BAKED COD WITH LEMON AND DILL
Baked cod with lemon and dill is a Swedish favorite. The addition of potatoes and vegetables makes it a easy one-dish dinner, perfect for a busy weeknight.

Steps:
- Preheat oven to 400 F.
- Coat a 9 x 13 inch baking dish with cooking spray.
- In a small mixing bowl, combine olive oil, lemon juice, garlic, salt, pepper, and dill.
- Place quartered potatoes in baking dish; cover with half of the olive oil lemon mixture. Microwave on high for 5 minutes. Remove from microwave.
- Place the cod and sliced zucchini in the baking dish with the potatoes. Coat with the remaining olive oil lemon mixture. Top with lemon slices.
- Bake for 12 to 14 minutes, until fish is fully cooked and flakes easily with a fork. Garnish with additional fresh dill and serve.

Steps:
- Combine all ingredients except cod in a large resealable plastic bag and mix. Add cod. Seal and marinate in refrigerator for 20 minutes. Remove fish from bag: discard marinade. Place fish on a broiler pan or grill pan coated with cooking spray. Broil or grill for 4 minutes on each side or until fish flakes easily when tested with a fork.

- Place cod fillet(s) in prepared dish and brush with lemon olive oil. Evenly sprinkle feta cheese, lemon zest and dill on top. Cook, stirring, just until the spinach is wilted. Add remaining spinach and continue to cook, stirring, just until wilted. Remove from heat and stir in breadcrumbs and red pepper flakes (if using); season to taste with salt and pepper.
