This baked fish is our absolute favorite baked white fish recipe. It's cooked in a delicious lemon garlic butter sauce until tender and flaky. It's a 20-minute dinner recipe you don't want to miss!

EASY BAKED FISH WITH GARLIC AND BASIL
Easy, tender baked fish infused with garlic and basil. The secret to this juicy fish is in the quick fish marinade with a few spices, garlic, fresh basil, a little citrus and extra virgin olive oil. Serve it with lemon rice and my big white bean salad or any bright salad you love!

- Pat fish fillet dry and season with salt and pepper on both sides.
- Place the fish in a large zip-top bag. Add the oregano, coriander, paprika, minced garlic, basil, extra virgin olive oil and lemon juice. Zip the bag shut and massage to be sure the fish is evenly coated in the marinade. Marinated for 30 minutes or up to 1 hour in the fridge (see notes).
- Heat oven to 425 degrees F.
- Arrange bell peppers and shallots in the bottom of a 9 x 13 baking dish. Place the fish on top and pour the marinade over it.
- Bake in heated oven for 15 minutes or until fish is done and flakes easily.

SALVADORIAN BAKED FISH
My grandmother has been making this recipe for our family for as long I can remember. This will work on any white fish. To our family, when it comes to cooking fish, it needed to be perfect. Believe me, if you only knew! This recipe is a real winner.

- Preheat oven to 400 degrees F (200 degrees C). Grease a baking dish with 1 teaspoon olive oil.
- Rub remaining olive oil over the fish fillets and place into the baking dish. Season fish with garlic powder, salt, and black pepper; top with minced garlic. Drizzle lime juice over the fish. Arrange lemon slices, tomato slices, onion slices, and bell pepper slices atop the fish. Cover baking dish tightly with aluminum foil.
- Bake in preheated oven until fish flakes easily with a fork, 30 to 40 minutes.

BAKED FISH SALONIKA

Steps:
- Rinse fish with cold water. Oil baking pan with half the oil.
- Place slices of fish on pan.
- Sauce: heat remaining oil in frying pan, fry onions and garlic on medium heat for 5 minutes.
- Add remaining ingredients, cover and cook for 10 minute.
- Pour sauce over fish.
- Bake 45 minutes at 375 degrees F.
- Serve with a salad and crusty bread.

SALONA ( SWEET AND SOUR FISH)

I've never heard of Salona before and there weren't any other recipes by that name here. * I found in reading a book called Jewish Cookery from Boston to Baghdad, by Malvina W. Liebman, "that among places to which Jews fled the from Spain, in the 15th century, was Salonica, then under Turkish rule. Some of the refugees founded small towns in Turkey to which they gave Spanish names and where they maintained the old customs and food habits".

Steps:
- In a large skillet, on a low flame, place cut up onions with vegetable oil and stir unil brown. Add the chunks of tomatoes and 1/4 cup water.
- Keep stirring on low heat as you add the rest of the ingredients (not the fish). Continue cooking on low flame for 10 minutes. Taste sauce. It should have a mild sweet and sour taste.
- Cover the bottom of a rectangular pyrex baking dish with the sauce. Lay the fish on top of the sauce and then cover the fish with the rest of the sauce.
- Preheat oven to 400 degrees F. Bake for 45 minutes. Remove and add the sliced tomatoes over the entire top of the fish. Now broil for 10 minutes.
