- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and spray with cooking spray.
- Arrange chicken thighs on prepared baking sheet.
- Combine garlic salt, onion salt, oregano, thyme, paprika, and pepper together in a small container with a lid. Close the lid and shake container until spices are thoroughly mixed. Sprinkle spice mixture liberally over chicken thighs.
- Bake chicken in the preheated oven until skin is crispy, thighs are no longer pink at the bone, and the juices run clear, about 1 hour. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

OVEN-BAKED CHICKEN THIGHS
Chicken thighs have been the real bread and butter of my diet since my second year of college, when I started having to cover my own grocery bills :) This has become my all-time favorite way to spice them. If I need a side dish, I usually chop up an onion, sautee it for 30 seconds in the pan, and toss the onion and a handful of cherry tomatoes on top of the thighs and bake everything together.

- In a shallow dish, stir together all spices and 1 teaspoon salt. Coat chicken thighs with spice mix.
- Warm the oil in a skillet and pan-fry chicken thighs, making sure each side is nicely browned.
- Transfer chicken thighs to a greased (butter or olive oil) 9x5 baking dish. If you have any remaining spice mix, feel free to sprinkle it over the thighs, as this will reduce to a nice gravy. Put in pre-heated oven at 375 for 45 minutes, or until juices run clear.
- Serve with basmati rice or couscous.

- In 8 x 8 square baking dish, add chicken thighs, garlic, oregano, salt and pepper. Using your hands, toss to coat and let stand for 10 minutes. Preheat oven to 450 degrees F.
- Toss chicken again, making sure to spread garlic and spices evenly, and arrange in a single layer skin side up, tucking in skin underneath. You want things tight.
- Bake uncovered for 30-40 minutes or until thermometer reads at least 165 degrees F, skin starts to brown and lots of juices accumulate in the dish.
- Using a syringe/baster, pour juice over the thighs and then if you like more crispy skin (who doesn't?!) broil to your likeness.
- Remove from the oven, cover and let stand for 5 minutes to allow juices to settle.
- Serve warm, skin removed for healthier version with brown rice, quinoa or cauliflower risotto. It's a restaurant quality date night dinner.

- Heat oven to 220C/fan 200/gas 7. Wipe the chicken thighs with kitchen paper. Finely grate the zest from 1 lemon and squeeze the juice from both. Mix in a shallow dish with the tarragon, 1 tbsp of the oil, and some salt and pepper. Slash the skin of each chicken thigh three times, then turn in the marinade. The chicken pieces can be cooked immediately or left in the fridge for up to a day.
- Cut the potatoes into wedges and spread over a roasting tin. Toss in the remaining oil and sprinkle with paprika. Set a rack on top and arrange the chicken pieces on the rack. Bake for 30-40 mins, until the chicken is well browned and the potatoes tender. Serve with a simple green salad.

- Make a batch of homemade season salt if you don't have any on hand. Recipe is in the notes.
- Preheat the oven to 400 degrees F.
- Remove the chicken thighs from the packaging. If the skin is very long or overhangs the chicken meat, trim the skin.
- Pat the chicken dry with paper towels.
- Brush each side of the chicken with melted butter.
- Sprinkle each side of the chicken thighs with the season salt.

- Preheat oven to 425°F convection. Pat dry the chicken.
- Trim any loose skin with no meat off. Also, remove any fat that is easily removed.
- Prep a baking sheet. Line with aluminum foil, add a rack, and give a heavy spray of PAM. Use a baking sheet or pan big enough to hold all the thighs without touching.
- Place thighs skin down and sprinkle lightly with the spices of your choice. I went with 7:2:1 or 7:2:2. If you don't have that, just a little salt and pepper to taste. A pinch of cayenne would be good also. Flip and tuck in any thin parts underneath and sprinkle skin side.
- With skin side up, bake until internal temp of 180° to 185°F-about 30 minutes of cooking time. Then rest for 5 minutes or more before serving.

- Preheat oven to 180°C/350°F.
- Scatter onion and garlic in a baking dish (about 10 x 15" / 25 x 35 cm), then place butter in the centre. Bake for 15 minutes (check at 12 minutes, mix if some bits are browning too much).
