STICKY MAPLE-GLAZED HAM WITH BAKED APPLE SAUCE

Sticky maple-glazed ham with baked apple sauce image

Slow-roast a whole leg of gammon with apple juice, then cover in a sticky spiced glaze for a Christmas treat - perfect sliced hot or cold

Provided by Cassie Best

Categories     Buffet, Main course

Time 6h40m

Number Of Ingredients 18

1 whole unsmoked leg of gammon (about 4.5kg-5kg), on the bone
150ml apple juice
2 cinnamon sticks
2 star anise , plus 8-12 to serve (optional)
10 whole peppercorns
6 cloves
4 bay leaves
pared zest 1 orange
5 small apples (we used Braeburn)
edible gold spray , to decorate (optional)
bay leaves , to decorate (optional)
pared orange zest , to decorate (optional)
250ml maple syrup
50ml apple juice
1 tsp ground cinnamon
1 tsp ground ginger
½ tsp ground cloves
2 tbsp wholegrain mustard

Steps:

  • If your gammon needs to be soaked to draw out some of the salt (ask your butcher), place in a clean bucket or a preserving pan and cover with cold water. Chill overnight, or for up to 3 days.
  • Heat oven to 160C/140C fan/gas 3. If the ham has been soaking, drain it well and place in a large, deep-sided roasting tin. Pour in the apple juice and top up with 400ml water. Add the spices, bay leaves and orange zest. Cover the ham tightly with a few large sheets of foil, scrunching it around the edges of the tin so no steam can escape, then bake for 5 hrs. Meanwhile, mix together the ingredients for the glaze in a saucepan, then bubble until reduced to a sticky glaze. Score the apples around their equator with a small, sharp knife.
  • Remove the ham from the oven and increase the temperature to 200C/180C fan/ gas 6. Carefully transfer the ham to a board - the easiest way to do this is to leave it to cool for 10 mins, then pop on clean washing- up gloves to lift it. Pour away the cooking liquid and discard the aromatics. Use a small, sharp knife to cut and peel away the rind, leaving a thin layer of fat attached to the meat. Line your roasting tin with a few sheets of foil and place the ham in the middle, fat-side up. Use a sharp knife to lightly score the fat in a criss-cross pattern. Return the ham to the oven and bake for 30 mins until the fat starts to crisp and caramelise.
  • If the glaze has become a little thick, splash in a drop of water to loosen it, then brush all over the ham. Place the whole apples in the tin too, and return to the oven for another 20-30 mins, basting the ham every now and then, until dark and sticky all over.
  • Before serving, mash the whole apples (discard the stalks, skin and pips) with a little of the sticky sauce from the roasting tin. We decorated our ham with star anise, sprayed with edible gold spray, and arranged bay leaves and orange peel around the board. Serve warm slices of the ham with the apple sauce, or cold in sandwiches. Will keep for up to 1 week in the fridge, or slice and store in the freezer for up to 2 months.

SLOW COOKER HAM WITH APPLE SAUCE

Slow Cooker Ham with Apple Sauce image

Slow Cooker Ham with Apple Sauce is a classic holiday dinner main dish recipe or an easy Sunday supper that comes together in the matter of minutes and slow cooks for 5 hours. Producing the most flavorful ham with a delicious apple sauce to serve alongside.

Provided by Katie

Categories     Main Course

Time 5h10m

Number Of Ingredients 7

¼ cup brown sugar
½ tsp ground cinnamon
4.5 lbs Semi-boneless half smoked ham
4 granny smith apples (peeled and diced)
1-½ tbsp raisins
½ cup apple juice
10 whole cloves

Steps:

  • In a bowl combine ¼ cup brown sugar and ½ tsp ground cinnamon. Mix well and set to the side.
  • Peel and dice 3 of the Granny Smith apples. Place the diced apples in the slow cooker, add 1-1/2 tablespoons raisins, and 1 tablespoon of the brown sugar/ cinnamon mixture. Mix well then pour the apple juice over the apples.
  • Peel the remaining Granny Smith apple, using a hand-held mandolin slicer cut 10 slices on the thickest setting (about ¼ inch thick). Put the thinly sliced apples to the side. With the remaining apple, dice it and place it in the slow cooker with the other diced apples.
  • Place the ham flat side down in the slow cooker (making sure to remove the plastic insert usually found on the flat part of the ham). If your ham is too tall and sticks out of the height of the slow cooker, carefully trim off that piece until the lid can shut close.
  • Sprinkle the remaining cinnamon and sugar mixture on top of the ham. Rub the mixture all over.
  • Carefully add thinly sliced apples (evenly spaced) to the top and sides of the ham. Secure each apple slice with 1 whole clove each.
  • Place the lid on the slow cooker and cook for 5 hours on low.
  • Once warm and internal temperatures reaches at least 140 degrees Fahreheit, remove ham from slow cooker and slice. Mix apples together, (strain juice if desired) and place in a bowl. Serve together immediately.

  • Preheat the oven to 375°. In a small bowl, combine the maple syrup, mustard and brown sugar. Using a sharp knife, remove the rind from the ham, leaving a layer of fat at least 1/4 inch thick all over. Score the fat in a crosshatch pattern at 1/2-inch intervals. Set the ham in a large roasting pan. Brush the ham with two tablespoons of the maple mustard glaze, and scatter the apple and onion slices around it. Add the cider and chicken broth to the pan. Cover the ham with foil and braise in the oven for 2 hours. Uncover the ham, and brush it with all but 2 tablespoons of the maple-mustard glaze. Bake uncovered about 1 1/2 hours longer, until the ham is deeply browned and an instant-read thermometer inserted in the thickest part of the ham registers 155°.
  • Transfer the ham to a cutting board and let rest for 20 minutes. Strain the gravy into a large glass measuring cup, gently shaking the strainer to extract as much liquid as possible. Reserve the cooked apple and onion compote left in the strainer. Spoon off as much fat from the gravy as possible. In a small saucepan, boil the gravy until reduced to 1 1/2 cups, about 15 minutes. Whisk in the remaining 2 tablespoons of maple-mustard glaze. Slice the ham and serve with the apple-onion compote and gravy.
