New England baked haddock recipe is one of the most delicious fish dishes you will ever have, yet it is so simple! With only three ingredients and 5 minutes of hands-on time, you will have an elegant, crowd-pleasing meal.

1-1.5 lbs. haddock (patted dry (or cod))
1 cup plain breadcrumbs (or seasoned, see note)
6 tablespoons salted butter (melted (see notes))
kosher salt and black pepper
lemon wedges and fresh parsley (for serving (optional))

Steps:

  • Preheat oven to 350 degrees.
  • Put a spoonful of the melted butter in a baking sheet or dish and spread to coat the bottom.
  • Combine the bread crumbs (1 cup) with the rest of the 6 tablespoons of melted butter.
  • Salt and pepper both sides of the fish liberally (I used about 1 teaspoon kosher salt and 1/4 teaspoon pepper), and lay in the buttered baking dish.
  • Spread bread crumbs - all of them - evenly over the top of the fish. I use my hands to sprinkle it on (it won't really stick like traditional breading - it's more like a topping).
  • Bake for 15 minutes, or until fish is cooked thoroughly (and flakes easily).
  • Serve with a squeeze of lemon juice and a garnish of fresh parsley, if desired.

2 (4 ounce) packages buttery round crackers (such as Ritz®), crushed
1 ½ pounds haddock, patted dry
½ cup honey
1 teaspoon dried parsley

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place 1/2 cup butter in a shallow microwave-safe bowl. Heat in the microwave until melted, about 30 seconds. Mix crushed crackers into the melted butter.
  • Place haddock a shallow baking dish and cover with butter-cracker mixture.
  • Bake haddock in the preheated oven until flesh flakes easily with a fork, about 25 minutes.
  • Place remaining 1/4 cup butter in a small microwave-safe bowl. Heat in the microwave until melted, about 15 seconds. Stir in honey and parsley until blended.
  • Remove haddock from the oven; drizzle honey butter on top. Continue baking until top is browned, about 5 minutes more.

4 ounces bay scallops (small)
12 jumbo shrimp, peeled and deveined
1/2 cup white wine
2 tablespoons lemon juice

2 teaspoons garlic powder
1/2 teaspoon black pepper
1/2 lemon, zest of

Steps:

  • Preheat the oven to 375F, line a roasting pan with parchment.
  • Lay fish fillets in a single layer on the bottom of the dish, then top with scallops and shrimp.
  • Pour the white wine and lemon juice overtop of the seafood.
  • In a bowl, toss butter, cracker crumbs, garlic powder, black pepper and lemon zest.
  • Sprinkle over the seafood.
  • Bake 15 minutes, then turn the broiler to HI and broil 2 minutes, until browned.

2 teaspoons salt
¾ cup bread crumbs
¼ cup grated Parmesan cheese
¼ teaspoon ground dried thyme
4 haddock fillets
¼ cup butter, melted

Steps:

  • Preheat oven to 500 degrees F (260 degrees C).
  • In a small bowl, combine the milk and salt. In a separate bowl, mix together the bread crumbs, Parmesan cheese, and thyme. Dip the haddock fillets in the milk, then press into the crumb mixture to coat. Place haddock fillets in a glass baking dish, and drizzle with melted butter.
  • Bake on the top rack of the preheated oven until the fish flakes easily, about 15 minutes.

2 lbs haddock or 2 lbs cod fish fillets
32 Ritz crackers, crushed (32 crackers in a sleeve)
1/4 cup parmesan cheese, grated
2 teaspoons garlic powder
1/4 cup chopped fresh flat leaf parsley
3 tablespoons extra virgin olive oil
3 tablespoons butter, drawn

Steps:

  • Preheat the oven to 400 degrees.
  • Mix all ingredients together in a bowl except for the butter and fish. Use a food processor or your hands to make an evenly consistent bowl of crumbs.

Baked, stuffed fish is an old-school restaurant staple in New England; covered in lemony, butter-soaked cracker crumbs, it's a wonderful way to eat mild white fish like cod or haddock. The dish has a long history and relies on two ingredients New Englanders have in abundance: fresh seafood and crackers, which are descended from sailors' hardtack. Fannie Farmer's 1896 "Boston Cooking-School Cook Book" has a recipe for cracker-stuffed halibut, seasoned with butter, salt, pepper and onion juice. Some modern versions use saltines, others use butter crackers like Ritz, and many enrich the crackers with crab meat. This recipe is an easy weeknight variation: Instead of rolling the fish up around the stuffing, which requires long, thin filets, it is generously covered in the stuffing and roasted until the cracker topping is toasted and the fish flakes.

Steps:

  • Heat the oven to 425 degrees. Put the crackers in a medium bowl and use your hand to crush them until they are finely crushed. (Some coarser bits are OK.) Add 4 tablespoons of the melted butter, the chives, parsley, lemon zest and onion and garlic powders, and stir to evenly combine, making sure to moisten all the crumbs.
  • Put the fish fillets in a large, ovenproof skillet. Drizzle the remaining 1 tablespoon butter over the fish and turn to coat. Season the fish on all sides with salt and pepper. Mound the cracker mixture on top of the fish, covering it. (Some cracker crumbs will fall off the fish.)
  • Roast in the oven for 10 to 16 minutes, depending on the thickness of the fillets. Plan for about 10 minutes per inch; the fish should flake easily, and the juices should be bubbly around the edges. Squeeze the lemon juice over the top. Sprinkle with paprika, and serve with extra lemon wedges on the side.

4 center-cut boneless, skinless cod fillets (6 to 8 ounces each)
Kosher salt and freshly ground black pepper
1/2 cup Ritz cracker crumbs (15 crackers; see Cook's Note)
1/3 cup panko (Japanese bread flakes)
2 tablespoons minced fresh parsley
2 teaspoons minced garlic (2 cloves)
1 teaspoon grated lemon zest
3 tablespoons unsalted butter, melted
1/4 cup dry white wine, such as Pinot Grigio
2 tablespoons freshly squeezed lemon juice
Lemon wedges, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Pour 2 tablespoons olive oil in a 9 x 9-inch ceramic baking dish (it should be just big enough to hold the fish) and tilt the dish to coat the bottom with oil. Place the fish fillets in the dish and turn to coat both sides with the oil. Sprinkle the fish with 1 1/2 teaspoons salt and 1/2 teaspoon pepper and bake for 10 minutes.
  • Meanwhile, combine the cracker crumbs, panko, parsley, garlic, lemon zest, and 1 teaspoon salt in a small bowl. Add the melted butter and stir until evenly moistened. Set aside.
  • Remove the fish from the oven and pour the wine and lemon juice directly on the fillets. Pat the crumb mixture evenly onto the fillets, pressing gently to help them adhere. (Don't worry if some crumbs get into the sauce!)
  • Return the pan to the oven for 12 minutes, until the fillets are just cooked through in the center, depending on the thickness of the fish. Sprinkle with salt and serve hot with the pan juices and lemon wedges.

I downsized this fabulous recipe which I found on the NY Times cooking site. The original recipe used cod. I subbed haddock. This is one of the most delicious fish recipes I have ever tried. Recipe feeds two, to feed more double the recipe amounts.

3/4 cup crushed (2 ounces/60g) buttery round crackers
2 1/2 TBS butter, melted
1 spring onion, trimmed and finely chopped
1 tsp dried parsley flakes
the juice and zest of 1/4 lemon, plus more lemon wedges to serve
1/4 tsp onion powder (not salt)
1/4 tsp garlic powder (not salt)
2 fillets of haddock (or cod), each one weighing 6 ounce (170g) to 8 ounce (225g)
fine ground sea salt and freshly ground black pepper to taste

Steps:

  • Preheat the oven to 425*F/220*C/ gas mark 7. Have ready an oven proof skillet large enough to hold both fillets.
  • Put the crackers into a bowl and crush. You want a mix of mostly fine and some coarse crumbs. Add 2 TBS of the melted butter, the spring onion, parsley, lemon zest, onion and garlic powders. Mix to combine well.
  • Butter the skillet. Place the fillets in the skillet and season lightly with salt and black pepper. Pile the cracker crumbs on top. (Some crumbs will fall off, its inevitable.)
  • Roast in the oven for 10 to 16 minutes, depending on the thickness of the fish. (About 10 minutes per inch of thickness. My fillets were thicker on one end than the other. I folded the thin end underneath the thicker end. They took about 13 minutes.)
  • The fish should flake easily and the juices should be bubbling and golden brown around the edges. Squeeze the lemon juice over top and serve immediately with more lemon wedges for squeezing on the side.

HERB-CRUSTED HADDOCK

2 handfuls cherry tomatoes
3 tbsp mayonnaise
1 tsp garlic paste or 1 garlic clove, crushed
100g white breadcrumbs
zest and juice 1 lemon
2 handfuls flat-leaf parsley , leaves roughly chopped

Steps:

  • Heat oven to 220C/fan 200C/gas 7. Lightly oil a large baking tray, then lay the haddock and tomatoes alongside each other. In a small bowl, mix the mayonnaise with the garlic paste or crushed garlic, then spread evenly over the fish.
  • In a separate bowl, toss together the breadcrumbs, lemon zest, juice and parsley, and season to taste. Top the fish with the breadcrumb mixture. Drizzle olive oil over the fish and tomatoes, and bake for 15 mins or until the fish flakes slightly when pressed and the crust is golden and crunchy.
