A favorite for mornings during the holidays at our house. We use Ghirardelli® dark chocolate chips for these.

cooking spray
1 ¼ cups all-purpose flour
1 cup whole wheat flour
2 teaspoons ground cinnamon
1 ½ teaspoons ground ginger
1 ½ teaspoons baking soda
½ teaspoon ground nutmeg
½ teaspoon ground allspice
¼ teaspoon salt
1 cup packed brown sugar
1 cup canned pumpkin
⅓ cup soy milk
⅓ cup vegetable oil
¼ cup molasses
2 large eggs
1 teaspoon vanilla extract
1 cup chocolate chips

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray 18 muffin cups with cooking spray or line with paper liners.
  • Whisk all-purpose flour, whole wheat flour, cinnamon, ginger, baking soda, nutmeg, allspice, and salt together in a bowl; form a well in the center.
  • Stir brown sugar, pumpkin, soy milk, oil, molasses, eggs, and vanilla extract together in a separate bowl until well mixed. Pour brown sugar mixture into the well of the flour mixture and stir until batter is just combined; fold in chocolate chips. Spoon batter into the prepared muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, about 15 minutes. Remove muffins from pan immediately and cool completely on a wire rack.

At first I wasn't so sure about mixing the flavor of pumpkin and choclate, but they turned out to be surprisingly wonderful! I now make these all the time for my breakfast! I would suggest to definitely stick with milk chocolate chips but not the semi-sweet kind.

1 1/3 cups wheat bran
1 cup skim milk
1 cup pumpkin
2 eggs
2 tablespoons unsweetened applesauce
1 tablespoon vanilla
3/4 cup whole wheat flour
1 cup quick-cooking oats
1/3 cup Splenda brown sugar blend
1 teaspoon baking soda
1/2 teaspoon baking powder
1 tablespoon cinnamon
1 tablespoon pumpkin pie spice
3/4 cup chocolate chips

Steps:

  • Combine bran and milk and mix.
  • Combine dry ingredients in a large bowl and mix well.
  • Add pumpkin, eggs, apple sauce and vanilla to bran and milk mixture.
  • Add the wet ingredients to the dry ingredients and mix.
  • Spoon into greased muffin tins, and bake at 400F for 20 minutes.

1 1/3 cups natural bran
1 cup milk
3/4 cup pumpkin
2 eggs
2 tablespoons vegetable oil
1 teaspoon vanilla
3/4 cup whole wheat flour
1 cup quick oats
1/2 cup brown sugar
1 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon clove
1/4 teaspoon nutmeg
1/2 cup chocolate chips (optional)

Steps:

  • Combine natural bran and milk in a separate bowl and let stand 3-5 minutes.
  • Combine dry ingredients in a large bowl and mix well.
  • Add pumpkin, eggs, oil and vanilla to bran and milk mixture.
  • Add the wet ingredients to the dry ingredients and fold until moist. The batter will be thick.
  • Spoon into greased or papered muffin tins, and bake @ 400F for 20-25 minutes.

¾ cup canned pumpkin
¼ cup water

¼ teaspoon salt
¼ teaspoon ground nutmeg
½ cup semisweet chocolate chips

Steps:

Everyone I have ever served these to rants about them. I have made some modifications to make them a little healthier. That recipe is Recipe #2509. Either way though, we love them. (Recipe updated to add vanilla, more cinnamon and reduce oil slightly (original calls for 1 1/2 cups oil) since we prefer them with these alterations.)

4 eggs
2 cups sugar
1 (16 ounce) can pumpkin
1 teaspoon vanilla extract
1 1/4 cups vegetable oil (yes, 1 1/4 cups)
3 cups flour
2 teaspoons baking soda
2 teaspoons baking powder
2 teaspoons cinnamon
1 teaspoon salt
12 ounces semi-sweet chocolate chips (Regular or mini, I like mini best)

Steps:

  • In large mixing bowl beat eggs, sugar, pumpkin, vanilla and oil until smooth.
  • Mix dry ingredients together and mix into pumpkin mixture. Fold in chocolate chips.
  • Fill greased or paper-lined muffin cups 3/4 full.
  • Bake at 400 F for 16-20 minutes.
  • Let cool before taking out of pan.

1-1/2 cups all-purpose flour
3/4 cup sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 large egg, room temperature, lightly beaten
1/2 cup canola oil
1/4 cup 2% milk
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 cup shredded zucchini
1/4 cup miniature semisweet chocolate chips
1/4 cup chopped walnuts

Steps:

  • In a bowl, combine flour, sugar, baking soda, cinnamon and salt. Beat the egg, oil, milk, lemon juice and vanilla; stir into dry ingredients just until moistened. Fold in zucchini, chocolate chips and walnuts. Fill 12 greased or paper-lined muffin cups two-thirds full., Bake at 350° for 20-25 minutes or until a toothpick comes out clean. Freeze option: Freeze cooled muffins in an airtight container. To use, thaw at room temperature or, if desired, microwave each muffin on high for 20-30 seconds or until heated through.

1 cup wheat bran
