the stems crosswise until you get to the leaves. Reserve leaves for garnish. Transfer sliced stems to a small bowl and stir in the maple syrup, mustard and mayonnaise until well mixed.
- Season the salmon all over with salt and pepper and place in a baking dish, skin-side down if there is skin. Slather the maple sauce all over the top.
- Bake until a paring knife slides into the center with only a little resistance, 15 to 20 minutes. When you remove the knife and touch the blade to your upper lip, it should feel very warm but not hot. The salmon will continue to heat through out of the oven while in the baking dish. Top with the reserved cilantro leaves, and squeeze lemon wedges all over just before serving.
BAKED MAPLE-GLAZED SALMON WITH WILTED SPINACH
We don't have salmon often, but this looked so easy & yum that it inspired us to get down to the fishmongers. We used 2 salmon fillets but kept all the other measurements the same & added a handful of sugar-snap peas with the baby spinach. It's simple enough for a weeknight meal and impressive enough to serve guests. I found this recipe (originally printed in delicious magazine, in Australia - July 2007) on taste.com.au along with some helpful reviews: This is a sweet dish, so people suggested the addition of some lime juice. I liked the idea, and added some, but I'll leave it up to you :)

- Preheat the oven to 200°C (400°F).
- Line a baking tray with baking paper.
- Place orange juice, maple syrup, ginger and garlic in a small pan over medium heat, and bring to the boil. Reduce the heat to medium-low and simmer for 8 minutes or until slightly reduced and syrupy.

- Marinate the 2 salmon fillets in mixture of 1/3 cup maple syrup and 1/4 cup of soy sauce for at least 2 hours in the refrigerator.

- If you use dry rind instead of fresh you will need to rehydrate it with orange just for the best results.
- Wash salmon and pat dry.
- Combine ginger, basil, pepper, rind and shallots.
- Lightly brush salmon with Grand Marnier. Coat salmon on both sides with herb mixture and refrigerate overnight (at least 4 hours).
- Preheat oven to 350°F.
- Dissolve cornstarch in enough hot water to make a smooth paste. Slowly whisk in liquid glaze ingredient. Whisk until smooth.
- Place salmon in shallow baking dishes. Spoon glaze over fish.
- Cook until done (about 20 minutes for 1 inch fillets or 25 for 2 inch fillets. )Baste the fish once or twice during cooking It should flake easily.
- Decorate with orange slices. Shown in the picture here with a lemon pig.
- To make a lemon pig - choose the snout end of the pig and decide which will be the bottom. Cut the bottom off so the pig will sit flat. At the snout end cut two flaps for the ears. Pull them out a little so the will stand out but not too much or it will break. Use cloves for the eyes.
