APPLE DUMPLINGS
A traditional Pennsylvania Dutch dessert, these apple pastries are spiced with cinnamon and studded with raisins. Martha made this recipe on episode 708 of Martha Bakes.

- Make the pate brisee: Pulse flour, salt, and sugar in a food processor until combined. Add butter and pulse until mixture resembles coarse crumbs with some pea-size pieces remaining. Drizzle with ice water and pulse until mixture holds together when pinched. If dough is too crumbly, add more ice water, 1 tablespoon at a time; do not over-process.
- Divide dough into thirds. Transfer to 3 pieces of plastic wrap; knead once or twice. Form into squares and wrap in plastic. Refrigerate at least 1 hour and up to overnight, or freeze up to 3 months; thaw overnight in refrigerator before using.
- On a lightly floured surface, roll each square of dough into an 8-by-14-inch rectangle. Then cut each square into two 9-inch triangles and some leaves. Use the back of a knife to make the vein markings on the leaves. Keep the pastry chilled and covered with plastic wrap, on parchment-lined baking sheets, until ready to use.
- For the apples: Preheat oven to 350 degrees. Peel apples without removing stems. Working from bottom of each apple, use an apple corer to remove core to within about 3/4 inch from the top. To remove any remaining seeds, use a 1/4 teaspoon. Mix together sugar and cinnamon. Add butter, raisins, zest; stir until thoroughly incorporated. Divide mixture evenly between the cavities of apples. Place in a 13-by-9-inch baking dish along with 3 tablespoons water and bake, basting occasionally with pan juices, until just fork-tender, about 1 hour. Transfer baking dish to wire rack and let cool completely.
- Place an apple onto the center of each pastry triangle. Whisk together egg yolk and cream. Brush edges of pastry with egg wash. Bring edges of pastry together and pinch or press to seal, leaving stems exposed. Garnish dumplings, as desired, with leaves moistened with egg wash to adhere. Return dumplings to parchment-lined baking sheet. Mix together egg yolk and cream. Lightly brush dumplings with egg wash and chill until firm, reserving egg wash.
- Preheat oven to 400 degrees. Brush dumplings again with egg wash, and bake until nicely browned, 25 to 35 minutes. Let cool slightly before serving.

- Preheat oven to 350 degrees F (175 degrees C).
- Core each apple making a large well in the center and arrange apples on a rimmed baking sheet.
- Mix oats, brown sugar, and cinnamon together in a bowl; cut in butter until evenly combined. Spoon 1/4 of the oat mixture into each apple.
- Bake in the preheated oven until apples are tender and filling is bubbling, about 30 minutes.

- Make filling:
- Toss together all filling ingredients.
- Make dough:
- Preheat oven to 425°F.
- Sift together flour, baking powder, salt, and 3 tablespoons granulated sugar into a bowl. Blend in butter and shortening with a pastry blender or your fingertips until mixture resembles coarse meal. Add 1/2 cup milk and stir with a fork just until mixture is moistened.
- Turn out dough onto a floured work surface and gently knead 7 to 8 times, or until a soft dough forms (do not overwork dough, or dumplings will be tough). Roll out dough on a well-floured surface with a floured rolling pin into a rough 16- by 11-inch rectangle (about 3/4 inch thick). Trim to a 15- by 10-inch rectangle. Halve dough lengthwise, then cut crosswise in thirds (to form 6 squares).
- Fill dumplings:
- Divide filling among centers of squares. Bring all 4 corners together over filling and pinch together to seal. Transfer dumplings to a well-buttered 13- by 9- by 2-inch ceramic or glass baking dish and arrange about 1 inch apart. Brush tops with remaining 1/2 tablespoon milk and sprinkle with remaining 1/2 tablespoon granulated sugar.
- Make syrup and bake dumplings:
- Bring cider and brown sugar to a boil, stirring until sugar is dissolved.
- Pour syrup around dumplings, then bake dumplings until golden brown and syrup is bubbling, 20 to 25 minutes. Serve immediately.

Steps:
- Preheat oven to 400°F.
- Using melon baller, core apples,leaving bottoms intact.
- Place in glass pie pan, spacing apart.
- Microwave uncovered at 50 percent power until tender, about 10 minutes.
- Refrigerate 5 minutes to cool.
- Meanwhile, mix brown sugar and cinnamon in a small bowl.
- Transfer 3 tablespoons cinnamon sugar to small saucepan, add raisins and 3 tablespoons heavy cream and stir over low heat until sugar dissolves.
- Combine 3 tablespoons cinnamon sugar and remaining heavy cream to medium bowl and whisk to peaks; cover and refrigerate.
- Roll out each biscuit on floured surface to thin 8-inch round; brush lightly with egg.
- Place apple in center of each round; fill apples with raisin mixture, overfilling slightly.
- Pull 4 sides of dough up to top of apple ( from 3,6,9,12 positions) and twist in center, making apple stem shape.
- Using fingertips, press seams tightly to seal.
- Transfer dumplings to foil-lined baking sheet;brush dumplings with egg, sprinkle with remaining cinnamon sugar.
- Bake dumplings until golden, about 18 minutes.
- Serve warm with cinnamon whipped cream.
