Date Balls image

A holiday tradition. My mother made these date balls every year at Christmas time. They may be stored in a plastic or glass container. If the weather is warm, keep them in the refrigerator. Make sure balls are cooled thoroughly before storing.

1 (8 ounce) package chopped pitted dates
1 cup white sugar
½ cup margarine
3 cups crispy rice cereal
1 cup chopped pecans
1 teaspoon vanilla extract
½ cup confectioners' sugar, or as needed

Steps:

  • Cook and stir dates, sugar, and margarine in a large saucepan over low heat until sugar dissolves; remove from heat. Fold crispy rice cereal, pecans, and vanilla extract into the date mixture until evenly mixed.
  • Grease your hands with margarine. Roll date mixture into 1-inch balls.
  • Spread confectioners' sugar into a shallow dish; roll date balls in confectioners' sugar to coat.

1 cup butter
1 1/2 cups sugar
2 eggs
2 tablespoons milk
4 cups Rice Krispies
2 cups dates, chopped
1 teaspoon salt
1 cup pecans, chopped
1 teaspoon vanilla
0.5 (14 ounce) package flaked coconut

Steps:

  • Melt butter and sugar carefully.
  • Add chopped dates and cook until it boils. Take off heat and allow to cool slightly.
  • Add milk and salt into well beaten eggs and stir into hot date mixture.
  • Boil mixture 2 minutes.
  • Add vanilla and nuts.
  • Let cool, then add Rice Crispies and stir.
  • Butter hands, and shape into well rounded tablespoon size balls and roll in coconut.
  • Store in air-tight container.

1 cup dates, pitted and chopped
1 teaspoon water
1 cup chopped walnuts
2 egg white
1 cup packed brown sugar
1 tablespoon butter
1 cup shredded coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a small saucepan over low heat, combine butter, water, and dates. Bring to a boil, then remove from heat, and let stand for 10 minutes.
  • Pour date mixture into a medium bowl. Mix in the brown sugar and chopped nuts.
  • Whip egg whites in a small bowl until stiff. Fold egg whites into date mixture. Roll dough into 2 inch balls and roll in shredded coconut. Place on cookie sheets about 2 inches apart
  • Bake for 12 to 15 minutes in the preheated oven. Let cool on wire racks.

There are a few classic recipes I absolutely have to pull out every Christmas, and this is one of those. These chewy balls are surprisingly crunchy and they look so pretty on a holiday candy tray.

1/2 cup butter
1 cup chopped dates
3/4 cup sugar
2 eggs, beaten
1 cup chopped pecans
1 cup crisp rice cereal
1 teaspoon vanilla extract
2 cups sweetened shredded coconut

Steps:

  • In a saucepan, melt butter over low heat. Stir in the dates, sugar and eggs. Cook and stir over low heat for 10-15 minutes or until thermometer reads 160°. Remove from the heat; stir in the pecans, cereal and vanilla. When cool enough to handle, shape into 1-in. balls; roll in coconut. Place on waxed paper-lined baking sheets. Refrigerate for 1-2 hours or until firm. Store in an airtight container in the refrigerator.

2 cups Rice Krispies
1 cup chopped pistachios or almonds
1/3 cup butter, cubed
1 package (8 ounces) pitted dates, finely chopped
1 cup sugar
1 teaspoon vanilla extract
Confectioners' sugar, optional

Steps:

  • In a large bowl, combine Rice Krispies and pistachios. In a large saucepan, combine butter, dates and sugar. Cook and stir over medium heat until mixture is combined., Remove from heat. Stir in vanilla. Pour over Rice Krispies mixture; stir to coat. When cool enough to handle, press into 1-1/4-in. balls. Cool. If desired, roll in confectioner's sugar. Store in an airtight container at room temperature.

These date balls, which I make each year for Diwali, are nutty and fudgy-without any chocolate. They're the perfect Diwali sweets.

Number Of Ingredients 4

2 cups whole milk
3 cups rinsed and deseeded dates, coarsely chopped
1-1½ cups raw pistachios, coarsely chopped
½ cup raw almonds, coarsely chopped

Steps:

  • Heat the milk in a large nonstick saucepan. As the milk comes to a boil, add the chopped dates and stir well. The dates will begin to disintegrate and thicken the milk. Cook and stir this mixture continuously over the next 10 to 15 minutes on medium low, or until the mix begins to leave the sides of the pot.
  • Stir in half of the crushed pistachio and all the crushed almonds. Mix well until the nuts are evenly distributed. Cool until ready to handle.
  • Place 1 Tbsp. crushed pistachios in a small bowl. Using a 1" or smaller ice cream scoop, portion out the date mixture and drop it into the bowl with the pistachio. Roll the date morsel until it is coated in crushed pistachio sand is dry enough to handle. Set aside. Repeat until all the date mixture is portioned and rolled in crushed pistachio. Store in the fridge. Serve at room temperature.

My husband and I don't care for the anise, so I tweeked the recipe and used the rice crispy cereal version. my husband loves them. You may also decide to roll into flaked coconut tinted with food coloring for a festive look instead of the powdered sugar. :) Prep time includes cooling time.
