St. Patrick's Day is an appropriate time to prepare a Limerick Ham with a splash of Jameson Whiskey on the side and give thanks for all that you have, remembering to give to those that have not, as the war against world hunger and famine remains to be waged every day. This is what will be served on our family dinner table this St. Patrick's Day, and I would feel most honoured if you would join me in giving thanks and in tucking into a delicious fat Limerick Ham to celebrate the occasion.

1 ham (3-5 lbs.)
hard alcoholic cider, to cover
1/2 cup brown sugar
1 tablespoon mustard
20 whole cloves

Steps:

  • For an Alcohol-free version, substitute a 50/50 mixture of apple juice and water for the cider.
  • Cover the ham with cold water and bring slowly to the boil.
  • Drain the water and replace it with the cider and return the ham to just before boiling.
  • Reduce the heat and keep the liquid barely simmering for 20 minutes per pound of ham.
  • (A 5-lb. ham is simmered for 1½ hours.) Remove the kettle with the ham from heat and allow to stand in the liquid for 30 minutes.
  • Remove the ham from the liquid, skin it and score the fat with a sharp knife in a criss-cross, or diamond pattern.
  • Stud the ham with whole cloves at the points where the cross-cut pattern intersect.
  • Mix the brown sugar and mustard together and rub well into the surface of the ham.
  • Bake in a pre-heated oven for an additional 10 minutes per pound at 400 degrees Fahrenheit.
  • (A 5-lb. ham should be baked 50 minutes.) Serve warm with plain boiled potatoes and brussels sprouts.
  • Oh, and a shot of Jameson Irish Whiskey (optional).

1 (12 fluid ounce) can or bottle beer
2 tablespoons brown sugar
2 tablespoons Dijon mustard
1 (8 pound) bone-in smoked ham

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Whisk beer, brown sugar, and Dijon mustard together in a bowl.
  • Place ham cut side up in a large roasting pan; pour beer mixture over ham.
  • Bake in the preheated oven until ham begins to brown, about 15 minutes, basting 4 to 5 times.
  • Reduce oven temperature to 350 degrees F (175 degrees C). Cover roasting pan with lid or aluminum foil.
  • Continue to bake until ham is heated through, about 90 minutes more, basting frequently.
  • Remove lid and bake until ham is well browned, about 15 minutes more. Allow ham to rest for 10 to 15 minutes before carving.

My Mom prepared ham using this recipe for holidays or special occasions, and it always made the house smell wonderful. I remember watching her 'crack' the blanket off the ham, which both flavored it and kept it extremely moist. I've eaten it many times, but haven't made it myself yet.

2 cups flour
1/2 cup brown sugar
1 -3 teaspoon ground cloves (to taste)
1 tablespoon cinnamon
1 tablespoon ground mustard
1/2 teaspoon fresh ground black pepper
cider or apple juice
5 -6 lbs boneless ham

Steps:

  • Preheat oven to 350F; Make a spice dough, combining the flour, sugar, and spices in a large mixing bowl; add enough water or cider to make a stiff dough; roll until it is 1/4" thick and forms a 10x12" rectangle.
  • Place the ham, fat side up, in a foil-lined open roasting pan; cover top and sides of ham with "blanket" of dough; bake at 350F for 3 hours (tent with foil if crust becomes too brown).
  • Remove ham; discard "blanket" crust; let rest for 15 minutes. Slice ham; serve warm or cold.

This ham recipe was given to my mother by a mom & pop restaraunt owner. The owner did all of her own cooking and had a little restaraunt right on the corner of our street. Everyone raved about her ham. My mother helped her out a lot so she gave mom the recipe. Everyone raves about this ham at Christmas and Easter! The secret is to slice it soon after it is done and let the slices sit in the juice in the fridge. Then when you are ready to serve, reheat at 350 in the oven right in the roaster with the juice. Leftovers are great on a soft roll with butter. Prep and cook time is approximate.

10 lbs ham (I use fully cooked boneless)
1 (32 ounce) can pineapple juice
2 teaspoons ground cloves
2 teaspoons cinnamon
2 -3 cups brown sugar (to taste, I use about half a bag)

Steps:

  • Place all except ham in a roaster pan, stirring well till brown sugar is dissolved.
  • Trim outer skin from ham, make a slit with knife on bottom, sides and top of ham.
  • Place ham in juice mixture and bake covered at 350 for at least a couple of hours.
  • Baste well with baster every 30 minutes until done.
  • Serving size 4 oz.
