Baked Jambalaya Risotto with Andouille & Kale image

This baked Jambalaya recipe combines the traditional flavor of Andouille sausage alongside kale for a new twist on a Lousiana favorite.

1 cup Carolina® Arborio Rice
2 Tbsp olive oil
1 cup sliced Andouille sausage
2 cups diced red peppers
2 shallots, diced
2 Tbsp Cajun seasoning
1 tsp pepper, divided
1/2 tsp salt
1/2 cup dry sherry
4 cups reduced-sodium chicken broth, divided
4 cups chopped kale leaves
1 tsp lemon zest
1/2 cup shaved Pecorino Romano cheese, divided

Steps:

  • This autumn-inspired risotto made with Carolina® Arborio Rice is started on the stovetop, then it bakes in the oven for easy preparation. Step 1
  • Preheat oven to 350°F. Heat oil in large ovenproof skillet set over medium heat; cook sausage for 3 to 5 minutes or until crispy around edges. Step 2
  • Stir in red peppers, shallots, Cajun seasoning, half of the pepper, and salt. Cook for 3 to 5 minutes or until vegetables are slightly softened. Step 3
  • Stir in arborio rice; cook for about 2 minutes or until well coated. Stir in sherry. Bring to boil; stir in 3 cups broth. Cover and transfer to oven. Step 4
  • Bake for about 20 minutes or until most of the liquid is absorbed. Step 5
  • Stir in kale, lemon zest and remaining broth; stir vigorously for 1 minute. Cover and return to oven; cook for about 5 minutes or until rice is tender and kale is wilted. Step 6
  • Stir in half of the cheese. Divide risotto among 4 bowls; garnish with remaining cheese and sprinkle with remaining pepper.

I love risotto, but I don't always love the time and stirring it takes to get the creamy goodness. I found a slow-cooker risotto recipe and thought it was too good to be true. I decided to adapt a jambalaya recipe for this dish. -Angela Westra, Cambridge, Massachusetts

2-1/2 cups chicken broth
1 can (14-1/2 ounces) diced tomatoes, undrained
1-1/2 cups tomato sauce
1-1/4 cups uncooked arborio rice
3 tablespoons finely chopped onion
1 tablespoon dried parsley flakes
1 tablespoon olive oil
1/2 teaspoon garlic powder
1/2 teaspoon dried thyme
1/2 teaspoon pepper
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
1 bay leaf
1/2 pound uncooked shrimp (31-40 per pound), peeled and deveined and tails removed
1/2 pound fully cooked andouille sausage links, sliced
2/3 cup shredded Parmesan cheese, optional

Steps:

  • In a 4- or 5-qt. slow cooker, combine the first 13 ingredients. Cook, covered, on high for 1-3/4 hours. Stir in shrimp, sausage and, if desired, cheese. Cook until shrimp turn pink and rice is tender, 10-15 minutes longer. Remove bay leaf.

1/2 cup butter
1 large onion, diced
1 large green bell pepper, chopped
4 stalks celery, chopped
4 garlic cloves, minced
1 (6 ounce) can tomato paste
3 bay leaves
3 tablespoons creole seasoning
4 teaspoons Worcestershire sauce
2 (28 ounce) cans whole canned tomatoes
7 cups chicken stock
3 cups chopped cooked ham
3 cups cooked andouille sausages, diced
3 cups cooked chicken, cut into bite-sized pieces
3 cups frozen cooked shrimp
4 cups uncooked long-grain white rice

Steps:

  • Preheat oven to 350ºF (175ºC).
  • Melt butter in large stock pot. Sauté onion, green pepper, celery and garlic until tender, being careful not to burn the garlic. Add tomato paste and cook to brown slightly, stirring constantly. Stir in bay leaves, Creole seasoning blend and Worcestershire sauce. Pour into a large roasting pan. Squeeze tomatoes to break up into pieces, and add a mixture in pan. Stir in juice from tomatoes, chicken stock, ham, sausage, chicken, shrimp and rice. Mix well. Cover tightly with aluminum foil.
  • Bake in preheated oven for 1 1/2 hours, stirring hours, stirring once halfway through baking time. Remove bay leaves before serving.
