⅔ cup brown sugar
⅓ cup apricot jam
1 teaspoon dry mustard powder

Brush onto the ham using a pastry or barbeque brush. Reserve any leftover glaze. Enclose the foil around the ham and place on a rimmed baking sheet.
  • Roast for 2 hours in the preheated oven, or if your ham is a different size, figure 14 minutes per pound. Apply the remaining glaze 20 minutes before the ham is done.

Time 2h55m

Yield 8 to 10 servings

Number Of Ingredients 9

One 7- to 8-pound cured smoked ham, bone in
2 cups apricot jam
2 tablespoons unsalted butter, plus more for greasing the foil
2 tablespoons Dijon mustard
2 tablespoons minced fresh sage
1 tablespoon red wine vinegar
1 bay leaf
Pinch of ground cloves
Pinch of cinnamon

Steps:

  • Preheat the oven to 375 degree F.

  • Remove the ham from the oven and tent with a piece of greased foil. Let rest for about 10 minutes before carving.

BAKED GLAZED HAM

Baked glazed ham image

This is a true Christmas centrepiece and an essential for any traditional dinner. Simple and effective, with just five ingredients to a festive favourite

Provided by John Torode

Categories     Dinner, Main course

Time 6h15m

Yield 8 generously with leftovers

Number Of Ingredients 5

1 raw smoked gammon on the bone (about 5-6kg), rind left on
100ml maple syrup
200g apricot jam
300g light brown soft sugar
12 whole cloves

Steps:

  • Heat oven to 180C/160C fan/gas 4. Put the ham on a wire rack or trivet set over a large roasting tin, pour in 480ml warm water and cover tightly with foil. Put the ham in the oven, immediately reduce the heat to 160C/140C fan/gas 3 and cook for 5 hrs.
  • Meanwhile, put the maple syrup, apricot jam and brown sugar in a heavy-based pan and stir in 50ml water. Bring to the boil, then remove from the heat and leave to cool.
  • Take the ham out of the oven. Increase the temperature to 200C/180C fan/gas 6. Open the foil, being careful of the hot steam. Remove the rind from the ham by inserting a sharp knife under it at the opposite end to the knuckle bone, gently lifting it away from the fat (try to keep as much fat on the leg as possible so that it will protect the ham and stop it drying out).
  • Decorate the ham by scoring the fat with a knife to make large diamond shapes, taking the knife from one corner to the other, then making parallel scores 4cm apart. Repeat in the opposite direction. Put a clove in the corner of each diamond. Brush the ham with the sugar mixture, pushing it into the scores with the brush.
  • Return the ham to the oven, placing it back on the trivet over the water. Bake for a further 45 mins until deeply coloured. Serve hot or cold. Will keep in the fridge for up to one week.

Time 1h25m

Yield 15 serving(s)

Number Of Ingredients 9

1 (15 lb) fully cooked bone-in smoked ham (15 lb. average)
35 -40 whole cloves
1 cup apricot nectar
1 cup water
2 teaspoons dried thyme
1/2 cup apricot preserves
1/2 cup Bourbon
1/4 cup Dijon mustard
1/4 cup light brown sugar

Steps:

  • Preheat oven to 425 degrees F.
  • Trim the rind from the ham and pare the fat layer to 1/4-inch thick.
  • Line a roasting pan with aluminum foil (helps with cleanup later).
  • Place a roasting rack in the roasting pan and place the ham on the rack.
  • Cut lines at an angle across the ham about 1/4-inch deep, then turn the ham and repeat with the other side, so that it forms a diamond pattern.
  • Push the pointed ends of the cloves into the intersections of these lines, but do not push it in totally.
  • Mix the apricot nectar with the water and pour over the ham, and then sprinkle with the thyme leaves.
  • Place the ham in the lower third of the preheated oven and bake for 45 minutes (or about 3 minutes per pound), basting with the pan juices every 10-15 minutes.
  • To prepare the glaze, mix the preserves, bourbon, and mustard in a small saucepan and whisk until smooth.
  • Cook over medium heat until the preserves melt, then remove from heat and set aside.
  • When the ham is warmed through (at the 45 minute point), remove it from the oven and increase the oven temp to 450F.
  • Spread all the glaze evenly over the ham, then sprinkle the brown sugar evenly over the top of the glaze.
  • When the oven is heated to 450F, return the ham to the oven, and bake for about 25-30 more minutes or until the ham becomes nicely caramelized from the glaze, but do not let it burn.
  • Remove the ham from the oven and allow it to sit for about 15-20 minutes before carving.

  • Let ham sit covered at room temperature 2 hours (or 1 hr for a 6-7 lb ham) before roasting, then remove packaging.
  • While ham is coming to room temperature, make the sauce. In a small saucepan over medium heat, combine apricot preserves, honey, brown sugar, dijon, and butter. Bring to a simmer and cook 1 minute, whisking constantly then remove from heat. The sauce should be the consistency of loose honey.
  • Heat oven to 325˚F with the oven rack in the lower third of the oven. Line your roasting pan with foil for easier cleanup. Place ham in a roasting pan cut-side down. Brush on 1/3 of the glaze and cover tightly with foil. Bake at 325 for 10-11 minutes per pound (about 2 hours for an 11.5 lb ham). Keep in mind ham is already cooked, and you just want to heat it up to about 110˚F. Use an oven-safe, internal temperature probe to test for doneness.
  • Increase oven to 425˚F. Remove ham from the oven and brush with 1/3 of glaze. Return to oven and bake uncovered 10 minutes.
