REAL GERMAN BAKED APPLES
This really delicious Baked Apple and easy-to-make recipe is perfect for the season. Cinnamon and raisins warm you during cold and windy winter evenings.

- Preheat the oven to 375 degrees F (190 degrees C). Place the cored apples upright in a shallow baking dish.
- In a medium bowl, whip the egg white until it holds a stiff peak. Sprinkle in the sugar, and whip just a bit more. Stir in the cinnamon, raisins, and toffee until evenly distributed. Spoon into the cores of the apples.
- Bake uncovered for 5 to 10 minutes in the preheated oven, until the meringue is crisped. Allow to cool slightly before serving.

- Pour butter into a 9-in. square baking pan; sprinkle with brown sugar. Arrange apples over sugar; set aside. , For gingerbread, in a large bowl, cream butter and sugars until light and fluffy. Beat in egg, then molasses. Combine dry ingredients; add to sugar mixture alternately with tea, beating well after each addition. , Pour over apples. Bake at 350° for 45-50 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before inverting onto a serving plate. Serve warm.

GERMAN GINGERBREAD "LEBKUCHEN"
This is a traditional Christmas treat, soft & chewy with many wonderful spices. Use your favourite cookie cutters to create an army of little men, a collection of hearts or a herd of reindeer! "Lebkuchen" (gingerbread) is also known as "Honigkuchen" (honeycake) in some parts of Germany.

- In a small pot gently heat the butter, sugar and honey and stir regularly until the sugar has completely dissolved.
- While this is happening, mix together all the other ingredients in a big bowl.
- Then add the liquid honey/butter/sugar mix to this (you'll either need a spoon and strong arms, or a kitchen aid machine with a kneading hook attachment).
- Now leave the dough to rest/cool down for an hour at room temperature.
- Pre-heat your oven to 180 degrees. (160 if fan-assisted)
- After an hour, roll out the dough to about 1cm thickness and cut out gingerbread men or any other shapes you prefer (if the dough is too sticky, place it in the fridge for a few minutes to firm-up, or knead it with your hands and add a bit more flour).
- Place the cookies on a tray lined with baking paper, and bake for approx. 10min. (they will still be slightly soft to the touch; this is what you are aiming for!)
- Once cool, feel free to frost them with icing, sugar pearls, or any other kinds of sweet decoration!

- Preheat oven to 375°F.
- Crumble Lebkuchen into small pieces and place into a bowl.
- Add crystallized ginger and nuts.
- Melt honey and butter in microwave together and add to bowl.
- Stir to combine and set aside.
- Core the apples without cutting through the base.
- With a knife or melonballer, remove some of the inside of the apple to make room for the filling.
- Place apples in a 12 x 7.5 x 2 inch baking dish.
- Spoon the prepared filling into the opening in the apples, packing it down lightly.
- To prepare syrup, combine honey, brown sugar, water and butter in small saucepan and bring to a boil; keep warm to brush on apples.
- Brush apples liberally with honey syrup and pour remainder around apples.
- Bake uncovered at 375° F for 45 minutes or until the apples are tender, basting occasionally.
- Let cool for 15 minutes.
- Whip cream with powdered sugar.
- Serve apples with a dollop of whipping cream and garnish with slivers of crystallized ginger.
