EASY BAKED EGGS

Steps:
- Preheat oven to 375°F (175°C).
- Using a 6-cup muffin pan*, butter the muffin cups.
- Crack one egg into each muffin cup. Add your choice of additional ingredients.
- Bake 8 to 10 minutes. Serve immediately.

BAKED EGGS WITH CANADIAN BACON, SPINACH, AND AGED CHEDDAR
Steps:
- Heat oven to 350 degrees F and arrange rack in middle. Butter 4 (6-ounce) ramekins and set aside.
- Melt 1 tablespoon butter in a large frying pan over medium heat. When it foams, add onion, season well with salt and freshly ground black pepper, and cook until softened, about 1 minute. Add spinach and cook until spinach is well wilted, about 2 minutes.
- Place ham on bottom of ramekins and top with spinach. Crack eggs into ramekins, place 1 tablespoon cream over each egg, and divide half of cheese evenly among ramekins.
- Put ramekins on a baking sheet and bake, rotating pan halfway through baking, until whites are just set but yolks are still runny, about 15 to 18 minutes.
- Meanwhile, spread remaining 2 tablespoons butter on 4 slices sourdough bread. Top with grated cheese and toast until golden brown. Serve eggs with toast.

Steps:
- Mix bread, cheese, ham, bell pepper and onion; spread in a 13x9x2 inch baking dish treated with nonstick spray.
- Whisk eggs and milk, and pour over top. Cover dish with foil and freeze.
- To prepare for serving, thaw dish, and bake uncovered in a preheated 375 oven for 45 minutes.

STEAK AND EGG BURRITOS (OAMC)
This evolved from a camping recipe that my DH and I usually come up with on Sunday mornings before we break-down camp. I decided to make them easy to travel so that DH wasn't stopping at the local burrito shop and getting stuff that wasn't included in his diet. Time includes marinating time.

- In a medium bowl, combine Worcestershire sauce, olive oil, lime juice, cilantro, tomatoes, onion, salt and pepper.
- Place steak in a shallow non-metallic container and cover with marinade. Cover container and place in refridgerator for 1-4 hours.
- Grill steak on outside grill or under a preheated broiler until desired doneness has been achieved. (I like mine medium-rare) Remove from heat and let sit for 5 minutes before cutting into small cubes. Set aside.
- In a non-stick pan, cook and scramble eggs until done. Remove from pan and set aside.
- In same pan, pour in marinade and bring to a simmer over medium heat. Add peppers, mushrooms and garlic; simmer 10 minutes or until liquid is almost gone.
- Warm tortillas on a grill or in microwave. (I like to line them up on my counter and top all at once.) Divide eggs into 6 portions and place on tortillas. Repeat process with meat and place on top of eggs. Spoon vegetables evenly between all 6 tortillas.
- Fold each tortilla like a burrito, wrap in Wax paper or Aluminum Foil and place in Zip Baggie.
- I throw these right in the freezer. Then in the morning, I can pop the ones with Wax paper right in the microwave, or the ones with Aluminum foil right in the toaster oven for about 2-3 minutes each. Time may vary according to your appliance.
MAKE AHEAD MASHED POTATOES (OAMC)

- ASSEMBLY DIRECTIONS:.
- Peel and quarter potatoes.
- Place the potatoes in a saucepan and cover completely with water.
- Bring to a boil, then gently cook until tender.
- Drain well.
- In a large bowl, combine potatoes, cream cheese, egg, garlic powder and salt.
- Mash well by hand or with and electric mixer.
- Spoon potatoes into spray-treated or greased 3 quart casserole or 9x13 pan.
- Drizzle or brush melted butter over potatoes.
- Sprinkle with paprika for color if desired.
- FREEZING AND COOKING:.
- Label and freeze in freezer bags.
- TO SERVE:.
- Thaw completely.
- Bake at 375 degrees for 30-40 minutes until the top is golden.

BREAKFAST BAGEL SANDWICHES (OAMC)
While searching for a great make ahead breakfast I tried this and it worked great! Hope you enjoy it too :)

Steps:
- Slice each bagel in half.
- Lightly butter each side.
- To cook eggs, lightly grease a mug or small bowl or ramekin; beat eggs in that bowl and microwave 30 seconds; remove egg in one piece and repeat for remaining eggs. Or take Swan Valley Tammi's idea and pre-cook the bacon, chop it up and add it to the eggs. Pour into greased muffin tins. Bake at 400 degrees Fahrenheit for 12 minutes so all 12 egg/bacon 'patties' are done at the same time.
- On the bottom half of the bagel place cooked egg.
- Top each egg with approximately 1 Tablespoon grated cheese.
- Stack bacon on top.
- Complete sandwich with top of bagel.
- Cool slightly; wrap in plastic wrap individually; place in a large labeled zipper freezer bag.
- To serve, remove 1 bagel sandwich from bag and remove wrapping.
- Place upside down in microwave and heat for 30 seconds.
- Place right side up and microwave for 30 seconds more or until heated through. **Time may vary in your microwave**.
- Eat warm.

Serve with toast and fresh fruit and you have a first-class brunch meal.
