1 cup white sugar
1 ½ tablespoons ground cinnamon
10 large flour tortillas, cut into quarters
¼ cup melted butter, or as needed
1 cup milk
1 (8 ounce) package cream cheese, softened
2 (3 ounce) packages instant vanilla pudding mix
1 (16 ounce) container frozen whipped topping, thawed
2 tablespoons chocolate syrup, or as needed
40 maraschino cherries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray 40 muffin cups with cooking spray.
  • Combine sugar and cinnamon together in a small bowl.
  • Brush both sides of flour tortilla pieces with melted butter; sprinkle each with cinnamon-sugar mixture. Gently fit each tortilla piece into a prepared muffin cup, shaping the tortilla to make a shell.
  • Bake in the preheated oven until tortilla shells are golden brown, 8 to 10 minutes.
  • Beat milk, cream cheese, and pudding mix in a bowl using an electric mixer until smooth; fold in whipped topping. Fill each tortilla shell with about 1 tablespoon cream cheese mixture. Drizzle with chocolate syrup and top each with a maraschino cherry.

Baked Cinnamon Sugar Tortilla Chips are easy 4 ingredient homemade chips baked in the oven with butter, cinnamon and sugar. This sweet treat is perfect for dessert nachos, dipping in fruit salsa or snacking on alone!

1/2 c. butter
8 10 inch flour tortillas
1/2 c. granulated sugar
2 Tbsp. ground cinnamon

Steps:

  • Preheat oven to 400°.
  • Line 2 cookie sheets with parchment or tin foil and top with cooling racks.
  • In a large bowl that has a lid, microwave the butter for 1-2 minutes, or until completely melted.
  • Cut the stack of tortillas into 12 wedges each. Add the tortilla wedges to the bowl of melted butter. Place the lid firmly on the bowl and shake vigorously until the tortillas are evenly coated.
  • In a small bowl combine the cinnamon and sugar. Toss the mixture over the buttered tortillas. Place the lid back on the bowl and shake well. Separate any tortillas stuck together and re-shake to ensure they are all coated well.
  • Arrange the tortillas over the cooling racks and bake at 400° for 8-12 minutes until lightly golden. Some of the chips may still appear soft, but upon cooling they will crisp up.
  • Allow to cool to room temperature and store in an airtight container for up to 2 days.

2 Flour or Whole Wheat Tortillas
2 TBSP butter (melted)
2 TBSP Sugar
1 TBSP Ground Cinnamon

Steps:

  • Heat a large skillet to medium low.
  • In a small bowl mix together the sugar and cinnamon, mix.
  • On one side of the tortilla brush with the melted butter and sprinkle with sugar mixture.
  • Place the buttery side down in skillet and heat for about 30 seconds.
  • While the bottom side is browning, brush top side with butter and sprinkle with sugar mixture.
  • Flip the tortilla over and cook the other side for another 30 seconds, until golden brown.
  • Repeat process for your second tortilla.

4 to 6 ripe mangoes (about 4 pounds total), peeled
2 tablespoons butter, melted
1/3 cup packed dark-brown sugar
4 flour tortillas (6-inch)
3 tablespoons butter, melted
3 tablespoons sugar
1 teaspoon ground cinnamon
Salt
Vanilla ice cream, for serving (optional)

Steps:

  • Bake mangoes: Preheat oven to 400 degrees. Slice mangoes into 4 pieces; cut each piece into 1/2-inch-thick slices. Pour butter into a 9-by-13-inch glass or ceramic baking dish. Add mango slices and sprinkle with brown sugar; toss to coat. Arrange slices in one layer. Bake, tossing once halfway through, until mangoes are tender and juice is bubbling, 45 to 50 minutes. While mangoes are baking, prepare tortillas.
  • Prepare tortillas: Stack tortillas and cut in half. In a large bowl, toss tortilla halves with melted butter until well coated. In a small bowl, combine sugar, cinnamon, and 1/4 teaspoon salt. Place tortillas on a large (or two small) rimmed baking sheet; sprinkle both sides with cinnamon-sugar mixture, and arrange in a single layer. 12 (8 inch) flour tortillas
1/4 cup sugar
1/2 teaspoon cinnamon
2 tablespoons butter or 2 tablespoons margarine, melted
1 cup strawberry, hulled and finely diced
1 ripe mango, peeled and finely diced (peaches can be substituted for mango)
1 kiwi, peeled and finely diced
1 teaspoon fresh lime zest
1 tablespoon fresh lime juice
1/4 cup sliced almonds, coarsely chopped
1 (6 ounce) jar strawberry ice cream topping
3 cups vanilla ice cream

Steps:

  • To make shells:Preheat oven to 350.Trim Tortillas to make triangles and cute a 1-inch slit in each side of triangle. Combine sugar and cinnamon, mix well.Brush tortillas with melted butter, sprinkle with cinnamon-sugar mixture.Press into Muffin Pan.Bake 18-20 minutes. If you don't want to go to the trouble of making "bowls" just make triangles or strips to sprinkle on top of your ice cream.
  • To make Mango Salsa:Combine strawberries, mango, kiwi, lime zest, and lime juice and stir gently.
