5 cups blueberries
3/4 to 1 cup granulated sugar
3 tablespoons all-purpose flour
1 tablespoon lemon juice
1/8 teaspoon salt
1/2 Crumb Topping
Easy Pie Crust

Steps:

  • Preheat oven to 400 degrees. Combine 5 cups blueberries or other fruit with 3/4 to 1 cup granulated sugar, 3 tablespoons flour, 1 tablespoon lemon juice, and 1/8 teaspoon salt. Pour into pie shell; sprinkle with 1/2 recipe Crumb Topping.
  • Place on foil-lined baking sheet in lower third of oven; reduce heat to 350 degrees. Bake until fruit bubbles and crust browns, 1 1/2 hours. If topping begins to brown too quickly, tent with foil. Let cool 6 hours.

9 ozs cooking Apple peeled, cored and thickly sliced (peeled weight)
2.5 ozs Strawberries (halved if large)
0.25 cup caster sugar
0.5 tsp ground cinnamon
0.75 cup plain flour
3 Tbsps butter
3 Tbsps sugar
0.333 cup chopped almonds

Steps:

  • Heat the oven to 190°C (170° fan) 375°F gas 5. Grease a baking dish or 2 individual ovenproof dishes.
  • Mix together the apples, strawberries, caster sugar and cinnamon and put into the baking dish.
  • Put the flour into a mixing bowl and rub in the butter until the mixture resembles fine breadcrumbs, then stir in the sugar and almonds.
  • Sprinkle evenly over the fruit and bake for about 30 minutes until golden brown.

My mother always sprinkled on this wonderful crumb topping to dress up her two-crust fruit pies. The crumble topping not only looks pretty, it provides a crisp contrast to the soft fruit filling. I used it to top pies for my daughter's wedding reception.

1 can (15.25 oz.) Del Monte® Pineapple Chunks in 100% Juice, drained
1/2 cup all-purpose flour
1/2 cup packed dark brown sugar
1/4 tsp. ground cinnamon
1/3 cup cold butter or margarine
(Optional) low-fat vanilla ice cream or frozen yogurt

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. Place the peaches and pineapple in an 8-inch by 8-inch baking dish.
  • 3. Stir together the flour, sugar and cinnamon in a medium bowl. Cut in butter until mixture is crumbly and butter pieces are about the size of a pea. Sprinkle evenly over fruit.
  • 4. Bake 30 minutes or until topping is crisp and golden. Serve warm with ice cream, if desired.

1 cup white sugar
½ cup apricot nectar
1 cup all-purpose flour
½ cup quick-cooking rolled oats
½ cup graham cracker crumbs
1 tablespoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Scatter the apples, peaches, plums, and strawberries into the bottom of the prepared baking dish, mixing the fruit well. Sprinkle with 1 tablespoon of sugar and 1/2 teaspoon of cinnamon if desired. Pour the water over the fruit.

3 large pears, chopped in 1 inch cubes
1 inch piece fresh ginger, chopped
1 tablespoon honey
2 tablespoons orange juice
1 1/3 cups refined flour, sieved (maida)
1/3 cup butter, softened
15 -20 almonds, flaked
1 cup oats
1 teaspoon spices
2 tablespoons brown sugar
1 cup honey
custard, as required

Steps:

  • Preheat oven to 175°C.
  • Grab hold of an oven-proof dish and lightly grease it.
