JELLY ROLL
Steps:
- Preheat the oven to 375 degrees F (190 degrees C). Line a 10x15 inch jellyroll pan with parchment paper.
- Sift together the flour, baking powder and salt. Set aside. In a large bowl, beat eggs and sugar with an electric mixer until thick and pale, about 5 minutes. Stir in the vanilla and milk. Stir in the dry ingredients gradually. The batter will be thin. Pour into the prepared pan.
- Bake for 8 to 10 minutes in the preheated oven, until the center springs back when pressed lightly. Don't over bake, or it may crack.
- Generously dust a clean dish towel with confectioners' sugar. Turn the cake out onto the towel, and peel off the parchment paper. Gently roll up the cake using the towel, and let cool for about 10 minutes.
- Unroll the cake, and spread an even coating of jam onto the top. Roll the cake back up into a tight spiral, and remove the towel. Dust with confectioners' sugar before serving.

BAKED JAM ROLLS
This recipe came from a recipe booklet called "Favourite British Recipes" that I got from a very sweet Recipezaar friend. The brief introduction for this recipe states that "this baked suet pudding has a nice crisp, brown exterior with a soft jam-filled centre. Mincemeat, marmalade, or lemon curd are alternative fillings."

Steps:
- Preheat oven to 400° or at mark 6. Grease a large ovenproof baking dish.
- To make the suet pastry, mix the flour and suet together in a bowl, and mix in just sufficient cold water to make a firm (but not sticky) dough.
- Roll out the pastry to 1/4-inch thickness on a lightly floured surface to form a strip 8 to 10 inches long. Spread a good layer of jam (warmed, if necessary) over the pastry to within 1/2 to 1 inch of the edges. Moisten the edges of the pastry, roll up carefully from a long side. Pinch the top edge to form a seal. Seal the two ends well too, to prevent jam filling from spilling out during baking.
- Place the jam roll in the baking dish and bake at 400° for about 30 minutes or until golden brown.
- Serve hot or cold. To serve, cut in slices, and serve with custard.
- Alternatively, the mixture can be rolled up in a floured pudding cloth and steamed for about 2 1/2 to 3 hours to make Jam Roly Poly.
JELLY ROLL
A light dessert and soooo easy! * I have also tried sifting confectionery sugar on a dry tea towel( not terry cloth) and turning the cake out on that. (Remove waxed paper carefully. Then try to roll the cake (on the long side) with the cloth as a buffer between each turn/layer. Let it rest for a minute or two then unroll and and let rest for a bit before you spread with jelly/jam . Re-roll. This seems to help keep the roll from tearing so easily.

NIGELLA'S JAM ROLY-POLY
Nigella's jam roly-poly pudding is complete comfort food. It's baked to make cooking a little less challenging, leaving you with a slightly crisp edge rather than complete steamy stodge.

Steps:
- Combine the flour, sugar, yeast and salt in the bowl of a stand mixer and whisk together. Add the water and yogurt. Using a rubber spatula, give it a mix to just combine. Place the bowl on the stand mixer and mix with the dough hook on medium speed, scraping down the sides of the bowl and hook as necessary. The dough will be soft and smooth, but sticky, and will pull away from the sides of the bowl when it has mixed long enough, 12 to 15 minutes. Transfer to a large, oiled bowl, cover with plastic, and allow to rise at room temperature until doubled in size, 1 1/2 to 2 hours.
- Grease a 9-by-13-inch baking dish with the butter and dust all over with the cornmeal, tapping out any excess.
- On a cornmeal-dusted surface, roll out the dough to a rectangle that is roughly 20-by-10-inches and just under 1/2-inch-thick. With a small, offset spatula, spread 1 side with an even layer of strawberry jam, leaving a 1/2-inch border at the top. Repeat with the blueberry jam on the other side. Roll up into a tight log and pinch the edges to seal. With a sharp knife, slice into 12 even rolls. Place alternating rolls in the prepared baking dish and cover with plastic wrap. Refrigerate overnight (anywhere from 8 to 12 hours is fine; try not to exceed 14 to 16 hours) or let rise at room temperature for another until doubled in size, 45 minutes to 1 hour.
- Place an oven rack in the middle position. Preheat the oven to 400 degrees F.
- When ready to bake, remove the rolls from the refrigerator and let sit at room temperature for an hour (unless they proofed at room temperature). Remove the plastic wrap, brush the tops with the egg wash. Bake until the rolls are a deep golden brown and the top feels hollow when you tap on it, start checking at 25 minutes.
- While the rolls are baking, prepare the Glaze (recipe follows).
- Remove the rolls from the oven and cool for 10 minutes. Drizzle over the glaze and serve. These can be stored in an airtight container on the counter for a day or so (reheat in the microwave).
- Combine the powdered sugar, yogurt and salt in a bowl and whisk until smooth.
BAKED JAM ROLLS
This is a favorite British recipe that can be served for breakfast or enjoyed as a sweet snack at teatime. It's nicely crisped and browned, with a soft jam-filled center. Marmalade or lemon curd can also be used for the fillings.

- Preheat oven to 200 degrees, 10 minutes before baking. Grease 25* 30 cm swiss roll pan; line the pan with baking paper, bringing paper 5cm over edges, grease the baking paper.
- Beat egg whites in small bowl with electric mixer until soft peaks form; gradually add sugar, 1 tbsp at a time, beating until dissolved between additions. With motor operating, add egg yolks, one at a time, beating until mixture is pale and thick. Meanwhile sift flour 3 times. Pour hot milk/water down side of the bowl; add triple sifted flour. Working quickly, use plastic spatula to fold milk and flour through egg mixture. Pour mixture into prepared pan, gently spreading mixture evenly into corners.
- Bake cake in the preheated oven for about 8 minutes or until the top of cake feels soft and springy when touched lightly with fingertips. Meanwhile, place a piece of baking paper cut the same size as cake on board; sprinkle evenly with extra sugar. When cooked, immediately turn cake onto sugared paper, quickly peeling away the lining paper. Working rapidly, use serrated knife to cut away crisp edges from all sides of cake.
- Using hands gently roll cake loosely from one of the short sides; unroll, spread evenly with jam. Roll cake again, from same short side, by lifting paper and using it to guide the roll into shape. Either serve jam roll immediately with cream or place onto wire rack to cool.

- Let a child stir the mixture while another (or you) adds the milk, a splash at a time, to combine – you want to make a lovely soft, but not sticky, dough.Flour a surface and show the kids how to roll the dough out to a rectangle that measures approximately 20cm x 30cm and is 1cm thick.
- Trim with a knife to even out, if necessary.Let the kids take over for the fun part: dollop the jam over the dough, spreading evenly to leave a 1cm border from the edges.

- Using an electric mixer, whisk eggwhites until soft peaks form, then gradually add 110gm (½ cup) sugar and whisk until firm peaks form and mixture is stiff and glossy. Add egg yolks one at a time, whisking until just combined.
- Sift flour and ½ tsp salt into a bowl, then repeat twice more. Add golden syrup mixture and sifted flour to egg mixture and, using a large metal spoon, gently fold in until just combined. Spoon mixture into a baking paper-lined 26x32cm Swiss roll tin, gently smooth top, then bake at 180C for 12 minutes or until top springs back when pressed.
- Scatter remaining sugar 1cm from end of a clean tea towel to cover an area the same size as cake tin, then carefully invert cake over sugar and peel away base paper. Using a serrated knife, trim short ends of hot cake, then, using towel as a guide, roll up from a short side and leave to cool, wrapped in the towel.
- Carefully unroll cake, spread with jam leaving a 1cm border, then re-roll and place, seam-side down, on a plate. Serve cake cut into slices. Jam roll will keep in an airtight container for up to 2 days.

- Combine all the dry ingredients together (flour, cake flour, instant dry yeast, sugar, and salt). Add the lukewarm milk, eggs, vanilla extract, vegetable oil and the orange zest. You can knead this by hand, or make it easy on yourself and use your mixer. Mix until the dough is smooth, add more flour as needed. The dough needs to be just a little bit sticky. Place the dough in an oiled bowl and let it rest in a warm place.
- Punch down the dough and roll out onto a slightly floured work surface. Roll it out so that it's a big rectangle about 14 inches (35 cm) by 18 inches (44 cm). It should be about 1/2 inch (1 cm) in thickness. Using a pastry cutter, a pizza cutter, or a knife, cut the dough into 2 3/4 x 2 3/4 inch (7 cm x 7 cm) squares.
- Using your fingers make a small indentation into each square and place about 1 tsp of jam in the center. Carefully fold each square in half and pinch the ends together. The dough should be sticky enough so that it sticks together.
