GOAT CHEESE MASHED POTATOES

Steps:
- Preheat the oven to 375 degrees F. Place the potatoes, garlic and 1 tablespoon salt in a large pot with enough water to cover the potatoes. Bring to a boil over high heat, reduce to a simmer and cook for 20 to 25 minutes, until very tender.
- Drain the potatoes and garlic and process them together through a food mill fitted with the coarsest blade set on top of a bowl. While the potatoes are still hot, stir in the goat cheese, butter, sour cream, half-and-half, 4 teaspoons salt and 2 teaspoons pepper until smooth.
- Pour the mixture into a 9-by-12-by-2-inch oval baking dish, smoothing the top. Sprinkle the Parmesan on top and bake for 30 to 40 minutes, until lightly browned. Serve hot.

Steps:
- Place potato cubes in a pot with water. Bring to a boil and let simmer for 15 minutes or until tender when pierced with a fork. Drain.
- Return potatoes to the pot and add cream cheese and milk. Mash with a masher until rather creamy. Season with garlic, nutmeg and salt to taste.
- Now add in HALF of the mozzarella and HALF of the cheddar cheese (meaning 1/4 cup of each). Mash a little more.
- Add in scallions, mix well.
- Pour mashed taters into a 9X13 baking dish and sprinkle with remaining cheese.
- Bake in the preheated oven at 180°C/350°F for 20-25 minutes or until nicely browned on top. If you like the top very brown, you can put the dish on the top rack for the last 5 minutes.
- Enjoy!

- In a large pot, cover potatoes and garlic with lightly salted water.
- Boil until potatoes are fork tender.
- Fry bacon in skillet until crisp; drain on paper towels.
- Pour out all but 1 tsp bacon grease from pan.
- Add scallions to grease, saute until soft, but not brown.
- Add bacon.
- Drain potatoes and return to pot.
- Mash potatoes with milk, sour cream, salt, and pepper.
- Stir in bacon and scallions.
- Reheat, if necessary, before serving.

- Quarter potatoes (smaller if using russet's) and place in large pot with peeled garlic cloves.
- Cover with water and bring to boil.
- Boil for about 12-15 minutes or until fork tender.
- In the meanwhile, heat milk in microwave for 30 seconds to a minute until just warm.
- Drain potatoes and garlic and return to hot pot to dry slightly.
