SUNNY'S QUICK CORN AND PICO SALAD

4 ears fresh corn, husks removed
1 tablespoon hot sauce (I like Cholula here)
1 teaspoon fresh lime juice
1/2 teaspoon ground cumin
One 15.5-ounce can black beans, rinsed clean in a colander and shaken to dry
1 cup prepared pico de gallo (be sure to buy the "dry" kind--no juice or sauce, just chopped veggies)
Kosher salt

Steps:

  • Using a knife, cut the kernels off each cob and place in a large bowl. Using the back, unsharpened side of your knife or a flat metal spatula, firmly scrape the length of each bare cob over a small bowl to release the corn milk. Add the hot sauce, lime juice and cumin to the corn milk and whisk. Pour the dressing over the corn and toss to coat.
  • Add the black beans, pico de gallo and a small pinch of salt to the bowl with the corn. Toss and serve chilled or at room temperature.

NACHOS WITH RAW CORN PICO DE GALLO

Nachos need little more than melty cheese to be delicious at their most basic level, but this version is all about showing off crisp, sweet raw corn by layering in a vibrant and crisp corn pico de gallo. Using yellow corn tortillas doubles down on the corn flavor and a simple stovetop cheese sauce helps secure the corn pico to each chip.

1/4 cup finely chopped red onion
2 cups fresh corn kernels (from 2 to 3 large ears)
1/2 cup fresh cilantro, chopped
1/3 cup grape tomatoes, quartered
2 tablespoons sliced pickled jalapeños, chopped, plus 1 tablespoon brine
Juice of 1 large lime
Kosher salt and freshly ground pepper
1 tablespoon unsalted butter
1 tablespoon all-purpose flour
1/4 teaspoon chili powder
1 1/2 cups whole milk
4 ounces sharp cheddar cheese, grated
4 ounces Pepper Jack cheese, grated
Kosher salt
9 ounces yellow corn tortilla chips

Steps:

  • Make the pico de gallo: Soak the red onion in ice water, 10 minutes; drain. Combine the corn, cilantro, tomatoes, pickled jalapeños and brine, lime juice and a big pinch each of salt and pepper in a medium bowl. Add the red onion and toss. Season with more salt if needed; set aside for at least 15 minutes.
  • Make the nachos: Melt the butter in a saucepan over medium heat. Add the flour and cook, whisking, until smooth, then add the chili powder and whisk until toasted, 1 to 2 more minutes. Reduce the heat to medium low and whisk in 1/2 cup milk. Add the remaining milk and cook, whisking, until the mixture starts to simmer and thickens slightly. Add the cheese by the handful, whisking to melt before adding more. Cook, whisking, until smooth. Season with salt.
  • Layer the tortilla chips, cheese sauce and corn pico de gallo on a platter.

This recipe gets huge raves from all my friends and family. It is a fresh salsa or Pico de gallo with roasted corn and chipotle. It is very fresh and easy to make. Great as a dip for tortilla chips or as a side dish served with grilled meats. Recipe make about 5-6 cups.

4 ears roasted corn kernels
3 lbs roma tomatoes or 3 lbs plum tomatoes, chopped
1 large white onions or 1 large sweet onion, chopped
3/4 cup fresh lime juice
3 minced garlic cloves
2 tablespoons pureed chipotle chiles in adobo
chopped cilantro
2 tablespoons olive oil
2 tablespoons red wine vinegar
1 pinch sugar
2 tablespoons salt
pepper

Steps:

  • Grill or roast corn on the cob until black char marks are visible. Some burn is good.
  • Remove from grill. Cool. Cut kernels off and separate.
  • Put kernels in a large bowl.
  • Chop tomatoes and onion. Add to bowl.
  • Mince garlic. Add to bowl.
  • Squeeze the fresh limes and add juice to bowl mixture.
  • Add chipotle adobo mixture. Add more or less to suite taste.
  • Chop cilantro. Add to bowl.
  • Add remaining ingredients.
  • Mix well.
  • Correct seasoning- Note the right amount of salt makes this dish sing!
  • Can be eaten immediately be is better after a few hours after the flavors meld and develop.

Our family favorite chicken tortilla soup! Muy delicioso--very delicious--and so simple, quick, and easy to make using pantry items. Less than 45 minutes from start to finish, so a great weeknight meal. I sometimes add a can of petite diced tomatoes plus an extra can of corn to s-t-r-e-t-c-h this soup to feed a few extra guests, or you can simply double the recipe to feed a large group. Season to taste with salt & pepper, cumin and chili powder (I use a pinch of each). Don't skip the fresh garnishes of lime, avocado, cilantro, shredded cheese and sour cream---they really make this soup. This soup makes great leftovers. Enjoy!

2 boneless skinless chicken breasts
32 ounces chicken stock
1 (15 1/4 ounce) can whole kernel corn
1 (15 ounce) can black beans
1 (12 ounce) jar pico de gallo (may use fresh pico de gallo or salsa fresca)
salt and pepper
cumin
chili powder
3 -4 ounces tortilla chips, crumbled
chopped chili pepper (mild or hot)
fresh lime wedge
diced avocado
chopped cilantro
sour cream
shredded cheddar cheese or shredded monterey jack cheese

Steps:

  • Wash chicken. Place chicken and chicken stock into a 6 or 8 quart stock pot; cover. Bring to a boil over high heat; reduce heat and simmer for 25 to 30 minutes, until chicken is done.
  • Remove chicken from pot and place on a cutting board.
  • Add pico de gallo salsa, corn, black beans and tortilla chips to the stock pot.
  • Dice chicken and add back into soup. Stir well; bring to a boil and simmer, covered, for 10 to 15 minutes. Season to taste with salt & pepper, cumin and chili powder.
  • Serve while hot. Also good reheated the next day.
  • Garnish with a squeeze of fresh lime and your favorite toppings.

1 ear of corn
1 1/2 pounds ripe tomatoes, seeded and chopped
3/4 cup chopped onion
1/2 cup chopped fresh cilantro
3 tablespoons fresh lime juice
2 serrano chiles, stemmed, seeded, and minced
Salt and freshly ground black pepper

Steps:

  • 1 Heat a dry grill pan over medium-high heat. Grill the corn, turning occasionally, until darkened in spots, about 10 minutes. Set aside until it is cool enough to handle.
  • 2 Using a sharp knife, carefully cut the kernels off the cobs and add them to a medium bowl. Mix in the tomatoes, onion, cilantro, lime juice, and serrano. Season with salt and pepper. Cover and chill for at least 30 minutes, until flavors blend. (The salsa can be made up to 4 hours ahead.)

4 cans (15 ounces each) black beans, rinsed and drained
2 cups vegetable broth
2 cups pico de gallo
1/2 cup water
2 teaspoons ground cumin
Optional toppings: Chopped fresh cilantro and additional pico de gallo

Steps:

  • In a Dutch oven, combine the first 5 ingredients; bring to a boil over medium heat, stirring occasionally. Reduce heat; simmer, uncovered, until vegetables in pico de gallo are softened, 5-7 minutes, stirring occasionally., Puree soup using an immersion blender, or cool soup slightly and puree in batches in a blender. Return to pan and heat through. Serve with toppings as desired. Freeze option: Freeze cooled soup in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little broth or water if necessary. Top as desired.

This recipe was created tonight as a result of missing ingredients for what I originally planned to make for dinner. It was enjoyed so much that I decided to add it to the web site so that others could make them as well. Our 5 yr & 11 yr old DGDs joined us for dinner tonight and enjoyed it as well. NOTE--the amount of enchiladas you get depends on how much filling you put inside each tortilla. Using this recipe I made 20 enchiladas which left a bit less than 1/2 of a recipe to freeze for another quick meal.

1 (15 ounce) can whole kernel corn, drained
1 (13 ounce) can chicken, drained
1/2 cup of fresh pico de gallo or 1/2 cup salsa
1/4 teaspoon black pepper
1/4 teaspoon salt
1/4 teaspoon dried cilantro
1/8 teaspoon chili powder
1 teaspoon dried chives
2 1/4 cups water
1 (6 ounce) can tomato paste
2 tablespoons flour
1 1/2 tablespoons chili powder
1/2 teaspoon black pepper
1/2 teaspoon salt
3/4 cup cheddar cheese, shredded
3/4 cup monterey jack cheese, shredded
15 -20 six inch flour tortillas

Steps:

  • Mix first 8 ingredients of Meat Filling together until well mixed & set aside.
  • In a medium size mixing bowl blend together the Sauce ingredients; the water, tomato paste, flour, 1 1/2 Tablespoon chili powder, 1/2 teaspoon black pepper, and 1/2 teaspoon salt.
  • Microwave the sauce ingredients for 5 minutes then set aside.
  • Lay one flour tortilla on a flat surface (I use a plate).
  • Place about 1 1/2 - 2 Tablespoons Meat Filling along the edge of the tortilla closest to you.
  • Sprinkle 1 -2 teaspoons of the two mixed cheese along top.
  • Roll tortilla away from you ending when the tortilla is completely rolled.
  • Place filled tortilla into a lightly greased baking pan so that the seam is on the bottom.
  • NOTE--As you lay each enchilada down next to the previous one, place them close to the previous one so that they are side by side.
  • Repeat rolling tortillas until all the meat filling is used up.
  • Sprinkle half of the remaining cheese over the top of the rolled tortillas.
  • Cover the tops and ends of all the tortillas with the Sauce.
  • Sprinkle the remaining cheese over the top of the Sauce.
  • Bake 30 min in a preheated 350 degree oven.
