Mildly spiced and slightly sweet chicken that comes out moist and tasty.

1 tablespoon mild paprika
1 tablespoon dried parsley
2 teaspoons brown sugar
1 teaspoon dry mustard powder
2 teaspoons salt
1 teaspoon black pepper
1 (3 1/2) pound whole chicken, cut into pieces
2 tablespoons vegetable oil

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Combine the paprika, parsley, sugar, mustard, salt, and pepper in a small bowl; set aside.
  • Place the chicken pieces in a 9x13 inch baking dish, and coat with the vegetable oil; arrange skin-side up. Sprinkle evenly with the spice mixture.
  • Bake the chicken in the preheated oven until no longer pink at the bone and the juices run clear, about 45 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

2 tablespoons Szechuan peppercorns
2 tablespoons coriander seeds
3/4 teaspoon dried crushed red pepper
1/2 teaspoon salt
3/4 cup chopped fresh cilantro
6 large garlic cloves
1 tablespoon minced orange peel
1 teaspoon oriental sesame oil
6 10-ounce chicken half-breasts with ribs
5 tablespoons low-sodium soy sauce

Steps:

  • Heat heavy small skillet over high heat. Add first 3 ingredients; stir until aromatic, about 2 minutes. Transfer spices and salt to processor; blend 30 seconds. Add cilantro, garlic, orange peel and oil and blend 30 seconds. (Can be prepared 3 days ahead; cover and chill.)
  • Preheat oven to 375°F. Place chicken in baking pan. Brush with soy sauce. Rub spice mixture over both sides of each chicken breast. Let stand 15 minutes. Bake until chicken is cooked through and brown, basting occasionally with pan juices and adding water to pan if juices evaporate, about 25 minutes. Baste again before serving.

1 1/2 ounces champignon mushrooms
4 shiitake mushrooms
1/2 onion
3 boneless chicken breasts
2 -3 ounces linguine
1 pinch garlic and herb seasoning
3 ounces pre-shredded mozzarella cheese
1 tablespoon sake
1 tablespoon minced garlic clove
1/2 jalapeno
2 tablespoons korean red pepper paste
1 tablespoon sugar water
1/2 tablespoon water
1 tablespoon ketchup
1 teaspoon lemon juice
1 tablespoon soy sauce

Steps:

  • Cut chicken breast into small cubes and place into a bowl. Add sake 1T and a pinch of garlic and herb seasoning over the chicken. Hand rub chicken and leave it for 30 minutes.
  • Boil water with a pinch of salt and cook pasta until it's chewy.
  • Clean mushrooms. Slice shiitake and onion.Mince jalapeno.
  • Heat canola oil in a pan over medium-high heat. Stir fry minced garlic 1T and onion. When the onion turns clear, add mushroom and jalapeno. Continue to stir fry quickly until the vegetables become tender. Place the vegetables on a dish.
  • Pour the sauce over the chicken in the pan and cook. When the chicken is done, add the vegetables and mix everything together thoroughly. Add mozzarella cheese.

2 tablespoons coriander seeds
1 tablespoon cumin seeds
1 tablespoon caraway seeds
2 tablespoons minced garlic
1 tablespoon black peppercorns
2 teaspoons kosher salt
5 tablespoons olive oil
4 large chicken breast halves with skin and bone (about 3/4 pound each)
Special Equipment
an electric coffee/spice grinder or a mortar and pestle; a 17- by 12- by 3-inch disposable aluminum roasting pan (if using charcoal)

Steps:

  • Prepare grill for direct-heat cooking with medium-hot charcoal.
  • Coarsely grind chiles, spice seeds, garlic, and peppercorns in grinder or with mortar and pestle, then stir together with salt and oil in a bowl to form a spice paste. Rub paste all over chicken.
  • Oil grill rack, then grill chicken, skin sides down first, over coals, turning over occasionally and moving around if flare-ups occur, until browned, 4 to 5 minutes total.
  • Move chicken to area with no coals underneath, arranging chicken so that thicker sides are closest to coals, then cover with inverted roasting pan and grill, turning chicken over once, until just cooked through, 15 to 17 minutes. Transfer to a platter and let stand 5 minutes before serving.
