- Preheat the oven to 350 degrees F.
- For the pineapple: In a 10-inch cast-iron skillet over medium heat, melt the butter and add the brown sugar. Cook, stirring constantly, until the sugar melts, about 2 minutes. Remove from the heat and arrange the pineapple slices in the skillet. Fill in the spaces with the crushed pineapple. Set aside.
- For the cake: Meanwhile, combine the cake ingredients in this fashion: In one bowl, whisk together the flour, baking powder and salt. In bowl number 2, combine the milk, vanilla extract and 1/4 cup of the reserved pineapple juice.
- In the bowl of a stand mixer fitted with a paddle attachment, combine the granulated sugar and coconut oil on medium speed until thick and creamy, about 3 minutes. Beat in the egg. Add half of the flour mixture and mix on low until just combined. Add the milk mixture and stir until just combined. Add the rest of the flour and mix until combined, about 1 minute.
- Pour the batter over the pineapple slices in the skillet and spread evenly. Bake until the top is golden brown and a toothpick comes out clean when inserted, 25 to 35 minutes, checking after 20 minutes to make sure the top isn't getting too brown. If it is, cover loosely with aluminum foil.
- Let cool for 15 minutes. Cover with a cutting board or large plate and invert the cake. Ta daaaaaaa, you are ready to eat!

- Preheat the oven to 375 degrees F (190 degrees C).
- Melt 1 stick butter in the bottom of a cast iron skillet over medium heat, about 3 minutes. Remove from heat and sprinkle brown sugar evenly over butter. Add pineapple slices on top of sugar in 1 decorative layer with a cherry in the middle of each pineapple ring. Set aside.
- Sift flour, baking powder, and salt together in a bowl.
- Cream sugar and butter together in a bowl. Add eggs and mix. Add flour mixture and milk in an alternating fashion. Add vanilla extract and mix well. Pour mixture evenly over pineapples in the skillet.
- Bake in the preheated oven until cake is golden brown, about 40 minutes.
- Let cake cool in the skillet for 10 minutes before inverting onto a serving plate. Serve warm.

PINEAPPLE UPSIDE DOWN CAKE

- Combine butter and brown sugar in a 12-inch cast iron skillet and heat until bubbly. Add pineapple and caramelize to a deep golden brown, turning once. Remove from skillet and set aside. Pour rum and cream into a skillet and cook over low heat 5 minutes, until thickened, stirring constantly with a whisk. Remove from heat.
- Butter a 10-inch round cake pan and line with parchment paper. Arrange pineapple rings to cover bottom of pan. Pour cooled sauce over pineapple and set pan aside.
- Sift together flour, baking powder, soda and salt. Set aside
- In a large bowl cream butter and sugar until light and fluffy. Add egg yolks, one at a time, beating after each addition. Add vanilla. Combine pineapple juice and buttermilk. Alternately add sifted dry ingredients and juice/buttermilk mixture to creamed mixture (begin and end with dry ingredients.) Whip egg whites to soft peaks and fold into batter. Bake at 350 degrees about 1 hour, or until a tester comes out clean. Invert onto a serving platter.

- Preheat oven to 350 degrees F.
- In a microwave-proof dish, bring the milk to a boil. Remove the milk from the microwave and add the cornmeal. Stir and let soak at room temperature for 30 minutes. Set aside.
- Melt the butter in a 10-inch cast iron skillet over medium heat. Once the butter has melted, add the brown sugar and stir until the sugar dissolves, about 5 minutes. Remove the skillet from the heat and carefully place 1 slice of pineapple in the center of the pan. Place the other 5 slices around the center slice in a circle. Place the cherries in the centers of the pineapple slices and sprinkle the nuts evenly over the fruit. Drizzle pineapple juice over top.
- Sift the flour, baking powder, and salt into a medium mixing bowl and whisk to combine.
- In a separate mixing bowl, whisk the eggs. Add the sugar to the eggs and whisk to combine. Add the canola oil and whisk. Add the cornmeal and milk mixture to the egg mixture and whisk to combine. Add this to the flour and stir just until combined. Pour the batter over the fruit in the skillet and bake for 40 to 45 minutes. Remove from oven and let cool for 30 minutes in the skillet. Set a platter on top of the skillet and carefully invert the cake. Serve.

- Preheat your oven to 325 degrees.
- Combine the cake mix, eggs, oil and water in a large mixing bowl and beat till batter is smooth and even.
- In a large cast iron skillet oven medium high heat, melt the stick of butter. Once bubbly turn off heat and add the brown sugar and mix till well blended.
- Place your pineapple rings evenly in the sugar/butter fallowed by a cherry fr inside each ring.
- Pour the cake batter over the rings and cherries and place in the oven for 40 -45 minutes. Insert a tooth pick to check if the cake is done. A clean toothpick indicates a ready cake.
- Allow the skillet to cool for 10 minutes before removing the cake. If you wait too long the cake may stick and wont come out clean and pretty.
- With a large round platter face down over the skillet hold the plate and skillet firmly and flip them so the plate is down and the skillet is on top. Carefully lift the skillet away from the plate.
- Let the cake stand a few hours before serving, garnish with a dollop of whipped cream and enjoy :).

IRON SKILLET PINEAPPLE UPSIDE-DOWN CAKE
My boyfriend loves pineapple upside down cake and any dish that involves the iron skillet, and I am the famed cake baker in the family. That is how this cake and I introduced ourselves to one another. I am not a fan of cakes without yummy frosting or chunks of fruit. Until I put this recipe together and am in love with the cake including the pineapples! I used a 10 inch iron skillet to bake this.

- 1. Preheat oven 350 degrees.
- 2. Melt butter in skillet
- a. Sprinkle brown sugar over butter to ¼ inch thick on bottom of skillet.
- b. Place pineapple slices side by side inside pan.

- 3. Mix shortening, sugar, eggs, and vanilla with electric mixer until smooth.

PRIZE WINNING PINEAPPLE UPSIDE-DOWN CAKE ON THE BBQ

- Heat grill to 350 degrees F.
- Place a 10-inch cast iron skillet in the center of the grill and heat thoroughly.
- Meanwhile, make cake batter: Sift the cake flour, baking powder, and salt together; set aside. With a mixer, cream together the butter, sugar, and egg yolks. With the mixer on low speed, add the dry ingredients to creamed mixture, alternating with the milk. Add vanilla extract. In a separate mixing bowl, beat the egg whites until stiff peaks form and then fold them into the batter. Set batter aside.
- Place the 1/2 stick butter and the brown sugar in the skillet and let the mixture melt and begin to caramelize. When lightly caramelized, place pineapples and enough cherries to cover on top, in a decorative pattern. Then pour the cake batter over, filling to within 1/2-inch of the top of the skillet. Transfer the skillet to a large foil pan and cover with foil; be careful handling the skillet as the handle will also be very hot. Return to the grill and pierce the foil in the corners to allow steam to escape during the cooking process.
- Grill cake at 350 degrees F until cake is golden brown and springs back when lightly touched with your finger, about 45 minutes. Remove from the grill and run a knife around the edge of the skillet to free the cake; again, be careful handling the skillet as the handle will also be very hot. While cake is still hot, place a serving plate on top of the skillet and carefully turn the cake over onto the plate. Serve warm or cold.

- In bowl, mix flour, first six tablespoons of butter, eggs, baking powder, sugar, salt, and milk with a spoon to form a lumpy batter.
- Melt the remaining two tablespoons of butter and brown sugar in cast iron skillet on low heat.
- When sugar and butter are melted, sprinkle in about 1 cup of well-drained fruit. Pour batter mixture on top so that all fruit is covered.
- Bake in center of oven at 350 degrees for 35 to 40 minutes until center of cake tests done.
- Remove skillet from oven and immediately invert the skillet onto platter.
- If the cake doesn't drop on the first try, re-heat the skillet for a minute or two on the stovetop to loosen the sugars, but be careful as the fruit and sugar is very hot.

- Preheat oven to 400 degrees F (205 degrees C).
- Melt the butter. Brush a little bit of the butter on the inside of a 9 inch round cake pan, or a cast iron skillet.
- Mix 5 tablespoons of the butter with the dark brown sugar and 1/4 cup of the pineapple juice. Place this mixture in the bottom of the cake pan. Arrange the pineapple rings on the brown sugar mixture in a decorative pattern (be creative). Set pan aside.
- Stir together the flour, salt, white sugar, and baking powder.
- Separate the eggs. Beat the whites until stiff but not dry.
- Beat two of the egg yolks until lemony yellow. Stir in the remaining 1/2 cup pineapple juice, vanilla, and remaining melted butter. Add this mixture to the flour mixture. Gently fold in the egg whites. Pour batter over the top of the brown sugar and pineapple rings.
- Bake at 400 degrees F (205 degrees C) for 30 minutes, or until toothpick comes out clean. Let cake cool in pan for 10 minutes then cover pan tightly with a serving dish and invert so that the pineapple side is up.

- 1. Preheat oven to 350. Melt 2/3 cup of butter; Stir in brown sugar.
- 2. Spread in bottom of 12-inch iron skillet or a 13 X 9 X 2 pan. DO NOT GREASE.

- 1. Preheat oven to 350. To make cake, in large mixing bowl, put the flour, baking powder, salt, sugar, 1/2 stick butter, the shortening, milk, eggs, vanilla and reserved pineapple juice. Mix til well combined. Set aside. Melt remaining 1/2 stick butter in 10 to 12 inch iron skillet over medium heat. Swirl to thoroughly coat the skillet.
- 2. Sprinkle brown sugar over the butter, making sure it's evenly distributed. You want the entire surface of the butter to be covered in brown sugar. Don't stir. As soon as the sugar dissolves, put a layer of pineapple slices over the top. If desired, put maraschino cherries in center of pineapple slices.
- 3. Pour batter evenly over pineapple slices. Evenly distribute it over the surface of the pineapple. Gently spread to even out the surface. Bake the cake for 30 to 40 minutes til toothpick inserted in center comes out clean. The cake will be slightly uneven on top, but don't worry. the top will soon be upside down. Get it? Immediately run a knife around the edge of the cake. Then put a cake plate upside down on top of the skillet. Very carefully invert skillet so that the cake is turned upside down onto the cake plate.
