While cake donuts are traditionally fried, they're just as delicious baked in the oven, with far less cleanup. Toss in powdered sugar or finish with a simple glaze and sprinkles or toasted coconut -- you can't go wrong!

1/2 cup (1 stick) unsalted butter, room temperature, plus more for pans
2 1/2 cups unbleached all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/8 teaspoon freshly grated nutmeg
3/4 teaspoon kosher salt
1/2 cup granulated sugar
1/4 cup light brown sugar
2 eggs, room temperature
1 teaspoon pure vanilla extract
1 cup whole milk, room temperature

Steps:

  • Preheat oven to 425 degrees. Lightly brush two standard donut pans with butter. In a medium bowl, whisk flour, baking powder, baking soda, nutmeg, and salt; set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl with a hand mixer, beat butter and sugars on high speed until light and fluffy, about 3 minutes. Reduce mixer speed to medium; add eggs and vanilla, beating until combined, scraping down the sides of the bowl as needed. Reduce speed to low. Add flour mixture in two batches, alternating with milk, and beat just until combined.
  • Transfer batter to a piping bag or a resealable plastic bag, and snip a 1/2-inch hole in one corner of bag. Divide mixture evenly between prepared pans. Bang pans several times on counter to release air bubbles.
  • Bake until tops of donuts spring back when lightly pressed, 12 to 14 minutes. Let cool 10 minutes, then transfer to a wire rack to cool. To decorate, see Variations below.

Steps:

  • Preheat oven to 425 degrees and grease a 12 hole donut pan. In a large mixing bowl stir together flour, sugar, baking powder, nutmeg, and salt. Add buttermilk, eggs, and butter, stir until just combined.
  • Divide batter between prepared donut pan. Bake until toothpick comes out clean, 7 to 9 minutes. Let donuts cool in pans for 5 minutes then take them out of pan and let cool on a cooling rack.

2 cups all-purpose flour
1 1/2 cups sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon kosher salt
1 extra-large egg, lightly beaten
1 1/4 cups whole milk
2 tablespoons unsalted butter, melted
2 teaspoons pure vanilla extract
8 tablespoons (1 stick) unsalted butter
1/2 cup sugar
1/2 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 350 degrees. Spray 2 doughnut pans well.
  • Into a large bowl, sift together the flour, sugar, baking powder, cinnamon, nutmeg, and salt. In a small bowl, whisk together the egg, milk, melted butter, and vanilla. Stir the wet mixture into the dry ingredients until just combined.
  • Spoon the batter into the baking pans, filling each one a little more than three-quarters full. Bake for 17 minutes, until a toothpick comes out clean. Allow to cool for 5 minutes, then tap the doughnuts out onto a sheet pan.
  • For the topping, melt the 8 tablespoons of butter in an 8-inch saute pan. Combine the sugar and cinnamon in a small bowl. Dip each doughnut first in the butter and then in the cinnamon sugar, either on one side or both sides.

3 cups flour
4 1/2 teaspoons baking powder

  • Blend 1/2 cup plus 2 tablespoons butter with 1 cup of sugar.
  • Add the eggs and mix well.

  • Fill greased muffin tins 2/3 full.

3 cups / 360g all-purpose / cake flour (plus ½ cup / 60g extra for kneading)
1 teaspoon salt
1 Tablespoon / 10g instant dry yeast
¼ cup / 50g white or brown sugar
¼ cup / 60ml buttermilk OR plain unflavoured yoghurt OR SEE NOTE 1
1 cup / 250ml milk
2 teaspoons vanilla extract
½ cup / 1 stick / 113g butter (melted)

Steps:

  • Add flour, salt, instant dry yeast and sugar into a large bowl and using a whisk or fork, mix to combine. ( Dry ingredients)
  • Melt the butter in a pot or bowl.
  • In another pot or microwave, safe measuring jug mix together the buttermilk, milk vanilla extract. Heat this mixture until just lukewarm. It should not be hot or too cold, just lukewarm. Pour the melted butter into this milk mixture and stir to combine. ( Wet ingredients)
  • Pour the wet ingredients into the dry ingredients and mix to combine. Turn out the dough onto a floured surface and knead for 5 to 8 minutes until smooth.
  • Place the dough into a mixing bowl, which should be lightly coated with oil. Keep the bowl in a warm draft-free area of your kitchen. Allow the dough to rise for 45 minutes to 1 hour.
  • Punch down the dough and roll or press it out to ½ inch ( about 1 ½ cm ) thickness. Use either cookie cutters or a doughnut cutter to cut the dough. Place the cut doughnuts on a baking sheet, lined with parchment/baking paper. Leave to rise for 15 to 20 minutes.
  • Bake for 5 to 8 minutes in a preheated oven of 350°F / 180°C / Gas mark 4 until golden brown.
  • Decorate with either melted chocolate, glace icing, cinnamon sugar or as preferred.
  • If you are going to be rolling these doughnuts in cinnamon sugar, then it is best if dip the hot baked doughnuts in a bit of melted butter first. This will ensure an even coating of the cinnamon sugar.

2 cups fresh apple cider
2 cups all-purpose flour
¾ teaspoon baking powder
¾ teaspoon baking soda

½ cup white sugar
½ cup packed brown sugar
½ cup warm milk
6 tablespoons unsalted butter, melted, divided
¾ teaspoon vanilla extract
1 large egg
1 cup white sugar, or as needed
1 tablespoon ground cinnamon, or as needed

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Butter two 6-cup donut pans.
  • Pour apple cider into a saucepan and place over medium heat. Bring to a simmer and let it cook, watching carefully, until the cider is reduced to 1/2 cup. If it reduces too much, add enough water to make 1/2 cup. Set aside until needed.
  • Add flour, baking powder, baking soda, salt, 1 teaspoon cinnamon, cardamom, and nutmeg to a large bowl. Mix with a whisk until combined and set aside until needed.
  • Whisk 1/2 cup white sugar, brown sugar, milk, 2 tablespoons melted butter, vanilla extract, and egg together in another bowl until combined. Add the apple cider reduction and the dry ingredients. Whisk together to form a slightly thick batter; do not overmix.
  • Spoon or pipe the batter into the prepared donut pans, filling them about 3/4 of the way up.
  • Bake in the center of the preheated oven until the tops are lightly browned, and the donuts spring back slightly to the touch, 10 to 12 minutes. Let cool for 10 minutes in the pans before removing to a sheet pan lined with a silicone baking mat. Cut out any donut holes as necessary.

Glaze:

Steps:

  • Preheat oven to 350°F.
  • Grease donut pan or spray with cooking spray.
  • In a large mixing bowl, whisk together flour, granulated sugar, baking powder, cinnamon and salt.
  • In a separate medium mixing bowl, beat egg, then add in buttermilk, melted butter and vanilla.
  • Add the dry ingredients to the wet ingredients and stir just until combined.
  • Gently fold in the blueberries.
  • Transfer batter, in three separate batches to a decorating bag or ziplock bag. Once filled, cut a hole in the bottom of the bag that is just a bit smaller than the width of the donut shape. You can also spoon in the batter by hand using a small spoon. Be careful not to overfill.
  • Bake in 350°F oven for 15 minutes.

1/4 cup buttermilk
1 teaspoon vanilla
1 stick (4 ounces) unsalted butter, at room temperature

1 stick (4 ounces) unsalted butter, melted
1 cup granulated sugar mixed with 1 teaspoon cinnamon

Steps:

  • Preheat the oven to 350 degrees F. Spray four 6-cavity donut pans with nonstick baking spray.
  • In a large mixing bowl, combine the flour, baking powder, salt, cinnamon, nutmeg and lemon zest. Whisk for 30 seconds to distribute the leavening.
  • In a liquid measure cup, combine the cider, buttermilk and vanilla.
  • In the bowl of a stand mixer fitted with the paddle attachment, combine the butter, brown sugar and granulated sugar. Mix on high until light and fluffy, 3 to 4 minutes. Scrape down the bottom and sides of the bowl.
  • Add the eggs, one at a time, mixing well between each addition. Scrape the bottom and sides of the bowl.
  • With the mixer on low, add one-third of the flour mixture and then half of the cider mixture. Continue alternating between the two until the batter is just combined. Remove the bowl from the stand mixer and, using a large rubber spatula, fold the batter a few times to make sure the ingredients are well distributed.
  • Transfer the batter to a piping bag or a large zip-close bag with a corner snipped off, and pipe into two of the donut pans. Top each pan with a second, inverted pan and use clips to hold them in place. (Some pans come with clips; otherwise, use metal hardware or paper clips.) Bake until the cake just springs back when gently touched, 15 to 20 minutes.
  • Turn the donuts out onto a cooling rack; immediately brush with melted butter, then dip in the cinnamon sugar.

1/4 cup granulated sugar
1 1/8 cups whole milk, warmed
3 teaspoons instant yeast
2 large eggs
1 1/4 sticks unsalted butter, melted
4 cups all-purpose flour, plus more for dusting
1/2 teaspoon salt
4 cups vegetable shortening, for frying (or peanut or safflower oil)
3 cups powdered sugar
1/2 teaspoon salt
1/2 teaspoon vanilla extract

Steps:

  • For the doughnuts: Add the granulated sugar to the warm milk in a medium bowl, and then add the yeast. Allow it to sit until the yeast starts to bubble, 5 to 10 minutes.
  • In a small bowl, beat the eggs and then pour them into a bowl with the melted butter, whisking constantly. Add the butter/egg mixture to the bowl of an electric mixer. Pour in the milk/sugar/yeast mixture. With the hook attachment, turn the mixer to low speed.
  • Mix the flour and salt in a bowl, and then retrieve 1/2 cup at a time and add it to the mixing bowl, allowing it to slowly incorporate into the liquid mixture.
  • Continue mixing for 5 minutes after the flour is combined. Stop the mixer, scrape the bowl and then mix about 30 seconds more. Then place the dough in a lightly-oiled bowl, cover it with plastic wrap and refrigerate, 8 to 12 hours.
  • The next morning, remove the dough from the fridge and allow it to come to room temperature and rise, 1 1/2 to 2 hours. Put the dough in a warm spot, if necessary, to facilitate rising.
  • Turn out the dough on to a floured surface and roll it out to about 1/4-inch thick. Use a doughnut cutter (or 2 concentric cutters) to cut out the doughnuts. Remove the holes and transfer the doughnuts to a lightly-floured baking sheet lined with a baking mat or parchment. Then - and this is the vital part - cover the doughnuts lightly with tea towels and place it in a draft-free area, at least 1 1/2 to 2 hours. It will take that long for them to rise. If they don't seem to be rising much, move the pan to a warm place.
  • Melt the shortening in a pot over a medium-high heat until it reaches 350 degrees F on a candy thermometer. (Or you can drop one of the doughnut holes in the oil, if it sizzles and immediately rises to the surface, the oil is ready.) The doughnuts should immediately float to the top and puff up. Then use a metal spoon or spatula to carefully flip them over to the other side. Remove them from the oil as soon as they're golden brown on both sides (this should take less than 1 minute in total). At the end, drop in the doughnut holes and fry them until they are golden brown.
  • Place the doughnuts on paper-towel-lined-plates to drain. Don't worry if they're a little imperfect; if your fingers leave impressions when you dropped them into the oil, that just means they were extra light and fluffy.
  • For the glaze: To glaze the doughnuts, mix the powdered sugar, 1/2 cup cold water, salt and vanilla in a bowl until smooth. Drop in the doughnuts one at a time. Quickly turn them over then remove them. Place them on a rack so any excess glaze can drip off.
  • To make the most of the glaze, set the holes underneath the doughnuts so they can catch the extra good stuff.

1 1/3 cups warm milk, 95 to 105 (divided)
2 1/4 teaspoons active dry yeast
2 tablespoons butter
2/3 cup granulated sugar
2 large eggs
5 cups all-purpose flour (alternately, white whole wheat might work, haven't tried it yet)
1 pinch nutmeg, freshly grated
1 teaspoon fine grain sea salt
1/2 cup unsalted butter, melted
1 1/2 cups sugar
1 tablespoon cinnamon

Steps:

  • Place 1/3 cup of the warm milk in the bowl of an electric mixer. Stir in the yeast and set aside for five minutes or so. Be sure your milk isn't too hot or it will kill the yeast. Stir the butter and sugar into the remaining cup of warm milk and add it to the yeast mixture.
  • With a fork, stir in the eggs, flour, nutmeg and salt, just until the flour is incorporated. With the dough hook attachment of your mixer beat the dough for a few minutes at medium speed. This is where you are going to need to make adjustments - if your dough is overly sticky, add flour a few tablespoons at a time. Too dry? Add more milk a bit at a time. You want the dough to pull away from the sides of the mixing bowl and eventually become supple and smooth. Turn it out onto a floured counter-top, knead a few times (the dough should be barely sticky), and shape into a ball.
  • Transfer the dough to a buttered (or oiled) bowl, cover, put in a warm place (I turn on the oven at this point and set the bowl on top), and let rise for an hour or until the dough has roughly doubled in size.
  • Punch down the dough and roll it out 1/2-inch thick on your floured countertop. Most people (like myself) don't have a doughnut cutter, instead I use a 2-3 inch cookie cutter to stamp out circles. Transfer the circles to a parchment-lined baking sheet and stamp out the smaller inner circles using a smaller cutter. If you cut the inner holes out any earlier, they become distorted when you attempt to move them. Cover with a clean cloth and let rise for another 45 minutes.
  • Bake in a 375° oven until the bottoms are just golden, 8-10 minutes - start checking after 8. Meanwhile, place the butter in a medium bowl. Place the sugar and cinnamon in a separate bowl.
  • Remove the doughnuts from the oven and let cool for just a minute or two. Dip each one in the melted butter and a quick toss in the sugar bowl. Serve immediately.
