1 10-pound bone-in smoked ham (with water added)
1 1/2 cups packed light brown sugar
1/2 cup clover honey

Steps:

  • Adjust the oven racks to accommodate a large roasting pan. Fit the pan with a shallow roasting rack. Preheat the oven to 350 degrees F.
  • Unwrap the ham and rinse it under cold water. Place it on the rack in the roasting pan. Cover with foil and bake 1 hour 40 minutes. Meanwhile, combine the brown sugar and honey in a saucepan and cook over medium heat until the mixture is smooth and the sugar has dissolved.
  • Pour the brown sugar glaze over the ham and continue roasting1 hour 40 minutes more, basting at least twice with the drippings in the roaster. (To adjust the total roasting time for a smaller or larger ham, calculate 20 minutes per pound.) Check for doneness by inserting a meat thermometer into a meaty spot (not into fat or touching the bone)-it should register 160 degrees F.
  • Let the ham stand 15 minutes before slicing to allow the juices to set. (You can make the ham up to 2 hours ahead; tent with foil and serve at room temperature.)

Steps:

  • Preheat oven to 325 degrees.
  • Score ham (follow detailed instructions above the recipe card in the process pictures in the post.
  • The ham I cooked was 10lbs, and the instructions in the packaging said to cook it for 15-20 minutes per pound until it reached 140 degrees internal temperature. Make sure to follow the baking instructions included in the ham you purchase. Then, glaze the ham the last 20 minutes of cooking as indicated in the instructions below.
  • Place Ham face down with the scored part facing up in a roasting pan with 3/4 cup of water.
  • Cover and tent with aluminum foil and bake for 2 hr and 30 minutes. If your ham is a different size, then let it bake reserving the last 15 minutes for basting.
  • The last 15 minutes of baking add all of the remaining ingredients to a saucepan and bring to a slow boil. Turn down to simmer and cook with the lid off until the glaze thickens. Don't attempt to speed up the process by turning the temperature to high as the glaze can scorch very quickly.
  • Turn oven to 375 and remove ham from the oven.
  • Remove the aluminum foil and baste with half of the glaze and return to oven for 10 minutes uncovered.
  • Remove from the oven and baste with the rest of the glaze and cook an additional 10 minutes.
  • Remove from the oven and let the ham rest for 3-5 minutes before carving.

90g/3oz soft brown sugar
6 tbsp wholegrain mustard
dark rye bread, sweet sliced pickles and bay leaves, to serve

Steps:

  • Place the raw ham in a large, clean bucket. Add enough water to cover and soak overnight, or up to 24 hrs ahead, changing the water twice.
  • Heat oven to 180C/160C fan/gas 4. Drain and place the ham in a large roasting tin, cover tightly with foil and bake for 3 hrs.
  • Remove the ham from the oven and turn the heat up to 200C/180C fan/gas 6.Using a sharp knife, carefully slice the rind off the ham, leaving about 1-2 cm of fat; cut a diamond-shaped pattern into this. In a small bowl, mix together the sugar and mustard, then rub all over the ham. Roast for 30 mins until the ham is tender and the outside nice and sticky.

2 tablespoons dijon mustard
¼ cup pineapple juice (or orange juice)
½ cup pineapple juice (or orange juice)
½ cup brown sugar
2 tablespoons dijon mustard

2 teaspoons cornstarch

Steps:

  • Preheat oven to 325°F.
  • Combine dijon mustard and pineapple juice. Brush over ham.

1 Pork Ham Shank (About 8lbs)
1 Box Brown Sugar, light or dark
½ cup Yellow Mustard

Steps:

  • Remove package wrap and any other materials from the ham shank.
  • Line a 13x9x2 pan with aluminum foil, or use a disposable roasting pan.
  • Place the ham shank, cut end down, in the roasting pan.
  • Generously coat the outside of the shank with yellow mustard, on all sides.
  • Cover the ham shank with the brown sugar.
  • Use your hands to spread the sugar over all sides of the ham shank, top and bottom.
  • Cover the pan lightly with aluminum foil.
  • Place roasting pan in oven.
  • Bake at 325F degrees for 1 ½ hours.
  • Remove the aluminum foil covering from the ham shank. Set foil aside for later.
  • Baste the ham with the juices in the bottom of the pan.
  • Return the pan, uncovered to the oven.
  • Continue to bake until the shank reaches 165F degrees, taking the reading away from the bone.
  • Note: Total baking time will be about 15-18 minutes per pound.
  • When the shank reaches 165F, remove from oven.
  • Lightly recover with foil. Let stand 10 to 15 minutes.
  • Slice, serve warm... and Enjoy.
  • Be sure to save the ham bone for a good Ham Bone and Beans dish later.

  • Preheat oven to 325°F. Place ham in large roasting pan. Pour apple juice over ham. Cover ham completely with parchment paper, then cover ham and roasting pan completely with heavy-duty foil, sealing tightly at edges of pan. Bake ham until instant-read thermometer inserted into center of ham registers 145°F, about 3 hours 45 minutes. Remove ham from oven. Increase oven temperature to 375°F.
  • Remove foil and parchment from ham. Drain and discard liquids from roasting pan. Cut off rind and all but 1/4-inch-thick layer of fat from ham and discard. 2 cups water

  • Preheat oven to 350°F (175°C).
  • Using a large knife, cut off the skin and all but 1/4 inch of the fat from the ham, leaving the surface as smooth as possible.
  • Score the top and sides of the ham diagonally in two opposite directions about 1 1/2 inches apart, creating a diamond pattern.
  • Stick a clove into the corners of each diamond.

8-10 pounds bone-in fully-cooked, spiral-cut ham
20 ounce can pineapple tidbits (, or crushed pineapple)
3/4 cup light brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves

Steps:

  • Take ham out of the refrigerator 1-2 hours before baking to allow it to come to room temperature.
  • Meanwhile, make the glaze. In a saucepan combine pineapple tidbits, brown sugar, cinnamon, and cloves.
  • Bring to a boil, reduce heat to medium low and simmer for 20-30 minutes or until mixture has thickened.
  • Preheat oven to 300 degrees F. Remove ham from packaging and throw away the glaze packet and the plastic disk that covers the bone.
  • Place the ham flat/cut side down, in a deep baking dish or roasting pan. I like to line my pan with aluminum foil to make for easier clean-up.
  • Brush just a few spoonfuls of the glaze onto the ham, all over the outside. Reserve the remaining glaze for later.
  • Cover the ham tightly with a tent of aluminum foil. This will help keep the ham from drying out.
  • Bake at 300 degrees F for 1 1/2 to 2 hours, or until internal temperature reaches 110 degrees. Note, the ham is already cooked, so we're just just trying to reheat it.
  • Remove the ham from the oven and remove foil tent (set it aside for later).
  • Increase the oven temperature to 400 degrees. Brush the remaining glaze all over the ham.
  • Return to the oven and continue to bake for another 15 minutes.
  • Remove from oven, tent with foil and allow to rest for 15 minutes before serving.

8-10 pound (4-5 kg) bone-in fully cooked ham,
1/2 cup water
1/2 cup unsalted butter, (reduce fat or full fat)
1 cup brown sugar
1/2 cup honey
2 tablespoons Dijon mustard
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
4 cloves garlic, (smashed)

Steps:

  • Preheat the oven to 300°F | 150°C and arrange a rack in the lower third. Remove any plastic packaging or netting from the ham. Trim away the rind and discard. Set the ham aside to rest at room temperature for 1-2 hours.
  • Line a baking tray or dish with several sheets of aluminium foil or parchment paper if you prefer (it will make cleanup a lot easier).
  • Remove the rind or skin of the ham (refer to steps in post), ensuring you leave the fat on. Using a sharp knife score a 1-inch-wide diamond pattern (don't cut more than 1/4 inch deep) over the entire ham. Place the ham in the baking tray; pour 1/3 cup of water into the base of the pan and cover the ham with two pieces of foil or parchment paper and bake for 30 minutes.
  • Meanwhile, heat the butter in a small pot or saucepan over medium heat until golden browned. Add in the brown sugar, honey, mustard, cinnamon and cloves, stirring to mix together well until the brown sugar has completely dissolved, (about 2 minutes).
  • Reduce heat to low and add in the garlic. Allow it to become fragrant, cooking for a further minute or two until the glaze just begins to simmer, then set it aside and let cool to lukewarm (the glaze should be the consistency of room-temperature honey).
  • After 30 minutes baking time, carefully remove the ham from the oven and increase the oven temperature to 425°F | 220°C. Discard the foil or parchment paper and pour 1/3 of the glaze all over the ham, brushing in between the cuts to evenly cover. Return to the oven and bake uncovered for 15 minutes.
  • Remove from the oven, brush with another third of the glaze and some of the pan juices, and repeat again after 15 minutes more minutes of baking until a dark golden-brown crust has formed, (about 30 minutes total). For added depth of flavour, mix some of the ham pan juices together with the glaze in the pot which will help keep it runny enough for brushing. If your crust is still pink after there suggested baking time, turn on your broiler (or oven grill), and allow it to broil for 2-5 minutes, while keeping an eye on it so it doesn't burn from the sugar.
  • Let the ham rest 10-20 minutes before slicing.

Steps:

  • Remove the baked ham from the oven and score the fat diagonally in a criss-cross pattern. Stud the ham with whole cloves, if desired. Skip scoring and the cloves if the ham is spiral-sliced. Spoon the glaze mixture over the ham.
  • Serve the ham sliced; drizzle with the cooking liquids, if desired.
