1 cup milk
2 eggs, beaten
1 cup soft breadcrumbs
1 lb ground ham
1 lb sausage
3/4 cup brown sugar (firmly packed)
1/4 cup vinegar
1/4 cup water
1 1/2 tablespoons dry mustard

Steps:

  • Combine milk, eggs & soft bread crumbs.
  • Add meat, mixing well.
  • Shape into a loaf & place in a shallow baking pan.
  • Combine brown sugar, vinegar, water dry mustard in a saucepan on medium heat.
  • Bring to a broil, stirring constantly & pour over the ham loaf.
  • Bake in a moderate oven (350 degrees) for one hour & 15 minutes.
  • Serving size is approximate.

1 cup coarsely crushed saltines (about 25 crackers)
1 cup 2% milk
2 large eggs, lightly beaten
1/8 teaspoon pepper
1-1/2 pounds ground ham
1 pound ground pork
BASTING SAUCE:
1/2 cup packed brown sugar
1 teaspoon ground mustard
2-1/2 tablespoons vinegar
1/4 cup water

Steps:

  • In a large bowl, combine the crackers, milk, eggs and pepper. Crumble ham and pork over mixture and mix well. Press into a 9x5-in. loaf pan. Bake at 350° for 1-1/4 hours or until a thermometer reads 160°. , Meanwhile, combine the sauce ingredients in a small saucepan; bring to a boil. Boil for 2 minutes. Baste loaf occasionally after first 20 minutes of baking.

2 ½ pounds ground ham
½ pound ground pork
½ onion, chopped
2 cups rolled oats
2 eggs
2 ½ tablespoons chopped fresh parsley
1 teaspoon ground mustard
½ teaspoon ground black pepper
1 ½ cups evaporated milk
1 ½ cups brown sugar
¼ cup cider vinegar
¾ cup mayonnaise
¼ cup sour cream
5 tablespoons prepared horseradish
1 tablespoon lemon juice
salt and black pepper to taste

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Combine the ground ham, ground pork, onion, oats, eggs, parsley, ground mustard, pepper, and evaporated milk in a large bowl. Mix well. Form in to 2 loaves; place into 9x13 inch baking pans.
  • Bake loaves in preheated oven for 30 minutes. Stir the brown sugar and vinegar together in a small saucepan; boil for 1 minute. Remove loaves from oven, and pour brown sugar mixture over. Return loaves to oven; baste frequently with the pan juices until browned and cooked through, 30 to 45 minutes longer.
  • Combine the mayonnaise, sour cream, horseradish, and lemon juice in a small bowl. Season to taste with salt and pepper. Serve sauce over sliced ham loaf.

I used to buy a ham loaf when I worked at Hess's Dept.Store in their Food Department. It was called "Moyer's Dinner Loaf". My family (mother, father and sister) LOVED it!! Years later, when it was no longer available, I started to do some research and finally created this recipe which is fairly close to that original .........

HAM LOAF
3 lb smoked ham, ground
1 1/2 lb ground pork
3/4 c graham cracker crumbs
3 large eggs
1 Tbsp mustard, spicy brown
2 tsp catsup
1/2 c light brown sugar, packed
1/4 teaspoon ground cloves
1/4 c pineapple juice, unsweetened
GLAZE
1/3 c light brown sugar, packed
1 Tbsp mustard, spicy brown
1 tsp catsup
1-2 tsp pineapple juice, unsweetened

Steps:

  • 1. Heat oven to 350 degrees F. Generously coat 2 large loaf pans (8/12" X 5") with cooking spray. Set aside.
  • 2. In a very large bowl, combine the ground ham, ground pork, graham cracker crumbs, eggs, mustard, catsup, brown sugar, cloves and pineapple juice.
  • 3. Mix with hands until all ingredients are well combined. (Hint: If meatloaf seems "dry", add another egg or more pineapple juice; if it seems a little "wet", add more graham cracker crumbs.)
  • 4. Transfer meat mixture evenly between two prepared loaf pans. Press down firmly to compact meat mixture. Press down with tines of fork to make a "pattern" on the top of each loaf.
  • 5. Make the glaze: In a small bowl, combine the brown sugar, mustard, catsup and pineapple juice. mix well and spread evenly over top of each ham loaf.
  • 6. Bake for 1 1/2 to 1 3/4 hours or until ham loaf feels firm when pressed down on top of loaf.
  • 7. Remove from oven and let cool for 5-10 minutes. Remove from loaf pan and serve. (HINT: make extra glaze to serve with ham loaf.)

AMISH HAM LOAF

1 pound ground ham (about 3 cups)
1 pound ground pork
2 to 2 1/2 cups soft white bread crumbs
2 large eggs
3/4 cup sour cream
1/2 cup finely chopped onion
2 TBSP lemon juice
1 tsp. curry powder
1 tsp. ground ginger
1/2 tsp. ground nutmeg
2 TBSP yellow mustard
1/2 cup brown sugar
1/4 cup cider vinegar
1/4 cup water
1/2 tsp. fresh ground black pepper
Ketchup (optional)

Steps:

  • Preheat oven to 350 degrees F. Prepare a broiler pan by covering the bottom portion in foil. Replace the slotted top and spray lightly with cooking spray. Set aside.
  • In large bowl, with hands, combine the ground ham, ground pork, and 2 cups soft bread crumbs.
  • In medium bowl, whisk together the eggs, sour cream, onion, lemon juice, ginger, nutmeg, and mustard.
  • Pour wet ingredients into bowl with ham/pork/breadcrumb mixture and combine with hands until it all comes together. If it feel too wet, add the rest of the breadcrumbs.
  • Shape into an oblong loaf onto prepared broiler pan. Let sit for about 30 minutes before putting into oven.
  • Bake for 30 minutes. Baste with 1/2 the glaze. Return to oven and bake for another 15 minutes. Baste with the remainder of the glaze. Return to oven for another 15 to 25 minutes. Top with ketchup, if desired, and pop into oven for another couple of minutes.
  • Let rest for 15 minutes before slicing.
  • Combine all glaze ingredients except ketchup in a small saucepan and heat to boiling. Take off heat and use as directed in the Ham Loaf instructions above.

3/4 pound ground pork

2 tablespoons yellow mustard
1/2 cup ketchup
1 medium onion ((chopped))

3/4 cup milk
1/2 tablespoon paprika
1 1/2 cups brown sugar
1/2 cup white vinegar
1 teaspoon yellow mustard
8 ounces crushed pineapple ((with juice))

Steps:

  • Preheat the oven to 350 degrees Fahrenheit.
  • In a large bowl, mix together the ground ham, pork, eggs, mustard, ketchup, onion, graham crackers and milk. Mix well.
  • Spray a 9x13 baking pan with cooking spray.
  • Shape the ham mixture into a loaf, packing the meat firmly.
  • Sprinkle the top of the ham loaf with paprika.
  • Bake the ham loaf for 20 minutes. During this 20 minutes, make the pineapple glaze.
  • Combine the glaze ingredients together in a small saucepan over medium heat. Cook and stir until the sauce comes to a boil, then boil for 1 minute.
  • Remove from the heat and set aside until the ham loaf is ready to glaze.
  • After the initial 20 minutes of baking, brush the top of the loaf with the pineapple glaze.
  • Bake again for 70 minutes, basting the ham loaf 2 or 3 more times during baking.
  • Serve warm with any leftover pineapple glaze drizzled on top.

One 1-pound loaf frozen bread dough
Nonstick cooking spray
All-purpose flour, for dusting
1/2 pound shaved Virginia ham
1/2 pound Irish Cheddar or other white Cheddar, grated

Steps:

  • Thaw the bread dough overnight, then bring to room temperature before rolling (but don't let it rise).
  • Preheat the oven to 325 degrees F. Spray a loaf pan with nonstick cooking spray.
  • On a lightly floured work surface, roll the bread dough into a 9-by-12-inch rectangle. When rolling, if the dough springs back, cover with a dry towel and let it rest for 5 minutes.
  • Shingle the ham slices onto the dough, leaving a 1/4 inch of exposed dough on all sides. Sprinkle with the cheese and roll the dough into a large log, pinching together the seam and tucking the ends under to seal completely.
  • Place the log, seam-side down, in the prepared loaf pan and bake until golden brown and cooked through and the internal temperature is 200 degrees, for 50 minutes to 1 hour.
  • Let it sit for at least 10 minutes. Remove from the pan. Slice and serve.

This is another recipe from my Grandma. She would take this to family reunions and would never have any left. It soon become one of my favorite recipes for at home and for carry ins. When I would go signed up for carry-ins my name would already be down with ham loaf beside it. Guess people liked it.

1 lb ham loaf mix (i think it's just ground ham)
2 eggs
1 c bread crumbs
1 c milk
BASTE :
1/2 c vinegar (i use white)
1/3 c water
1 1/2 c brown sugar
1 Tbsp dry mustard

Steps:

  • 1. Mix the first 4 ingredients together like you would meat loaf. Put it into a loaf pan or I make 2 small loaves and freeze one.
  • 2. Mix up the basting ingredients and brush onto the ham loaf. Put in oven at 325 degrees for 2 hrs. I baste every half hour. The more basting the better it is.
