Steps:
- Heat oven to 400°F.
- Combine all quesadilla ingredients except tortillas and butter in bowl. Brush 1 side of each tortilla with butter. Place tortillas, buttered-side down, onto ungreased baking sheet.
- Spread about 1/2 cup filling on each tortilla; fold in half. Press together lightly.
- Bake 7-10 minutes or until heated through. Cut each quesadilla into 4 wedges. Serve with desired toppings.

Steps:
- Shred crab meat; mix together with sour cream, lime juice, and green onions in a small bowl.
- Season to taste with salt and pepper.
- Heat griddle or small frying pan with a small amount of oil or cooking spray.
- Take a tortilla, place about 1/8 of crab mixture on it and spread evenly.
- Top with 1oz.
- (about 1/4 cup) cheese and sprinkle with some chopped cilantro.
- Place on hot griddle; when cheese starts to melt, fold in half.
- Allow to heat through and brown nicely, then remove from heat.
- Repeat with other tortillas.
- Quesadillas can be kept warm on a stoneware plate or baking dish in the oven on warm while you are busy with the others.
- Serve topped with a dallop of sour cream or guacamole, and wedges of lime, if you wish.

The filling can be made ahead of time and refrigerated for up to 1 day. Place the tortillas on a baking sheet. Spread about 1/4 cup of the filling on one half of each tortilla. Fold the tortilla over to cover the filling. Brush the outsides of the tortilla with the melted butter. - Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Cook and stir onion, red bell pepper, and green bell pepper in the hot oil, stirring frequently, until onion is translucent and peppers are soft, 6 to 8 minutes.

- Gather the ingredients.
- Preheat oven to 350 F. Take a piece of aluminum foil that is big enough to cover a cookie sheet front and back. Center it on a cookie sheet.

- Place tortilla on work surface. Sprinkle one side with a bit of cheese, top with Filling of Choice. Sprinkle with corn*, coriander and top with cheese. Fold in half.
- Preheat non stick skillet over medium low heat (no oil, if pan is not non-stick use 2 tsp oil).
- Place quesadilla in skillet, press down lightly, cover with lid. Cook for 3 minutes until underside is super golden brown and crispy.
- Carefully flip over the folded edge (see video). Press down lightly. Cook for 3 minutes until crispy (no lid).
- Transfer to cutting board, cut in half. Serve immediately!

- Mix ingredients in a small bowl. Use for one of the Fillings Options below.
- Heat oil in a skillet over high heat. Add onion and garlic, cook for 2 minutes.
- Add beef and cook, breaking it up as you go. Once it changes from pink to brown, add capsicum. Cook for 1 minute.
- Add tomato paste, water and Spice Mix. Cook for 2 minutes. Transfer to bowl, cool.
- Drizzle chicken with 1 tbsp oil, toss to coat. Sprinkle over Spice Mix, toss well to coat.

- Add beans, corn, tomato paste, water and Spice Mix. Cook for 2 minutes. Transfer to bowl, cool.

Unlike most quesadillas, these are baked, not fried. These are also cut into thirds for appetizers, but if you'd like, leave them whole and have them for a meal! I love crab, and I love cheese. I also tend to like flour tortillas! So this is something that worked out well in my appetizer repertoire!
